Either 1.) Get a scale - it's a must-have for tracking calories, or 2.) When you buy deli meat, divide it into equal servings. If one pound of chicken is 400 calories and you've divided your chicken into 10 servings, then one serving is 40 calories.

There's a difference between good carbs and bad carbs. Bread, pasta, pastries - bad. Fruit, veggies, legumes - good. Try consuming more protein. Try a 40-40-20 (carbs, protein, fat) ratio.
