Soba/Buckwheat Noodles?

Are these soba noodles a healthy alternative to regular noodles/pasta? If not, which noodles are the healthiest for cooking Asian?
Also, if they are calorie dense, that's OK. I don't mind.
Are any noodles healthy? (I know brown rice is best for Asian, but I like to mix it up a bit)
(I cook for my mum aswell, so it needs to be something she likes)

I prefer soba noodles over udon (the thicker wheat noodles). You are going to get more of the traditional flavor than if you were to use a spaghetti (semolina) type noodle.0

I haven't really used anything else besides sweet brown rice when cooking Japanese food. I do make sure I get soba noodles that do not have sodium added because I've seen some that have ridiculous amounts (1,000+mg).0
