I made Peace Love and Carb Lasagna. It's was not only the best low carb lasagna I've had. It as the best lasagna I ever made!!!
It doesn't have to be a recipe. It might be some fresh produce that knocked your socks off or some great cheese...

It's a toss up between "fried apples" (using chayote squash - no actual apples involved) and low carb pistachio nut ice cream.2

My dinner that will be here soon. Rare ribeye, with grilled zucchini. Still have about 110 kcals left after that, so I might melt some butter over the steak.5

Beef and broccoli. Hubs (the cook) is out of town and I am on my own...I replicated something he cooks often. It turned out great!3

favorite thing I've eaten in recent memory was actually tonight - I made collard greens in duck fat. First time I've ever had collard greens and I LOVED THEM. Holy freaking yum. I can't believe I've never had this before!5

Microwave coconut porridge! And cream of chicken soup. (It's been cold and I was craving warmth.) Yum. Still having that porridge though, it's such a teeny tiny serving but it's ridiculously filling. (Tip - eat with teaspoon)

I discovered a flax muffin that tastes like carrot cake...I am going to have to start saving it for special occasions though,it's pretty high on calories. So good though....2

I made an awesome fresh cod loin (1.73lbs) drizzled with butter, capers with lemon & basil, few other pepper seasonings, topped with parmesan and hot paprika then baked in parchment paper. First time I tried it with parchment and I highly recommend it. Cooked 20 minutes and it was perfectly done for two. So happy!4

Swiss chard and mushrooms cooked up with some cut up thick sliced bacon. Or last nights dinner of sliced up steakand green pepper (fresh from our garden) cooked up in some cream sauce over a bed of cauliflower rice.1
