Most of the time, I estimate the number of servings in a dish. Some are easier then other. As long as I use up all my ‘estimated’ servings I am ok. It all balances in the end.

None of those. I don't like rules about how I should eat. I eat at midnight or later. I sometime skip meals Here is what I try to do. Eat within my cal goal and eat mostly 'clean' food. That's pretty much eat.

Nope, why would it bother me when someone is eating 1200 and losing weight while I eat 1500-1600 and do the same. Either way, I mostly just mind my own business and expect other to do same if advise is not asked.

Disregarding the actual number of cals, your choices are pretty healthy. I would maybe try for more protein with each meal.

I think key is everything in moderation. Try to have a balance in all food groups and not feel deprived. I personally think more veggies and lean meats are the way to go. But that's mostly personal preference.

So should I try to find my maintenance level now ? I am nowhere near at the stage where I want to maintain, wish I was, but still have 20lbs to go. Also, would my maintenance not be around 2100 cals based on my activity level, +/- some.

All the time, but honestly the thing that surprised me more is that some SALADS have more cals / fat then a stake & potato. How the hell does something that should be ‘healthy’ end up being some of the worst choice to make?
