Hmm.. I wonder if I did my own challenge effectively! I ate

    Brown: coffee, waffles
Green: Brussels sprouts & asparagus (my two least favorite vegetables!)
    White: halibut, milk
    Orange: Peach
    Red: roasted red peppers
    Yellow: butter

Darn, I think that’s all I can come up with! I’ve been eating blueberries for days, but didn’t eat them today!

If we’re counting white and brown, I have eight:

Brown oatmeal, white cottage cheese, green jalapeño salsa, red raspberries, yellow mini tomatoes, orange carrots, purple cabbage cole slaw, blue blueberries.

Memorial Day weekend eating continues, had grilled hotdogs today. But mine was a diabetic friendlier chili dog, with two dogs on one whole grain bun plus meaty chili. Still loads of fat and very little protein. So dinner was tuna salad and yogurt with blueberries.

@Elise4270 what happens to the color when you mix avocados and beets?

@Elise4270 I had a green cupcake yesterday. Does that count? ;)

Got home from the second trip in less than a week last night. Lots of driving, but it was really nice to see my niece's in-laws and get to help celebrate the impending birth of her first baby - a little girl they are naming Mya Faith. I have a birthday party this afternoon - for my neighbor's one year old little boy. Shouldn't be too bad as far as food goes since they are vegan.

It was all still purple/blue when blended. There is not much avocado, it's pre-mixed. Just put it in the blender.

Yesterday ended horribly. DD made brownies. Today dh And I went out for lunch at a Mexican restaurant. I had a salad, but it probably had 1000 calories.

Normally I'd go walk, bike, or run some of this off. But, that's not much of an option. I could. I'd be miserable. I could swim but I'm feeling a little to girly to go swim and too fat to even fit in a suit. DH is going to see his grandma today. I'm really tempted to go to the park and walk even with crutches.

I was in a terrible mood today and yesterday. Like, unleash the beast moody. The priest today walked communion to me so I wouldn't have to get up. It's pretty amazing how one small gesture can lift ones spirits.

Wish the Y had an alterG. Maybe I'll take an antidepressant or some Tylenol and start the medrol pack and get out. How much worse can I make the labrum?

    Food challenge ideas?

    Today’s Food.
Did okay today until dd and I fetched some last minute school supplies at the dollar store. I just had to look at the ice cream. So I had 3 ice cream bars. One snickers and 2 Twix. The snickers is far better. Don’t bother with buying the Twix one.

I have so many frozen bags of veggies, i think i need to throw together a veggie curry or something, maybe stir fry with the ground turkey. I have the butternut squash cut like noodles, so I won’t even have to do rice.

I’m out of apples. So I need a grocery list/menu. What healthy yummy stuff are you eating? I need a copy cat meal.

Ummmm - we have been using the IP and making chicken and pork chops and things... Last night I made teriyaki chicken and brown rice with fresh veggies that I cooked slightly in the microwave then aded to the rice. A few days before I made the pork chops with a bacon apple glaze. Tonight DH smoked ribs and we had with beans and salad.

I also made a dessert (don't usually but we had company) - I am on a mailing list for 365 days of IP recipes and this 'bar' recipe came with one of those. They call them Fudgy Wudgies and they are pretty delicious especially with vanilla ice cream... basically it is oatmeal cookie (but better) underneath and on top with a thick layer of chocolate in between. I used the 60% cacao chips instead of semi-sweet and it was so good. Now to not eat much of the leftovers... I did send a lot home with family but it made a 9x13 pan full.

A good night’s sleep has put me back at my goal weight (had gained due to too much sodium). Homemade roast marinated chicken plus black eyed peas and greens today.

Seven color challenge breakfast! Not shown: eggs on toast and bacon. I like eating a huge breakfast, it helps keep my blood glucose level and my cravings down. With three strips of bacon, two eggs on Dave’s bread with green and red salsa, this cacao powder / vanilla extract yogurt with fresh berries and side salad clocks in at about 600 calories. And makes me very very happy all day long.

@Elise4270 I think it’s remarkable you walked half a mile the other day, it may not seem like it from your end, but from my perspective you’ve come a long way in a short time! Hang in there.

@rheddmobile That is an amazing looking breakfast. Very colorful. I love breakfast too, but not sure my stomach would be happy with a salad early in the morning. But, then again, I've never tried it.

Wow @rheddmobile ! That looks amazing! You won the challenge for sure! And with the challenge you inspired me to have a few smoothies. I'm taking note of the breakfast and adding it to my shopping list.

@simcon1 do you have another challenge for us? Maybe we can do the rainbow run day challenge? If you run that day, (or walk or swim or get on that stationary bike), you eat a rainbow of fruits and veggies?

I'm am flat afraid of the scale. My PJs are getting tight. I hope it just water weight from some activity. I hate that feeling, laying in bed and your belly hangs over. I'm up like 5 pounds in a month. It's maddening.

@quilteryoyo I've never had salad for breakfast either. I saw something where other cultures- whatever I watched, had soup for breakfast. I definitely can do soup for breakfast. Sounds amazing actually.

@rheddmobile - that breakfast looks beautiful! Like something in a magazine actually! I came from rarely eating breakfast to eating a 'bit' of something as soon as I get up and breakfast later but nothing like that. The nutritionist wanted me to eat more and more protein at breakfast so maybe you just inspired me to do better there! Just have to find things beyond Greek yogurt with berries and homemade granola that I like and my stomach will tolerate. I am not a huge fan of eggs but I could hide put them in a wrap with some salad or just spinach, avocado and bacon. Hmmm...

What other interesting ideas do people have for breakfast and lunch? Those are the hardest for me to deal with.

@elise4270 - I agree with @rheddmobile that you are doing fantastic and walking a half mile is awesome! You have really come so far! You know too that the bit of extra weight will come right off as your activity level increases. I wouldn't worry too much about it but you definitely can't eat multiple ice cream bars every day 🤪

I entered the recipe for those bars I made yesterday. My pan made more than 20 so I used 24 servings and they were almost 400 calories apiece! Yikes! and we had them with ice cream.

What’s that now.... I can’t hear you over the crunch crunch of the snickers ice cream bars.... haha!

Some of those food can sneak up on you, with the calories. Least you can run it off, call it fuel.

I got a jump on some class work. Need to bike, wanna have another walk... need another walk after the ice cream. I started the Medrol pack. Already things smell weird. Everything smells like plastic. Dd will be home soon, I’ll ask her just to rule out something real.

I should go swim today, or least do some water walking. And eat no more ice cream.

@elise4270 - have you tried the water walking? I got the flotation belt when I was injured but then had no where to use it since our pool heater wasn't (and still isn't) working. I kept it hoping to try it out as cross training.

My little, very close, Planet Fitness gym closed and moved our memberships to a newer very nice gym that is miles away and no easy way without traffic to get to. So I cancelled my membership. I heard they may put a Gold's gym in the old PF location so I am looking at other Gold's gyms in the area. There is one not terribly far, but not close either, that has classes and a pool! I am seriously considering it. It is closer and cheaper than the Y here and assuming I actually take the classes, cheaper than going to a yoga studio and they have all kinds of classes besides yoga, including water fitness.
I may check it out next week. My trainer will be gone on vacation for a couple of weeks so I figure that might be a perfect time to check it out.

We had a storm today so no swimming. I assumed the pool was closed with the potential of lightning strikes. I need to go tomorrow. Dd wants to go too, so that'd be great company. @shanaber it nice having acess to a pool! I hope the new gym opens soon too!

    Food.
I had 3 eggs and 3 bacons today. Working on a kombucha, no idea what's for dinner. The oral steroid makes me not hungry... So that's a win. I should plan on that stir fry tonight, I'm sure dh will be hungry.

I made stuffed acorn squash yesterday. Mmm! I love stuffed acorn squash. Lean ground turkey, salt, balck/green/white ground fresh pepper, corriander, ginger with a few small garden tomatoes and a minced bell all sauteed then served with half-half basmati rice-red quinoa.

I'm down 2 pounds this morning. Thank God/Buddha etc...

@Elise4270 I was planning on roasting an acorn squash for dinner! I roast a pork loin, with the two halves of the squash on the same pan, cavities seasoned with garlic salt, garam masala, and topped with a little butter and maple syrup, and the roasted seeds from the squash. I used to love them stuffed with quinoa and walnuts, but that’s too many carbs at once for me now.

Maybe our next challenge could be SQUASHES!

@rheddmobile I have another acorn squash, it's small so I cooked the giant one I had. I'm sure I could eat them daily! Hmm it may not be too late to ask dh If we have room in the garden for a plant or two. I throw the seeds out for the crows. I love those birds. I make sure there's almost always something for them in the yard.

Think I'll do the stir fry kinda thing with the noodle shaped butternut squash.

Yesterday wasn't bad. I had a homemade stir-fry that evolved in to basically turkey coconut curry, but deconstructed since dh fusses over the rice/quinoa and abundance of coconut cream. So I made it separately. I liked it.

DH isn't adjusting to the lower sugar plan. He's up at night adding maple syrup to almond milk. Maybe he'll get there.

    Food Plans today?
Coffee, a banana and I really want a tuna sandwich for some reason. I have tomatoes, onion and lettuce, so it'll be a good one! I also want cereal, that's usually a sign that I might be a bit dehydrated -cold, sweet seems to be thirst for me. Think I'll have some hot tea if I want to sip and study. I also have Perrier. And water of course. I'm still grabbing apples when I'm snacky. They've become a no thought snack, no puttering around looking for anything unhealthy.
Dinner- there's leftover curry grub. We also have a watermelon everyone wants to eat, but no one wants to cut. Haha!

I've been up since 430. Dang cat then dh's phone vibrates and I'm up.

Squash dishes - I have a good friend who found this recipe for butternut squash ravioli or as we called them squash pockets. She made them as an appetizer but they could be done for a meal too. Delicious!
We made the pasta and it was a lot of work so I suppose you could cut the time down by buying the pasta remade and just cutting it.

I bought honeycrisp apples at Costco. they are pretty good still (not mushy or grainy) but they are really big. Cut one in half yesterday and had it with some cheese for lunch instead of crackers. Realized I don't really care for apples and cheddar cheese together...

So far today I have done better than expected. I had training early since trainer is going on vacation and had a flight to catch this afternoon. I was going to take PB toast to eat on the way and realized I didn't need to leave for 45 mins. So I mad my typical yogurt, fresh strawberries and granola then still took the PB toast with me since it was already made. I stopped at the grocery on the way home for salad fixings and because @elise4270 mentioned tuna sandwich I decided to get some tuna and stuff to make one. I haven't had tuna in a very long time and I don't eat mayo much these days. I stood there and read all the mayo bottles to find one with fewest ingredients, not lots of crappy stuff and small enough bottle I wouldn't be wasting much. Oh and pickle relish - had to have it in my tuna salad too. Used to get mayo with the pickles in it but I guess they no longer make it. All in all the tuna was 'ok' might be better after it sits a bit and the flavors come together more.

Tonight is leftover ribs and a big salad.

@elise4270 - the crows here nest in big pine trees along our wall with our apartment complex neighbors. They go after all the other birds' babies (finches, mocking birds, etc.) knocking them out of the nests and then carrying them off. Last week we had a scene from the Alfred Hitchcock movie, Birds, with what seemed like hundreds of crows circling the pine trees and cawing as loud as possible. I had to go out just to watch them, it was bizarre. I went out again later when it seemed to get even louder and saw a brown bird diving into the pine tree and thought it might be a dove they were after. Then I saw it come back out and it was a big hawk carrying a crow chick and all the adult crows were going crazy making more noise and trying to chase after it. The hawk was flying high and dive bombing sort of but got away and the crows went immediately silent. I have never seen anything quite like it before.

Whoa! That's crazy! We always seem to have a pack of 3, they are too funny to watch, bouncing around at each other. They love watermelon, cat food, and leftovers! I sure don't mind if they keep the mockingbirds and blue jays in check. We have several pairs of Mississippi Kites, I thought they were like Hawks, but turns out they mostly eat bugs.

One Thanksgiving I put the turkey carcass out and watched the crows watch the buzzards pick it gone! Yay! No stinky turkey carcass trash! I have a chicken carcass I'd like to put out... But I'm afraid a cat or dog might choke on it if they find it. DH is still buying his "grey boy" chicken. Dang thing was under weight when we got him, now he's 2 pounds above average. Still a skinny slinky though. Tiny kitten might be a big cat.

@shanaber Our crows are the exact opposite, they are like policemen who drive off the other predators (cats, possums, hawks) that eat birds! We do have smaller red winged blackbirds which are feeder bullies, cowbirds, which are nest parasites, and huge flocks of grackles, which will kill cardinal chicks, but the big old crows seem to be universally beloved around these parts (unless you happen to be a hawk). They don’t come to my feeders, but one flew over the yard the other day carrying a striped garter snake, which was alive and proving to be something of a handful. I thought I might get a snake dropped on me like that family in the video!

This morning I went out to do my stretches and there were no birds at the feeders, just two crows in the tree making an unusual metallic croaking noise. Which seems to be crow for “cat in the bushes,” since shortly after a gray cat shot out from under the bushes where he had been stalking the feeders. And when he was properly gone, the crows also left. I imagine them like lifeguards: “Shark siting, beach is closed today, ma’am.”

Anyway, on the food front, today we went to the Memphis Italian Festival and ate free meatballs.

Re: tuna salad. I’m a huge fan of Duke’s mayo, and I also like to put Mrs Renfro’s green salsa in it. Mrs Renfro’s isn’t really like salsa verde, it’s nothing but roasted and puréed jalapeños, and it’s delicious. Not really hot hot but spicy enough to make you pay attention. And I hate dicing jalapeños and getting them on my fingers, so it’s very convenient.

@rheddmobile That’s a lovely description of your crows. I am fond of them, so I’m glad others find them useful and they aren’t nuisance birds. There are crows, at a park I love to run, that makes monkey noises. There is a boise de arc (Osage orange) tree that has grown in a way the kids of generations have played on it. It’s affectionately known as the “monkey tree”. So I imagine a handful of crows have been watching the kids play and picked up the monkey noises. Other than that I usually hear the flat “ha ha” from them. And these never seem to even notice my cats and my cats somehow know tangling with a crow is undesirable, they just watch. We have squirrels for the first time this year. I’m not keen on them. Grackles are thankfully not in the neighborhood. They are at Walmart and in town by the thousands.

    Today’s food?
Man I always do mayo in tuna, or avocado. Now if you can get a good tuna steak, skip the mayo and bread! I have no plans today for food. I’m preoccupied with coursework, rehab, this headache, and work life*. Which I’d love to expound on, because I think I need an out. I think confession is tonight, but I am new to this and unsure where the line is drawn on “help me manage” and “I’m a whiny baby”. I feel it is a good move though, we’ll see how that plays out. I still have a hard time communicating with the new surgeon, complaining vs explaining. I like our new priest and don’t wanna be a “oh it’s that *person* again”. Coz he wouldn’t say kitten 😉. Guess today’s food is a default apples and tuna until I find an acceptable plan. Dh is on a food rampage, I expect pizza to be brought home.

It is so interesting about the crows. I honestly never realized they ate other birds or meat at all and just thought they were scavengers. I do know they are very smart and I am surprised the hawk even went in to take the baby with all of them there and going after it. We also have a huge flock of finches that live in the trees around us. I always wanted to have a finch house on the patio (we had one at the zoo I worked at in college) so it is like having one without the walls!

Well - I was having a great day food wise yesterday but we had an emergency with our elderly neighbor who lives alone. We have a signal if the garage door is up all is well. Well apparently she got up sometime early and opened it and then something happened and she took a bad fall. Fortunately another friend had been calling her and when she didn't answer came to us since we have a key to her house. She was in the kitchen but clearly fell in the dining room and she has no recollection of what happened. Note, she has a medical alert that we got her and a cell phone and both were in her TV room. She has a small break in her left elbow and something going on in her abdomen (bleeding) but they are mainly concerned right now with what caused the fall.
She was in the ER until after 4am but I went home at 1 as they were just waiting for more tests to be done before moving her to a regular room. They did call me at 4 to let me know and give me the test results. I didn't have a chance to eat anything for dinner and went directly to bed when I got home. Now trying not to eat everything in sight!

@rheddmobile - I have never thought to put jalapeños in tuna... sounds delicious. I have this chopper that a friend got me that I love for chopping onion, garlic and yes fresh jalapeños too. I also buy diced jalapeños in a can but I really prefer to use the fresh ones.

@shanaber Sorry about your elderly neighbor, but it is good that you are there to help her out. I hope she is okay and they find out what caused her to fall.

I am here to report that, after 2 weeks of vacation, horrible eating, and little exercise, I am only up 0.6 pounds!!! I am ecstatic about that! This month is going to be really busy, so not sure how I am going to do. I'm trying to spend part of my day today prioritizing and planning so I don't completely go off track. I'm going to be working most of the month - the 6:30 - 3:30 shift. I am NOT a morning person, so this is hard for me, but I do love getting off at 3:30. My step-daughter and her two daughter's and mom are coming up for a weeks visit. The minor league baseball season starts on the 18th, where I am an usher. Just a whole lot going on!

Inspired by @martaindale today I cooked a cube steak with dh's leftover sandwich veggies, tomato and onion. Then found some fresh pineapple that needed to be eaten, I added it along with the leftover coconut curry rice/quinoa and added a squeeze of lime.

Yummy. It's just a mess of a dish, haha!

I guess running back and forth to the hospital and rehab center and not eating (or eating crap) is ok cause I was down 2 lbs this morning! What!?! I was not expecting that at all but I will take it.
I am back to eating better and making sure I get good meals in between visits and taking care of things at her house as well as ours... it is exhausting and the social worker is saying she will need 24x7 care when she gets home. I know she has told them I will take care of her but I cannot manage that. I am not looking forward to that task, having the conversation with her and actually helping her interview and find someone. Fortunately it will be a couple of weeks at least.
@quilteryoyo - sounds like you will be getting your exercise running around ushering people to their seats. I bet my DH would enjoy doing that too. We have no minor league teams but I bet he could do it for the Angels. Their stadium is very close to us. Close enough that I used to run past it pretty regularly until they blocked off the service road because of issues with homeless camps.

@elise4270 - I think they call that a goulash even if it doesn't have any paprika in it 😁

@shanaber I haven’t read this thread for a couple days, just caught up about your neighbor. I hope you know you are an angel doing all this. I remember caretaking for my dad after his stroke - it took the combined efforts of me, my husband, and my mom, and we were all just continually exhausted. It’s not something you can do and also have a life. Make sure the social worker knows it ain’t gonna happen, so that she can set the wheels in motion, because at least here, there are waiting lists, and Medicare in Tennessee doesn’t pay anything for in-home care, just for nursing home care and rehab.
  • quilteryoyo
    quilteryoyo Posts: 6,550 Member
@shanaber Stress is probably the reason that you lost weight. When my husband was in intensive care, the very helpful and knowledgeable nurse told me to be sure and eat a lot, because stress takes a lot of energy. I did. I ate a LOT and didn't gain any weight. I think it helped me have the energy I needed at the time. I hope you are able to find good in-home care for your neighbor. I agree with @rheddmobile on getting her into a nursing home if that isn't an option. You just can't do that all by yourself.

Also, your husband should look into ushering. For us, the hardest part is cleaning off the seats before each game. Once that is done, it's more a matter of talking to people and making sure they know where their seats are, that they are following the rules, and are having a good time. I enjoy it. I get to meet new people, watch the game, and make a little extra money on top of that.

I’m back up those annoying 2 pounds of sudden weight gain. I realized i dropped it when I started the medrol pack, now that that is over, the weight is back. Now I just have to figure out why I have apparent inflammation weight gain. I have an upcoming PCP visit, I can ask, but sure I will get “normal”. And it may be.

@shanaber good luck with the neighbor.

    Today’s food?
Bombed yesterday with ice cream. Eh, life’s a balance, right? I was up just before 4am today. I think it’s the after effects of the steroid pack, I’m just to hot to sleep. Just as well since I have some studying to do. So I made a Walmart pick up order, planning today’s food, which includes stuffed bell peppers with lean turkey, rice, mushrooms and what ever else I find. I also grabbed more acorn squash. I think those are just the perfect “get full, eat healthy” food for me. I have everything for egg bites and snack fruit. I took @rheddmobile ‘s? idea of frozen orange wedges and ordered oranges. Maybe it’ll keep me out of the ice cream.
