Salad bar, as usual. Today I have a bed of baby spinach topped with: a couple pieces of fried tofu several chunks of feta some chickpeas roasted beets roasted brussels sprouts roasted cauliflower roasted corn/red pepper/tomatoes sweet potato chunks with cranberries Eating the rainbow :)

Amazing. Thanks for the recommendation. I read part one, and wow, did it resonate! I'm going to work my way through the exercises (purposefully more slowly, so I can let them sink in, as I have a tendency to get all excited and fill out my worksheets too quickly!)
