Yes! I think year-round DST would be very beneficial here in Minnesota!

@17761776 Gayle, I'm in St. Cloud! Wow! This thread really moves! I had just opened the thread and read your post - but had to leave it to respond later. Yeah, later. The next time I opened MFP there were over 100 new posts. Took me forever to find you again, lol.

You all are so motivating! I'm still not ready for the 6 week challenge, but it's encouraging to know that I can start at any time and reap success. What I am doing is eating "vegan" as much as possible. Meaning, good choices for breakfast and lunch (although I'm struggling with big salads so if I'm not up for a salad I…

Ya, but your blip was WFPB. It could have been worse!

The salad dressing recipe looks great! I think I'll give it a try this week. Congratulations on the weight loss!

Great post! Thanks for sharing. This makes me want to try seeing a nutritionist again! I could use some fresh insight.

Back on again! Don't know if I need a good talkin' to or a hug - bad sugar day! I have been on the straight and narrow since December but we traveled a week ago and I "let loose" with food choices. I have been struggling ever since. Major cravings for sugar and fat. Stop the insanity! Brief bio: I live in Minnesota - so…

Jumping in a bit late in the month, but wanted to introduce myself! I am 54 and have been working slowly toward better health for years -- taking it seriously some of the time, jumping off the bandwagon at other times. I've been pre-diabetic since having children in my 30s, have been on BP meds since age 40. And all this…

Mihani, thank you for the recommendation! I've heard of Engine 2 but have not looked into it. I'll definitely check it out. Oh, those pesky starches. ;) Donna, we are buried in snow here in Minnesota, I can only imagine how lovely it is where you are right now! Carla, congrats on the significant weight loss! Wow! Proof…

Oy! I train wrecked yesterday. I did fine on my trip, it was the day after that got me. Tired and unprepared. I honestly don't know that I can sustain ETL, or that it's even the right choice for me, but it is causing me to eat more nutrition-dense foods and that is a GOOD thing. I'm sticking around for inspiration,…

Feel better soon, Donna! No fun to be sick. :/ Carla, the creamy basil dressing looks tasty! I dropped my salad spinner lid on my foot last night. Couldn't bear weight on my big toe this morning. Since we're leaving for the weekend I decided I should get it checked. No broken bones, just a nasty deep bruise. No walking for…

I've been having trouble choking down raw veggies in my salads, so tonight I sautéed the veggies for a few minutes (along with the pinto beans) and then topped my romaine with the mixture. So much better! I am pleased! Other than 2-3 ounces of lean protein, my days have been all-ETL. Feeling good! Donna, hope you feel…

To quote the comic strip Cathy, "ack!!!!!" I've typed a lengthy entry twice now and both times my computer glitched and I lost the post. Rather than retype it again, I'll just say that I got a lot of food prep done this evening (wahoo!) and, after a lot of soul searching, I have decided to continue ETL as I am doing it…

Carla, I was just about to post pictures of our snow, too! We got about 6 inches a couple ago and are in the midst of a big snowstorm right now. By the way, the caribbean-cuban fusion bowl looks absolutely delicious! Did you add a dressing? (Or maybe you shared that already). I'd planned to grocery shop today and get…

Quick question! As I continue to read Dr. Fuhrman's books and visit his website, it looks like I should begin using supplements (Vitamins: B12, D, K2, Iodine, Zinc). Could I ask what you all use? Had a 1.6 loss this week! Yay!

Mihani, I've been using mustard greens this week! Haven't had them since probably the 1980s. The first recipe I tried (yesterday) was very basic. Saute onions, add the greens, wilt, and then sprinkle with lemon juice. It wasn't as good as what my mom made when I was a girl --- oh wait, that had crumbled bacon and the…

Pictures of Tucker (one with daughter) and my first tofu scramble!

Brook stole your salad? The nerve! :D San Antonio! One of my sisters lives in Austin! My daughter and I spent a week with her and her daughter back in August. We had a blast! Love the hill country, Barton Springs (ice cold swimming!), Zilker Park (free outdoor musical every summer!), and Hamilton Pool Nature Trail. My sis…

Carla, your meal looks delicious! You and Donna have me hankerin' for a stuffed pepper soon. Must try the salad too. Mihana, thanks for the links. I'm trying the scramble for lunch! Glad your pup is doing well with recovery. Donna, how did the solo swim go? I'm not a strong swimmer - I never learned to be comfortable with…

Sounds like a delicious menu, bisky! I'm going to attempt my usual walk today and hope there are no signs of muscle strain. If I have to cut it short again I think I'll return to T-Tapp until things are better (very low impact cardio and muscle core conditioning). It's time to prep a new batch of veggies for the fridge and…

Confession. I am so new to eating plant based that I have never tried to prepare tofu before. I've only tasted it once, that I recall. Garlicky Baked Tofu sounds really good! Also, I need to prep my pantry/fridge with ingredients for dressings. I've been winging it and having "eh" results. I'm watching ETL videos and…

Bisky, we are on the same track! After checking in with you all this morning I thought “well, duh, if you can’t eat raw make a pot of veggie soup!” Thanks for the tip about beans. I was wondering if they were the culpri, but glad to know they are helpful - especially since I made a big batch to freeze over the weekend.…

Bisky, it looks like you had a fantastic trip! Today, it's snowy and blustery here where I live so the sunny pics are a breath of fresh air! I'm finding that I struggle on the weekends when it comes to food. Yesterday was not good in terms of food choices. Breakfast, good. Lunch, eh, could have been better - I made the…

Mihani, hope you get some rest after a long night with your pup, and hopefully he'll turn a corner real soon and be back to his old self. Congrats on the weight loss, though sorry it was from illness. NO fun. I'm trying to be kind to myself as I try this crazy experiment of eating to live. Honestly, I may be a 60% person…

Oh, poor puppa! Hope all goes well with surgery! As for my spaghetti, I think it would have been better with spaghetti squash or fresh zucchini. The zucchini I used was from the freezer section, so even though I microwaved it for the least amount of time, it was a bit slimy. I use a phone app, Pacer, which seems to be…

Happy Valentines Day! I'm not sure if it's all the chocolate the kids have brought home today or what, but I'm having a cravings kind of day! I'm holding my own, though, while I prepare our annual family spaghetti dinner - mine will be spiral zucchini, low-sodium low-fat sauce and mushrooms w/a side of broccoli. And part…

Thank you so much for the encouraging advice, links and suggestions! I will tap into the monthly thread as well. I dipped my toe in yesterday and had a big salad at lunch and dinner w/ beans, as well as a green smoothie. Satisfying!

I love sparkling flavored waters like klarbrun lime or Perrier w/ grapefruit or strawberry. But the carbonation starts to mess with my gut. I recently started drinking kombucha, which is amazing for gut health and is naturally effervescent. I am addicted!! It’s delicious and low calorie. Synergy brand is my favorite.

I've recently stumbled on a youtube show/blogger who has some really fun recipes. Her youtube channel is called: The Whole Food Plant Based Cooking Show. She is vegan/SOS(nutritarian), which I am not, but I'd still try some of her yummy, healthy recipes. Also, you might check out this youtube channel: High Carb Hannah.…
