Great job getting things under control. 5 seems to be the magic number, because that is what my Dr told me as well. I take 500mg of Metformin twice a day and my A1C has gone from 7.6 in May to 6.3 in Nov. I make this quite often for breakfast. I add some quick oats and walnuts. After its cooked I spread some sugar free jam or even some cream cheese on top. When in season I've added blueberries right into the mix. The combinations are endless. Very filling and also so good !!

I agree with Mokey...450 calories is way too many calories for lunch. I try to stay under 300 and its usually a Michelina's Lean Gourmet meal

3 - 4 pounds of chicken with the skin removed (I use thighs because we like dark meat) 3 - 4 peeled potatoes 1 large onion - quarted 1 jar of salsa (I use medium becauase we like it a bit on the spicy side) 1 pack of taco seasoning cook on low all day...oh how good

One day at a time...one victory at a tme..... I find that watching my carbs every day keeps my sugar levels in control and when I do have a high carb day it really doesn't effect me the way it used to. Life happens and sometimes you just have to go with the flow :) Congrats on your NSV !!

I love oatmeal for breakfast. I mix: 1/2 cup Quaker quick oats - 1 cup hot water - 1 teaspoon cinnamon - mix it all together then I add some walnuts and a spoonful of Polaner or Smuckers sugar free jam. So delish !! Whats normal for one person is not always normal for another person. My BS ranges from 90's to 120's depend ing on what I eat and when I test. Could have been what you ate for lunch.
