It doesn't do any good not to log things. It doesn't negate the fact that you ate it. Because you didn't log something doesn't mean that you didn't add the calories in. So I log everything- it helps to know when you need to up your burn (or add one period some days).

In the first year of college I would go several days without eating (up to 5) and would work out for hours and hours on end. I think as long as you stay within your calories, get a good amount of protein and the right level of carbs it doesn't really matter what you eat.
