I have been low carb for around a year. Energy bars are from My Protein lots of fruit and grains. Best way for help is to open your diary for scrutiny. That way we can see what you have been eating and if the numbers stack up or not. First thought is, you are eating over your calories. You may think you are correct but a weight gain on a deficit is almost impossible.

You will loose weight if you are in a calorie deficit. Using weights will force your body to protect the muscles you are using, therefore you will keep more muscle and burn more fat than you would have with dieting alone.
