    I might give those enchiladas a try, Mihani. It is about time for a new recipe to go in the rotation. I don't love Daiya, but I have a smokey paprika sauce that I bet would go well with that. (I've link burger and sauce before, but i'll paste the sauce recipe below if anyone wants to try it. Carnivores tend to like it, too.)

    I made a small tapestry loom today for sampling different yarns in weaving and for making up to 10" woven squares. It is kinda ugly but i'm pretty pleased with it! A square 'zoom loom' that makes 4" squares is $40 to $50 to purchase, and this one is more versatile (up to 10 inches wide and up to maybe 15 inches long) and cost nothing but the scrap plywood we had on hand, some nails, and a few hours of time.

    Garlic Paprika Burger Sauce
    1/4 cup raw cashews 30g, soaked in water for at least 10 minutes (skip soak w/ vitamix)
    1/4 cup tahini 60g
    1 garlic clove grated
    1/2 teaspoon pure maple syrup none of that cheapy stuff, k?
    1/2 teaspoon rice vinegar
    1/2 teaspoon smoked paprika
    1/2 teaspoon sea salt
    1/2 cup water 120ml

    Directions
    Drain water cashews are soaking in. Add everything to the blender and blend, baby, blend! Note: the 1/2 cup of water makes for a thinner sauce, if you want thicker spread, use less. It gets thick overnight.

    I never shared how my test weave came out. It was enough of a project to warp the loom and do the test...now I don't feel like doing the actual project! The picture doesn't show it, but there's subtle copper sparkle in the teal hand spun.

    Beautiful Carla! And how clever to make your own loom. I am always so impressed with the stuff you (and Karrie) do, from a totally NOT crafty/artsy kinda gal it's awe inspiring.

    Long day at the office, totally wasn't feeling it on food prep when I got home. Did it anyway. Baked some potatoes, steamed a load of broccoli and asparagus ready to go. Eggplant roasting in the oven now. Soon as it is done I can go to bed. I am finding plain ol' steamed veggies so tasty these days. If they are done just right, not mushy, they are so delicious. The trick is a cold water bath right away so they don't continue cooking when they reach perfection. I add the steamed veggies to salads at lunch or bowls at dinner. One of my favorite "indulgent" meals these days is homemade (oil-free) hummus on a sammich flat or in a wrap, with steamed veggies or broccoli slaw. Still have collards and mushrooms to saute for dinner one night this week, and bok choy and shiitakes for a stir-fry dinner.

    Never did make the enchiladas last night. Had two ears of corn and a small salad with lots of sliced tomato instead. My neighbor is keeping me overloaded with tomatoes and my face is totally breaking out from all the tomatoes I'm eating. Happens every summer lol. Delicious corn!

    B - arugula, cucumber, tomato on Dave's Killer Bread with brown mustard
    L - salad of arugula, tomato, chickpeas, cucumber, balsamic and nooch
    D - been munching as I cook, veggies raw or after steamed here and there, not going to have a real dinner at this point

    B - steamed broccoli, a peach
    L - big ol' salad with power greens, chickpeas, steamed broccoli and asparagus, chopped tomato, balsamic and nooch, half a whole wheat no oil pita, another peach
    D - baked potato topped with steamed veggies and cheesy chickpeas
    S - lara bar (why did I buy them again???!!!)

    Left work an hour early to take the boy to the vet, he got his shots and doc says he looks great, heart sounds healthy, etc. They did blood work so we'll see how that turns out. He's now a "senior dog" ... hard to believe this bundle of energy and mischief is a senior!

    I keep forgetting to mention in my food recap, I have a brazil nut and a couple walnut halves every morning either alone or on my oatmeal. I try to throw a tablespoon of chia seeds in my oatmeal but often forget. I need to get back into that habit.

    Carla, your sample is beautiful! I'd like to weave, but honestly, I'm not sure I have the time to add yet another craft to my list of things to do!!!

    I'm knitting a sweater for my DH right now and a mermaid tail blanket for my DD. I hope to finish the front/back of the sweater this week, and then I'll get the sleeves done hopefully next week... The mermaid tail will hopefully be done by the first week of October. :smiley:

    Oh, my son has his first job; delivering flyers. So that is to say that WE have a new job; he's too young to do it by himself. Tonight is our first night. There are a TON of flyers on my front step right now... We deliver 2x per week. So at least there's some exercise. And swimming will be starting soon too; that's 2x per week as well. Yay for forced activity!! :wink:

    Good looking day, Mihani. I don't mind too much if I pick up a couple of Lara bars, it is when I have an entire box in the house that it becomes a problem LOL

    I think I may have taken on too many crafts...I have 2 pairs of socks on the go with 2 more queued up, 1 cardigan about to be cast on, a crochet along blanket, a weave along project (probably a throw), and I'm making the hand spun yarn for the weave along! I'm almost sure I'm leaving something out, too. It is a bit much really.

    Breakfast: lately I've just not felt like much for breakfast. I had an Asian pear from our tree. YUM!
    Lunch: bean patty, mixed greens salad, nut dressing, slice of Ezekiel bread.
    Dinner: pinto bean chili, slice of bread, 1/2 avocado, steamed greens
    snack - fruit salad or another pear

    Oh, I didn't mention my WIPs that are on a break (there's too many!), I just listed the 2 that I'm actually working on right now... :wink:

    I'm still using salad kits for right now until things settle down (when will that be again??), but I need to get more fruit in me. And I need to make some suppers in bulk so I have options in the freezer for when I'm busy. Soon...

    You ladies wear me out just hearing all the stuff you do!

    B - munched on steamed broccoli and asparagus while putting together my lunch salad, a couple walnut halves and a brazil nut (remembered to mention the nuts today)
    L - salad same as yesterday except I forgot to add beans, and added diced up 1/4 of a roasted eggplant, grooving on plain roasted eggplant lately. I know a lot of people don't like the eggplant skin but I do, and it makes it hold together when you cut it up (bonus)
    D - same as yesterday with some cantaloupe for dessert

    I need to get on cooking some of the other stuff I bought, but I'm just too darn tired when I get home. If I have food ready to go I'm fine eating right, but it's tough to make myself cook during the week. I don't want to let the collards, bok choy and shiitakes go to waste though, so I will get on it tomorrow.
