I've been assigned to bring a casserole to a potluck next week. My carb casseroles are wonderful, but I have not tried coming up with anything like that which is keto friendly.
So what is your best keto friendly casserole that is yummy and satisfying? I'm hoping to possibly make a couple of converts who are coming to the potluck and keep asking me how I am losing weight.

I've seen some pizza casseroles on Pinterest that looked good. Never tried any. I hardly ever cook like that. Usually just grilled meat and a sautéed veg that I don't even eat. But, it's caught my eye several times... might give it a try soon.0 -

Not an official recipe and I have no idea of the actual carbs because we didn't weigh anything.
2/3 of a pumpkin, cooked and mashed (any squash or cooking pumpkin would work, but butternut should be avoided as it is higher carb)
1 egg
Shredded cheese mixed in
1 package of hot ground Italian sausage
1 scoop (about 1/2 cup) full cream Greek yogurt (11%)
I think maybe there was salt, pepper, and garlic to taste.
Mix all together in a casserole dish
Top with more shredded cheese and bake at 350 until the egg sets, about 30 minutes.2
