For sure do the measurements and not just weight. It's kinda cool losing an inch here and there even when the weight is slow to come off.

Personally, I didn't gain weigh on low carb, I just didn't lose any. I find I only lose with a more balanced diet and a higher dose of veggies. I do try to eat healthier carbs though: quinoa, bulgur.

Have you tried a different leafy green? I hate iceburg lettuce but found i really enjoy baby spinach, go figure. My go to salad is 4 oz chicken, 2 cup baby spinach, 1/4 blue cheese crumbled. 1/4 cup cranberries, fruit based dressing (usually raspberry).
