I would make caprese skewers if I was tasked with this. Cherry tomatoes, basil, mozzarella - all on a skewer and drizzled with balsamic vinegar. I'm afraid I'm not really qualified to answer that question. My husband knows much more about it than I do. But instead of just regular Salmon, we make sure it is Wild Salmon now. I'm in! 132.2 today. :) Edited to add: If by some miraculous twist of fate I lose 20 lbs in 10 weeks (which is my goal) and by chance that is enough to win... I would rather the money go to charity. Thanks for the challenge!
