I'm trying to eat more fish in my diet and I struggle with cooking Salmon...I seem to always overcook it as I fear it will be undercooked. Any ideas would be greatly appreciated.

I have been following this program for a few weeks now and I still haven't weighed myself. I wanted to focus on just trying to eat better and thought if I got hung up on how much I'm losing I might not continue to do so well. Does anyone have any suggestions on how often I should weigh in?
