Use bananas or applesauce instead of butter/egg/oil. They help a lot with cutting calories! Also I use stevia and I find the flavor complements a lot of recipes.

I second what they said. Only eliminate if you have a disease or if it's a trigger food. For me I can't have it because I have a disease that gluten makes worse, but if I can find a good gluten free bread, it's game on!

I adore juicing! I try to drink a two cup drink twice a day!! Some of the best resourced I've found are http://www.rebootwithjoe.com/ and http://kriscarr.com/ Kris is a juice head, and while some of the stuff she says is out there, a lot of it is really good. I have dealt with painful mouth ulcers for years now, and most of them happened in my vegetarian years before I supplemented. Now, I take about twice the rda, and I haven't had an issue in a while. I would still check with your doctor, but the supplements can't hurt.

Mine is pretty simple too. Oatmeal and fruit, and a green juice for breakfast. Green juice again as a snack. Lunch is normally a salad. And dinner is normally rice and beans, or rice and broccoli. I do sometimes get creative and make a tofu scramble, or potato soup.

If it's natural fruit sugar and you aren't diabetic, I wouldn't worry about going over in sugar. However, if it is processed sugars, then I would be a tad concerned. If you have a desire to eat more, you can always use nuts. High in calorie, high in nutrients, and most have good protein levels.

I don't think it's a huge issue, but I would try very hard to meet the goal. A cup of milk, bread, or something small like what the other poster suggested would be a good idea. Also, kale is great for you in large doses. I have a very veggie heavy diet and eat several cups of kale a day some days (I rotate my green veggies) and have never had an issue.

It sounds to me like you have a stomach bug. However, if you aren't used to high fiber veggies, especially veggies like Kale, it can cause some issues until your body is used to them.
