i liked mlinton_mesapark's breakfast pics post and made a delish dinner tonight and I wondered what you all were eating for dinner.

I'll be making herb-roasted salmon and roasted cauliflower this evening. I'll try to post an attractive picture.

Herb-roasted wild sockeye salmon (you squirt on lemon juice, smother the fillet in mayo, sprinkle on about 7 different herbs, roast in a 450-degree oven for 15-30 minutes, depending on how thick the fish is, and whether or not it was frozen to begin with.)
Roasted cauliflower - one head of rough-chopped cauliflower drizzled in copious olive oil (about 1/4 cup), 1 tsp minced garlic, roasted 30 minutes at 450, topped with shredded Parmesan cheese.
And a side of Kerrygold grass fed butter.

mlinton_mesapark, it was a jar of sauce I found at the grocer. It was Dee Felice brand... Don't know how common it is cuz it's the first time I've ever seen it. But my dinner was about 10 carbs not subtracting fiber. And it was awesome!0 -

I took two eggplant peeled and sliced thin length wise, sprinkled with salt then baked at 400 for five minutes to dry then out.
Then I layered like lasagna, put sauce on bottom of pan, you can use any sauce you like, I accidentally bought one with two much sugar but still was ok for me.
Then put a layer off eggplant and another layer of sauce then a layer of sliced mozzarella and sprinkle with parmesan cheese. Continue layering and top with sauce and parm.
Cover with foil and bake at 350 for 45 to 60 minutes, till eggplant is soft.0 -

I wish I had taken a picture. I had a burger with cheese, Zucchini from the garden sauteed in butter and garlic and Greek salad with veggies from the garden0

It is wonderful. Last time I made it I did a layer of zucchini too. You can really make it however you want you, I think some sliced meatballs would be good layered in too. I swear the key is the sliced mozzarella lol. I could eat the whole pan.0 -

Well, mine wasn't really a recipe. I found a jar of the gumbo at the store that I only had to add meat and water to. 8g (6net) carbs per 6oz serving. I went heavy on the meats, I added andouille sausage, chicken and shrimp and the brand of the gumbo was Dee Felice. I have no idea if it's common in stores or not. I had never seen it before. But I also never looked around at the store much before.
I also saw one for étouffée, which I love, but it was too carby for me at 17g.0 -
