@simcon1 - this is the recipe I use. I am pretty new to using the IP so I haven't done too much improvising yet. Still learning mostly about how much time things take. Also you can use whatever cur of meat works but I typically get a pork tenderloin at Costco (in the 2-pack) because they are relatively inexpensive, not very fatty and are easily cut up. It makes enough to put some in the freezer for other meals for us but honestly we like it so much it rarely makes it into the freezer.
It's funny I used to have favorite places to eat at the airports (DFW, O'Hare, Dulles and Philly) but I guess I have put them all out of my mind. It has been a year since I retired (this week) and I haven't had to fly to any of those airports this year 😊 Yay! I do not miss it, except for seeing all the people I worked with.

@shanaber I will definitely have to try that IP recipe—thanks for sharing!

I am a long way from retirement, but wouldn’t mind traveling a bit less. I’m hoping my colleague (who I left early yesterday, and who did a great job and I think was only delayed an hour getting out) can take more of it on, so there’s a plan in place. In the meantime, no big travel for May (Vancouver only), but in June I’ll head to Detroit early in the month and then New Zealand at the end of the month!

I’m toying with the idea of doing a sprint triathlon here in Seattle in July, and I’m just not sure how nuts that is with the June travel.

In any case, more thread related, my new yummy find that I ended my terrible-eating snacky day with (because I was too tired to prepare anything or even think about it) was these skinny dipped chocolate espresso almonds. So tasty. They are something like 150 cal & 6 g sugar for 15 almonds.

I did better this weekend. Ate little Saturday, today I had poached eggs. My guts hate me. So I may not eat much today

DH went out for donuts this morning even though I had bought ingredients to make scrambled egg wraps. So he had donuts (I did have a little piece of one) and I had a wrap with spinach, peppers, onion, avocado, eggs and bacon. He whined about how good the bacon smelled
He is smoking ribs for dinner tonight and I am making a big salad along and some baked beans. His brother and SIL are coming for dinner so it should be a fun evening.

So it's been a couple of months and the 5 pounds I lost in February are baaaaaaaaack. Sigh. I've been struggling recently with my relationship with my weight. I know yo-yo dieting is bad for you, but I don't understand how I'm supposed to maintain a healthy weight without occasional cuts unless I never, ever slip up (March and April are big birthday months) or vary my diet or exercise output (I run less in winter than summer). And I say a healthy weight as if I've managed to obtain that - I've been dancing around the top of overweight BMI for a year or so now, and I'm certainly happy with that compared to where I was before, but it still bothers me sometimes. Anyhow, I want to push to get my weight down again this month and see what that looks like. I'll be upping my running as well, so hopefully it'll all balance out.

    Here's to accountability!

    Today's weight: 162 lbs
    Goal weight: 155 lbs

Not sure what my food plans are today. I have my muscle practical tonight, I think I’m ready. So I have time to cook something, maybe ribeye and asparagus again, maybe egg bites, maybe challah?

Asian food gives me a migraine and I’m still fending off a bit of a nuisance headache and upset guts from Saturday. I could just make some rice and veggies with that thin ribeye. Path of least resistance sounds good today.

    What are you eating today?

I'm trying to eat more veggies - we recently signed up for an Imperfect Produce box (weekly produce delivery of stuff that grocery stores won't buy for cosmetic or stocking reasons) and I'm trying to include one new snacking veggie and one for cooking in each bi-weekly box. I've got a zucchini that's looking kind of soggy so I'm thinking about chopping it up for a scramble soon but I'm also in a weird food headspace right now and trying to chill out about it.

    Ribeye and asparagus sounds yummy.

I like the idea of imperfect produce. I saw a show on it and, of course wanna buy all the not so pretty veggies and fruits, but it is hard to embrace. Yesterday dh had a banana that seemed to have been frozen and was soft. Sure it was fine to eat, but we readily discarded it without thinking that there really isn’t anything wrong with it. Shame on me, didn’t even think about it.

I have an abundance of carrots. I make myself eat them even if they look weird, trying to not over think it and desensitize myself to the expectations of what it should look like. We’ve got the garden going, so I’ll have to embrace the odd produce.

I chucked rice, frozen veggies and the ribeye in the IP and pushed a button. I may add a can of coconut milk to it when it’s done, but I don’t think I have any pineapple to balance it...

I was really excited when my city got Imperfect delivery, only to find out quickly from Facebook that there's some debate over whether that kind of service is really a net societal good or not - I guess there's concern about them taking food away from food shelves and customers from CSAs. I dunno. No matter what you do these days, there's going to be something problematic about it. I'm just trying to be more aware of my own personal food waste and let the rest figure itself out.

In the spirit of keeping it simple, I scrambled a couple of eggs and tossed some shredded cheese and green onion (wilted but still tasty!) on top. And I chopped and froze the rest of the green onion and saved the roots to plant in my garden. Boom.

I’m so depressed. Twice now I’ve eaten meals which would have been fine when I was running, only after a walk and not a run because I’m injured, and ended up with blood sugar out of my target range (I like to stay under 120 which is normal non diabetic range for after meals.) I’m still well within what a diabetes doctor would consider fine for a diabetic, but diabetes doctors also are fine with 90% of their patients having irreversible nerve damage after five years, so I have a little higher standards than the ADA.

Various forms of low impact cardio just are not the same as hard running in terms of glucose control - it’s very difficult to work as hard for as long while biking or using the elliptical. I can pedal my bike with the tension cranked way up, but then just my leg muscles get tired and sore long before my cardiovascular system is seriously challenged. Rowing machine hurts my tendon. I could possibly do it with swimming, but no access to a pool. And this injury shows no signs of being improved to the point where I can return to running any time soon.

So, for now, not only can I not run, I’m not allowed to eat the food I want either.

Anyway the meal which spiked my glucose yesterday was lovely. My husband and I went for a 10k walk at the park and were going to go to our usual Syrian place, then remembered they don’t serve dinner on Sundays. There was a big party for the Filipino American Association at one of the picnic areas at the park, with Filipino food trucks parked along the road. Neither one of us ever had Filipino food before so it was an adventure. We ate Dinuguan which is beef strips cooked in pork blood, some type of goat stew which I can’t remember the name of, and atchara which is pickled papaya slaw. Plus some sort of fried rice which was amazing, I don’t know what they did to it, but it was very dark colored and crispy. It was probably the rice which spiked me - even though I had less than half a cup cooked - plus the sugar in the pickles. I know I have problems with even a tiny amount of rice, but it was just so good! And I love goat. Last year we bought picnic kit to keep in the back of the car, and yesterday was the first chance we’ve gotten to use it.

I have been taking the bananas I don't eat quickly enough, mashing them and then freezing in a ziplock. I can then pull them out to use in a smoothie or if I am baking something like muffins or bread. Mostly they end up in smoothies because I am not baking much anymore.
Not sure about food for today yet, but the ribs, asparagus and salad last night was delicious. B&SIL went home happy and took some ribs for another night... interesting only because he never eats left overs! We may end up having leftovers for dinner tonight too.

Still working on increasing veggies—I had a banana and bagel for breakfast, Trader Joe’s reduced guilt Mac & cheese for lunch and an orange, and an egg scramble with spinach and roasted cauliflower and zucchini for dinner. And a little chocolate. I was going to make instant pot veggie chili with black beans and sweet potatoes, but dinner was made, so I’m considering whether or not to make it now.... but probably not, I’m beat!

Look at me. Muscle practical #2. 100 boom. Now I have lemon pie!
    High five!

On the good side, I made a spinach and cheddar omelette this AM that was pretty delicious and used the last of the spinach. On the less good side, I had to throw away three bagels that went moldy. I'm trying to make a rule not to buy more of something until I'm completely out of it, but for some reason I've messed that up a couple of times recently for bagels. At least they can go in the organic recycling?

159.2 pounds this AM, so it looks like the bloat from last week's binges is dropping off. Hooray!

    Food today?

I need to study some brains today. Popped in some egg bites with so much bacon. I'm still carrot snacking. Beyond this, I have no eat-able plans. My apples never made it into bread. So I should eat them and just buy more for when I have time to do bread again, maybe next week.

I'm setting a goal, once again to get more refined carbs out of my diet. There's one frozen pizza left and its a white pizza. I don't like white pizza. Homemade apple challah carbs just don't count. I get a pass there. Even if I add some sweet (truvia or maybe a bit of sugar, maybe I'll just buy some good honey), and cinnamon and extra butter. Still a pass.

I pulled pumpkin muffins out for a quick breakfast with a dab of cream cheese. So far that a banana and my post run snack of a protein mocha (coffee, milk, mocha powder and chocolate protein powder) has been it for the day. My stomach is unhappy, very unhappy and nothing sounds good. I think it was the Tylenol Allergy/decongestant that I took last night that is giving me grief. I also have a headache (sinus) that is making my eye hurt. :(
I just don't (won't) want to get sick before my HM next weekend
@elise4270 - I wish you would send me some apple challah... it sounds delicious!

Good news on the glucose control front - cycled my kitten off for thirty minutes last night trying to match the intensity of a typical 5k run, did some arms / back lifting today, then had my usual post run Five Guys meal (fries, peanuts, bacon cheeseburger lettuce wrapped, no bun) and blood sugar stayed low! Yay!

Also good news, I’ve been at maintenance for the last three weeks after one week of being set to half a pound a week, and the month of April was a half pound loss overall, which means I seem to be logging accurately.

Oh I wish I could share it with everyone! In my early twenties I explored my Jewish roots, ate kosher, went to synagogue, put my kid in the Jewish community center for day care/school. Oh I loved it. We moved and zero Jewish community- can't even buy matzo crackers at the local Walmart despite the town being founded as a Jewish community. Challah is the only remnant left other than the silent observances of high holy days, well and the odd kippah's shoved in the drawers and my Tanaka.

The bread is near and dear to my heart and symbolizes a family somewhere in my past that I never knew. Itd be lovely to share with everyone.

@rheddmobile That’s great about your glucose post hard biking!!

@Elise4270 Count me in among those hankering for a taste of your apple challah..

@shanaber I hope your stomach calms down soon!

My food today started off okayish, then ended up in cheeseburger-land. I had some overnight oats with walnuts and dehydrated cinnamon apples for breakfast and my usual latte. Then I finally did make the black bean and sweet potato IP veggie chili last night, so had leftovers of that with some rice and cheese for lunch, along with a lovely salad.

Aaand then got a chocolate chip cookie, had my work afternoon disrupted by a haircut (desperately needed), then son pickup and bring him back to work for another 2 hours. He doesn’t mind, but fielding his questions while trying to send work emails overtaxed me, I decided that I needed to bail on making dinner, and knew he would be delighted by the treat of our favorite burger place. At least we skipped shakes and shared an order of onion rings rather than getting our own.

I gave myself the ok to eat at maintenance this (taper, pre-half-marathon week), but thought what I’d really aim to do is shoot for a smaller deficit of -250 rather than -500, at least until Thursday or so. So all in all, I ended up at -259, which I’m thinking is a-okay for the day. And I do like meat and don’t eat much of it, so am very happy with the occasional cheeseburger.

@shanaber Sending good vibes that you aren't getting sick. Good luck on your HM this weekend.

Great job @rheddmobile! Glad you found exercise that will help keep the glucose numbers down until you are allowed to run again. Great job on maintenance too! That's my downfall, hence the yoyo part of my "handle" on here.

For breakfast I had cottage cheese and some Italian plums that I canned last summer, along with a piece of toast and butter. Then for lunch I wasn’t well organized—had to give a workshop on another campus and didn’t leave time to eat, but I had a Luna bar and apple with me, so I ate those. Was going to head back to work, but home was on the way (and it was already 4), so I bailed and came home. Overlapped surprisingly with my 16 y.o. who has been super busy with a theater production, so that was fun. We played a some quick games of Rummikub while I ate a PB&J sandwich, some almonds, and some Tim Tams that she’d picked up at the store. Somehow this doesn’t seem like ideal HM fueling to me! I’m planning to make a big salad with some tuna in an hour or so and redeem things a bit.

@quilteryoyo, Ouch!!! I was told to run cool water on a burn until the pain stopped... never heard about vanilla but had a neighbor who put butter on burns - yikes! Also I think the alcohol in the vanilla has a cooling effect.

@elise4270 - I bet you are so happy she has lost some weight! I know I was when mine did. I loved her in any case but was so happy to see her take an interest in getting fit. I also think that being social with her mom is something that happens when the grow up more past the angsty phases. I suspect she is realizing that her mom is pretty amazing and so smart! Have fun clothes shopping for (with?) her!

We went to a movie yesterday at lunch time and I ate popcorn... I don't normally but it got me sucked in with the smell... So other than that I had a pretty ok food day. I bought more of the Yasso frozen yogurt bars in other flavors and they are so good for a treat once in a while.

@quilteryoyo Ouch! Poor hand, I’m glad it didn’t blister.

I have a new way to describe a noisy place now: “As noisy as a hog-calling contest at a Mexican disco on Cinco de Mayo weekend!”

Because that is where we got dinner tonight. I had a sudden craving for goat, and this disco near us has wonderful goat bbq tacos, beautiful fresh tortillas and salsa, and just really good food. It’s a small place which is mostly bar and dance floor and normally doesn’t have that many people. Tonight the parking lot was full, there were people out the door, and I had to use sign language to order because it was so loud that subtle verbal communication was impossible. I couldn’t remember the Spanish word for goat, and the waitress didn’t know it in English. (What I wanted was barbacoa de chivo.) We figured out between us that it was an animal with back facing horns, not sideways horns. I also had Cornish game hen with salsa verde.

In addition to the dance floor and dj playing music you could feel in your bones, there was a stage set up for what I assumed was going to become karaoke, but instead, it turned out to be a hog-calling contest. So, a bunch of sturdy young men taking turns bellowing into a mic at the top of their lungs ON TOP of salsa music! We ended up getting our meal to go, since it was truly deafening. But a really good dinner.
