High or low GI carbs before a 5hr training?

Are these soba noodles a healthy alternative to regular noodles/pasta? If not, which noodles are the healthiest for cooking Asian? Also, if they are calorie dense, that's OK. I don't mind. Hello! (thirst, my bad) I have recently been exsessivly thirsty for the past 3-4 weeks. I'm always needing water UNLESS (for some reason!) I am at training.
