    Well, Marcie, your idea worked. And it sure got my attention. I wondered who had found all the great recipes. It nice that Anewstart can enjoy posting again. I missed her.

    Anewstart, the music is nice. I don't put on music as much as I should - mostly in the car. I'll have to remember that's here. Thanks for sharing.

    Someone out in the main forums shared this with me today. I'm going to make some tonight. Think I may use 1/2 the raisins and brown sugar though. Seems a bit much. I think I'll also add some chopped pecans or walnuts.

    "Pumpkin Coconut Overnight Oats

    1/2 cp Oats
    1/2 cp any milk you want
    1/4 cp pumpkin puree
    1/8 tsp pumpkin pie spice
    1 tbsp brown sugar
    cinnamon to your liking
    snack size box raisins"

    Made the pumpkin overnight oats and used half the brown sugar and raisins, and added some chopped walnuts. Really good! She had used coconut milk, but I used cows milk.

    Hi everyone, the following recipe is for those who want marshmallow fluff but have taken out of their diets. I don't buy or use it in anything but I thought it was a neat way to get marshmallow fluff for those who do want it. It's only two ingredients with optional ingredients to add if anyone would like, I would use real sugar if I was making it but this recipe is also for those who want to use an artificial sweetener. Chocolate Covered Katie has a neat healthy dessert blog.

    Interesting. It's probably the starch in the bean water that causes the thickening to occur. Nice alternative for those who don't eat eggs.

    Marcie, what are the directions for the overnight oats? Just mix all ingredients and let sit in the fridge overnight??

    Here is the recipe for the muffins I made for DH. It took me a little bit to get all the ingredients but I have enough apricots to make it again. I don't make a lot of things that use so many ingredients so I made sure to set everything out before I started. :smile:

    Sunshine Power Muffins
    Makes 1 dozen

    1 cup all-purpose flour
    1/2 cup old-fashioned oats
    1/2 cup flaxseed meal
    1/4 cup sugar
    2 teaspoons baking powder
    1/2 teaspoon salt
    1/2 cup honey
    2 eggs, lightly beaten
    1 cup plain yogurt
    1/2 cup orange juice
    1 teaspoon vanilla extract
    2 teaspoons finely grated orange rind
    1 cup chopped dried apricots (about 5 ounces)
    1/3 cup granola

    1. Prehat oven to 375F. Coat 12 muffin cups with cooking spray.
    2. Combine flour and next five ingredients (flour through salt) in a mixing bowl.
    3. Combine honey and next five ingredients (honey through orange rind) in a separate bowl. Whisk well.
    4. Make a well in the center of dry ingredients. Pour wet ingredients into the well and stir until just combined. Gently fold in apricots.
    5. Fill muffin cups two-thirds full. Sprinkle with granola. Bake 18-20 minutes, until centers spring back when touched.

    Per muffin: 200 calories, 4g fat, 35 mg chol., 6g prot., 40g carbs., 4g fiber, 200 mg sodium. Recipe by Mary Carter

    At the top it said Fatigue Fighter by the editors of Relish Magazine

    Marcie, what else do you use pumpkin for. I just noticed the recipe only needs 1/4 cup. I'd have to eat the dish 8 days or use it another way. Guess I could make pumpkin muffins. Hmmmm

    That's it Isabella. Super simple. I'm going to Google and find other variations too. The core recipe is just equal parts oats and milk, and then add in other stuff. I really enjoyed the pumpkin recipe. I saw one online yesterday that uses fresh strawberries, blueberries and yogurt. I may try that next.

    My main use of pumpkin is my Pumpkin, Apple, Banana, Protein Oatmeal bars. I usually make a batch a week, but got a little burned out so havent made any in a couple weeks. There are also yummy pumpkin soup recipes out there. Just Google and you'll find tons of them.

    I usually just put the leftover puréed pumpkin in the fridge and it lasts me a couple weeks.

    This sounds yummy and healthy. I mau make some tonight. I dont have white flour, but I think whole wheat flour will work. Thanks for sharing!

    I think with the white flour you get a lighter muffin. With whole wheat it's a little denser but we are used to that.

    They turned out REALLY good, and I love the tang the orange juice added. I did alter it a bit. I added a tsp of cinnamon and 1/4 tsp ground ginger (just cause I like to sneak those in my baked goods), because there is honey, sugar and OJ, I cut back on the dried fruit...used 1/4 cup each chopped apricots and raisins (just cause I love raisins), I only used 1/4 tsp salt, and I added 1/2 cup chopped walnuts (just cause I like nuts in my muffins). I almost forgot to top them with granola! Had to pull them out of the oven 5 minutes in and add that. I used pumpkin seed granola. I baked them in my silicone muffin pans, so I didn't need to use any cooking spray. I made some regular size muffins and some mini muffins. I think Dad will enjoy these.

    Here is another recipe I will definitely be trying and I'm surely positive I will like it because I like everything going into it. ;) It's a vegan creamy spinach soup you make on the stove and cream in the blender. It would probably work just as well with an immersion blender too.

    Haven't tried these yet, but you can bet your life I will, lol. These look really good and there's no dairy in them so save the fat and a lot of calories to enjoy a cookie? Hmm, let's see how this goes, lol.
