Fathead pizza dough is low-carb awesomeness. It's 1.5 cups of shredded mozzarella cheese, 2 tbsp. of cream cheese, 1 egg and 3/4 cup almond flour. You can add any seasoning you like. You melt the cheese and cream cheese in the microwave, add the egg and almond flour, stir, pour onto a baking sheet covered in parchment paper, cover with more parchment paper, roll out with rolling pin or hands, remove top sheet of paper, bake at 425 for 6-8 minutes, poke any bubbles with a fork, add toppings, bake for another 6-8 minutes. It's delicious and very much like "real" thin crust pizza.

Haven't made this in a while. Thanks for the reminder! It's in the oven now with 5 Italian shredded cheeses, baby spinach, pepperoni, and crushed red pepper as toppings. It looks and smells delicious!

@AshStout83 - FYI, just watching Dr. Bernstein's latest teleseminar (from earlier tonight), where he again gives reasons why an A1c reading can be significantly higher than average glucose recorded by a glucometer in good working order. (Thus, he prefers frequent glucose testing over occasional A1c tests.)

PS Where do I send the cash? Can I get a bulk discount for 20 years of good numbers ?

I'm going to try this tonight I think. Friday night is pizza night in my house (usually little ceasars which I top off with more stuff - not low carb). I think I will give this a try (I'm not a strict low carber but am eating more and more that way as time goes by)

Try the chicken crust pizza too. We loved the Fathead pizza but we like chicken crust one even more.
