I found some good quick brekkie recipes in a book called 300 under 300 (I think). My favourite is the breakfast mugs. Spray a large soup mug or bowl with cooking spray. Drop in 2 eggs and mix up, a torn up slice of bread (I use gluten free), 2 tbsp. Salsa and a sprinkling of shredded cheese. Mix all together and nuke forβ¦
