Bacon!

For weeks now I've been trying to make the perfect bacon, but it kept coming out too crisp and dry or super fatty and rubbery.

I couldn't get it right and the flavor just wasn't there.

This week my local grocery had Sure Fine regular cut bacon on sale so I picked some up. To my delight it fried up perfectly and tasted beyond delicious.

I assumed bacon was bacon, especially the non specialty kinds.

What's your favorite brand?

Have you found other things to have so a noticeable difference?

    I like Farmland or Wright brands available here. Have used ziegler and lykes and they were okay. I prefer Macs pork skins over other kinds.

    There are 4 or 5 I switch between depending on sales, but the one I absolutely do not like is Corn King. It's so thin, it stretches when you try to flip it.

    oh.. bacon is NOT just bacon, and it can vary even within a brand. I try to get bacon that is at least 50 percent fat and relatively thin. I also do the bacon in the oven. I don't really have to watch it, and it comes out perfectly crisp every time.

    I like this post, I thought bacon was bacon too. I'll look for some of the recommended bacons.

    @timeyn What temp and time do you bake your bacon?

    Package says 375 degrees, but someone else said the smoke point is 325, so you shouldn't bake it above that if you want to save the drippings. So I've been doing it at 325, and it takes a bit longer, but works out well in the end....

    Oh, and as far as time, I tend to turn it over after 10 minutes, then check it another 10, gauging based on progress. Usually about 20-25 minutes for thinish-regular bacon. When I get the odd pieces, it can take 45 minutes...

    I've not turned the bacon in the oven and it's cooked evenly for me. Usually takes about 25 minutes.

    We like ours extra crispy...but the flipping it over and turning the pan around stems from two things 1) my oven gets "hotter" in the back and 2) it's an old habit from all my baking! LOL

    Whatever bacon is on sale, but I mostly buy it from SAMs, Smithfield brand.
    Bake it in the oven at 350 for about 20 min, it comes out nice and bit crispy

    I don't turn the bacon in the oven. Usually do it at about 300-320 (150c-175c ish) usually about 25 mins. I check after 20, usually have to give it another 45 for crisp bacon

    If you are on the road I find Huddle House bacon to be OK.

    Fresh cut unprocessed bacon from a local butcher shop

    It is dry. Sitting in the meat display case in a slab, they cut it for you. It is not wet or slimy like packaged.

    Makes a big difference

    But I rarely eat bacon

    I always get an uncured bacon to avoid the added nitrates....typically apple wood smoked.
