Right now I'm TRYING to do 6 days a week. 3 days of HIIT (30 Day Shred right now, but will move on later) and 3 days of running (various distances and speeds as I'm training for a 10K). Some weeks I get all 6, some weeks just 4.

Healthfully, yes. There will come a time where you can only lose weight by eating in an unhealthy way (aka anorexic). Technically you can keep losing weight until you are skin and bones, but that doesn't mean that's what your body wants to be!

You can eat whatever calorie amount you want on the Paleo diet. If anything, I find it more filling for me because it's heavily protein based. There are cookbooks, like Everyday Paleo, that have recipes for your own dressing. I use either EVOO and balsamic vinegar, or I use EVOO and lemon juice. Both are good and they definitely help you enjoy the salad, and not just the dressing!
