SOS - salt oil & sugar

I don't have added sugar or oil in my diet (unless I eat out), but salt I could stand to cut down on! I'm thinking 1/8 tsp less in all recipes, then the following week 1/8 less again, etc.

The treadmill is being dug out this weekend!

breakfast - missed it again. i need to make those smoothies more appealing perhaps!
lunch - ate out - veggie sandwich w/ balsamic vinegar and cilantro hummus
dinner - leftover chili, slice of bread, fruit
snack - oats w/ medjool date and 2 Tbsp walnuts

    Thanks for starting the thread Carla. I am off for a couple days of "unplugged" but will be back Tuesday. Goals for this month are to keep on keepin' on with eating right, and get off my butt and get some exercise. I would have said *kitten* but mfp will change it to kitten. I did take the boy for a walk tonight, in a light rain. It was actually very nice. His enthusiasm for walks is greater than mine, but he's a good dog and likes having things to sniff at outside his own yard.

    Our Asian Pears are ripe and yummy! They are just in time, since we're at the end of cherry season.

    My cousin and his wife are dropping by tomorrow and I'm going to make some veggie sandwiches with hummus and balsamic vinegar for lunch. I'm hoping they don't attach any significance diet-wise to there being no meat in the meal. Joe seems to think that they will notice. He says 'normal' people don't just have vegetables in their sandwiches LOL

    I'm here. Today is my first day of working full time again for I'm not sure how many years. My workday starts at 7am. blah.

    On the bright side, I prepped my food for the day last night, and I've got lots of good stuff with me today. Grapes, carrots, peas, bananas, dragon fruit, and a big salad for lunch. Also a piece of bakery foccacia bread; because I just couldn't resist the smell of it...

    For supper I'm going to make a stirfry with mushrooms, baby bok choy, celery and onion, over rice. yummy!

    Later this week, after the shock of my early mornings wears off, I'm going to try to wake up even earlier so I can fit in a workout on my treadmill.

    We are going to Mexico in February, so I want to get serious and get my butt moving!!

    Yum to Asian Pears, Carla. I don't know if your guests will notice or not. I have some friends and family members who would notice, but it's funny a lot of people eat vegan meals and don't think about. Like a pasta dish or something, but when it's purposefully vegan they are like omg, where's the meat lol.

    Sounds like a very well planned day, Karrie. I still haven't tried dragon fruit. How is it? Do you eat it raw? That's an early start ugh.

    Had a good on-track day today.

    B - oats with oat milk and a sprinkle of cinnamon, a few walnuts
    L - big ol' salad with baby spinach, chickpeas, steamed broccoli and asparagus, half a baked potato, diced sweet pepper, balsamic and nooch
    D - more steamed broccoli and asparagus, sauteed collards, sweet potato over brown rice with a drizzle of balsamic glaze
    S - watermelon

    Did my food prep last night. Did better this time not going overboard so hopefully I won't end up throwing too much out the end of the week. The sweet potatoes came out pretty good. On a whim I just sliced them into rounds, wrapped in foil and baked. I will go back to roasted, but these will be good for throwing into salads or dinner dishes. I left the skin on. I don't like sweet potato skin as well as regular potato skin, but I'm trying to learn to like it.

    My cousin and his wife liked the chickpea salad sandwiches and actually asked for the recipe. We said we are eating whole food plant based and they knew about it and were accepting of it and said it kinda seems to be the best way to go. So that was a nice surprise.

    I still have enough tu-no salad left over from our lunch that I can have it again tomorrow for lunch. One more round of bean burgers for dinner today and then it's time to cook again tomorrow.

    Karrie, I hope your first week back goes well & that you get into your new routine quickly!

    Mihani, I agree on the sweet potato skins, they aren't my favorite to eat, either. Maybe there's a tasty WFPB yam potato skin recipe to make them appeal. I'll be on the lookout and let you know if I find a winner.

    Dragonfruit is similar to kiwi. Yes, you eat it raw. You simply cut it in half and scoop out the inside. Or you can cut off all the skin, but that's a lot more work. It is white inside with black seeds, all edible. It's got the same kind of texture as kiwi, but it's more bland - a very subtle sweetness that reminds me a bit of honeydew melon (but not as strong). It would probably mix very nicely with a lot of other flavours...

    My DD loves dragonfruit. She always gets excited when I buy it.

    The kitty actually let me sleep all night last night. He only got up when my alarm went off, so that was nice. Hopefully that wasn't just a one-time deal.

    I stayed up an extra half hour last night, and I set my alarm 10 minutes earlier than yesterday (my plan to gradually get myself up early enough to work out), and I can feel the difference. I'm quite tired today. So I need to make a point to get to bed earlier.

    We have decided to go to Mexico in February, so I have to make a plan and stick to it so I can feel confident and comfortable in my skin by then. !!

    Glad to hear your company liked your food, Carla. I often have people say wow, this is vegan? But it's so GOOD! I just smile and say thanks, but in my head I'm thinking whaaaat? lol

    Karrie, I will have to try the dragonfruit. It looks so pretty! I am glad kitty is starting to let you sleep. I was so tired yesterday because there were thunderstorms night before last and my dog is terrified by storms. So last night I went to bed super early.

    Today was a repeat of yesterday, except I had leftovers from dinner for lunch, and the salad for dinner.

    Think this will be another early night for me. I feel like I've been running on empty for a while, and my batteries are worn down.

    Man, I really struggle with going to bed early. Stayed up too late again last night. And I have a spinning wheel coming that should arrive tomorrow, and I've been watching videos online learning how to use my wheel. So I was lying in bed thinking about the wheel, and I know that kept me awake longer than it should have. What can I say; I'm a crafting geek! :wink:

    I have the opposite problem Karrie, have to make deals with myself to stay up a little later and get something done when I want to go to bed too early lol. Except on weekends, when I know I don't have to get up at 5 a.m. and I will start reading or playing on the computer or something and stay up way too late. Woohoo for the spinning wheel B) . I am sure you will be creating some beautiful yarns soon.

    B - slice of sprouted grain toast with 1/2 avocado mashed on top. It is one of the baby avocados so I figure half is about 1/3 of a regular avocado. Haven't had avocado toast for a while it was yummy!
    L - Amy's burrito, watermelon, a few blue corn chips
    D - not sure yet, probably leftovers of brown rice, collards, sweet potato, drizzled with balsamic glaze

    I'm an early-to-bed kind of person, and I need my 7 to 8 hours! When I used to work starting at 5:30 am, I'd have to get up at 4:00, so I'd go to bed at 8:30 pm lol It would be summer and kids would be playing outside in the 'daylight'

    We went to a greenhouse lecture/class this weekend where we learned about polycarbonate and glass greenhouse structures of all kinds. We picked out the style and options we like and decided we'd like some landscaping around it to make it fit in and look like it wasn't just plopped down. By the time we added it all up, let's just say it wasn't cheap. So instead we're thinking about buying a full sized generator and getting it installed at our place. It would be an automatic system that flipped over to the generator within a few moments of the power going out. It isn't that exciting to spend money on, but where we live and with our long driveway and no functioning heat source if the power is out, we don't really want to take the chance again. Last year we were lucky that the power was only out for less than 24 hours and that it didn't get cold enough for the pipes to freeze.

    Karrie, you are probably fitting in as much spinning as you can! Hope your wheel made it to you safely and that you're enjoying getting to know it.

    Mihani, how are things going at work? Did you take a day off this weekend?

    I'm considering signing up for meal plans from Clean Food Dirty Girl. It's $20 a month and your grocery list is prepared for you and everything is organized. You batch cook one day a week, for several hours, and then your meals all week are easy to throw together. I'm sure we'd love the food since any recipe I try on her site turns out amazing. Anyway, if I give it a go, of course I'll let you guys know what I think. In the end, I already have so many recipes and can make them efficiently that it's certainly not necessary. I'll see it it's a luxury we like enough.

    Here's a recipe for oatmeal that I'm going to try this week.

    Poppyseed Carrot Cake Steel Cut Oats (IP)

    1 Servings:

    Ingredients
    1/2 cup steel cut oats (100g)
    2 cups water (475ml)
    1 cinnamon stick (or 1/4 teaspoon ground cinnamon)
    1/2 cup grated carrot (60g)
    1 tablespoon coconut sugar (optional)
    1/4 teaspoon ginger powder
    1/4 teaspoon cardamom powder
    1/8 teaspoon ground nutmeg
    2 teaspoons vanilla extract
    1 tablespoon poppy seeds
    1/4 cup raisins (50g)
    Non-dairy milk and chopped walnuts for serving

    Steps
    Rinse the oats in a fine mesh strainer. Tap the strainer against the sink to remove excess water and transfer the oats to your Instant Pot.
    Add the water, cinnamon stick, grated carrot, coconut sugar, ginger powder, cardamom powder, ground nutmeg and vanilla. Stir once.
    Lock the lid into place and make sure the nozzle is pointed in the sealing position. Use the manual setting and set the timer for 10 minutes. Use the natural release method when the timer is up.
    When all the pressure is out, remove the lid and stir in the poppy seeds and raisins. Your oats will look watery at first. This is okay - they will thicken as they cool. Allow them to cool completely before you store them in your fridge. Feel free to keep the cinnamon stick in your oats. It will continue to flavor them as they set (just don’t eat it).
    Serve warm with a bit of non-dairy milk and chopped walnuts.

    shoot guys sorry, I didn't remember that it is an instant pot recipe, i'm sure it could be made on the stove, too! How ever oats are normally made on the stove. Oddly enough, I don't think I've ever made them that way! I used to make up a vat in an old crock pot we have.

    Great idea to invest in the generator Carla. The greenhouse will happen eventually I'm sure. The oatmeal sounds yummy.

    Got quite a bit done at the office, not enough, never enough, but I am making some progress. I have two things that are big priorities that I barely got started though, and will need to concentrate on them this week.

    I am going to jump on the treadmill, eat some dinner, and get to bed early. I fell off the no coffee wagon but haven't had any for two days and back to my ginger turmeric tea. My eating has been off the track the past few days too, blue corn chips and bread and boca burgers. I load the burgers up with lots of greens and veggies, but still not the best choices. Going back to basics tomorrow with plenty of oatmeal and veggies. Didn't have time to shop or prep though, so I will be relying on frozen veggies this week with brown rice or other grains.

    My wheel didn't make it on time; got held up at customs. :confused:

    I spent the whole day yesterday cleaning, doing laundry and then I got groceries and made 8 smoothies for the week, and packaged up some fruits and veggies and made lunches for myself & the kids. Then I had to wash up the dishes, help my son with some homework, and then my DD and I started our first page for our brand new Bullet Journals. We're gonna have fun making them really pretty so we are motivated to stay organized. We're gonna have a little girl time every night while we work on a new page, and update our existing pages.

    You're getting on the treadmill pretty regularly lately, Mihani. Good work! I truly don't know how you manage to fit cooking and exercise into your busy days. It's impressive.

    Argh!!! The torture of your amazing new wheel stuck at customs, Karrie...I hope they free it soon!! Bullet journals! I started one and then never used it. I should get into a routine of working on one a bit every night like you and your daughter are planning.

    I'm going through a bit of a slump. I haven't been working on any of my numerous projects, and I haven't been putting in enough effort to eat greens and tick my daily dozen check-boxes. I'm going to have a very green smoothie this morning to kick off my week.

    Hope your very green smoothie got your day off to a good start Carla. I tend to go in cycles on motivation for projects myself.

    I got out of the office right on time and beat the traffic home. Need to do a load of laundry, will do a quick walk on the treadmill while it's in the dryer, dinner and early to bed. I have some sort of mild crud, I don't know if it is just sinuses/allergies or what, but I felt pretty crappy today. Sudafed helped some. I was going to use it as an excuse not to treadmill, but I will do at least a few minutes.

    Going to make some brown rice and frozen stir-fry veggies for dinner and lunch tomorrow. I hope I can get to the grocery soon and get my regular food prep done.

    Today is day 2 of smoothies ready to go. Both days I forgot to take them out of the freezer before going to bed, so I have frozen solid smoothies. :neutral: Oops... But it'll be ready for me by lunchtime. In the meantime I'm having some bananas and some nuts... Salad for supper.

    My wheel had an "attempted delivery" yesterday about 15 minutes after I left the house after lunch (I tried to stick around to intercept it, but obviously failed). I was ticked off. So now today I have it as a hold for pickup so I can get my hands on it after work. FINALLY!

    I am signing up for the FB E2 7 day rescue diet that is starting today or tomorrow. I want the extra motivation and inspiration. The only part of it I won't follow is the rule of not drinking calories. I'll have my morning smoothie as usual and maybe try an oatmeal bowl on a few days. I guess I need to scare up some good salad dressing recipes that don't use nut butters. I really rely on those.

    Project 'Unearth Treadmill" is ongoing. I started organizing my art supplies in the space, and am taking everything out of the room that doesn't need to be in there. I'll try to get some more done today and if I do a bit every day, it should be all ready by the end of the week.

    Yay, glad you are signed up too Carla. Even though I have kept at it after the first 7 days was up, I like doing the "official" reboot when they have it. It's pretty easy to stick to something 100% for 7 days. The group goes all the time and is really active, but they seem to do an official reboot every couple months. I will do it full on for the 7 days then go back to my hybrid ETL/E2 plan. The main reason I go with a hybrid is because of no tofu and no smoothies on E2, and I like those now and again.

    Felt a bit better today, mostly because I slept a lot last night, but I still feel worn down and headachy, and hope this crud is over with by tomorrow. I am pretty sure it is just sinus/allergy stuff, it has been brutal this year. Took some sudafed today and that seemed to help too.

    Hope you got your wheel Karrie!

    Oh, and Carla, I use plain balsamic with nooch (to make it stick to the leaves better) or salsa a lot for dressings. I am going to try some of the dressing recipes in the 7DR book though, they get good reviews on the FB group.

    Today is day 3 of frozen solid smoothies. Oops! I was thinking of taking my smoothie out last night while I was doing the dishes, but then I got distracted... Oh well. I will have it for lunch instead. Again.

    My wheel did come. It had been opened and inspected by customs. I bet they had fun with that. It was double-wrapped in bubble wrap, and the entire box is filled with packing popcorn... But the thing that ticked me off is that they took the wheel out of the carrying bag and they didn't put it back in properly. It could have been damaged! Luckily it wasn't, and it all works the way it's supposed to. I tried to spin last night, but a wheel is COMPLETELY different from a drop spindle, and all I succeeded in doing was making a giant mess. So I'm gonna try again tonight. :smiley: ...after my DS and I deliver flyers, of course...

    Had a good on-track day.

    B - steamer bag of broccoli, carrots, snow peas, water chestnuts. I really hate steamer bag carrots, forgot how much. So tasteless and grainy. I ate the broccoli and snow peas and water chestnuts. I will be glad to steam my own broccoli from fresh that I bought tonight. It's so much tastier and not all mushy when I make it myself. I don't think Birds Eye will be asking me to do commercials for their steamer bags anytime soon. :p Seriously, they are okay in a pinch, but I couldn't eat them every day. I would start to hate veggies.

    L - homemade E2 hummus on whole wheat sandwich flat with loads of power greens and some sliced tomato. It was so good, but I was getting a hankering for blue corn chips mid-afternoon, and decided to make another sammich flat instead of giving in to the blue corn chips. Win! I figure the flats are probably around 200 calories, if that, and much better to eat another one and get in all those extra greens than to indulge in 200 calories of blue corn chips.

    S - some rolled oats moistened with a little water and a banana mashed in. I really like raw oats now, just enough water to moisten them, a little cinnamon and maybe some fruit.

    D - brown rice, water sauteed onions and green peppers, on a bed of baby spinach. Found green peppers on sale 3 for $1 so I have a bunch to use up! Will top it with some salsa and black beans. Strawberries for dessert.

    Hope this is the start of another good few weeks after being way off the rails since the weekend. Boca burgers, too much bread, blue corn chips, alcohol. The usual downfalls for me. Still stuffy and blah today so probably won't cook tonight, maybe tomorrow. Also got a bundle of rainbow chard. I only have one good recipe for chard, anyone have a good recipe to share so I can change it up?

    I'm having a double dose of smoothie today, for bfast and lunch. I have some nuts for a morning snack and some skinny pop (100 calorie bag) for afternoon snack. And I've got a salad kit for supper, I might make some kung pao chickpeas to eat alongside...

    I'm playing the game right now where I keep losing the same pounds over and over. I'm hoping that this week or next I break out of that habit. But I still have to catch up by a couple more pounds before I'm ahead of the game... :tongue:

    I don't think I'm going to cook tonight either. I have leftovers that I made for dinner last night for tonight, and I'll get to my prep work tomorrow night. I have broccoli and asparagus to steam, and the chard to do something with, and will make a batch of quinoa and bake some sweet potatoes. Just haven't been in the mood to batch cook this week, but I just went to to the grocery yesterday so everything will be fine until I get to it tomorrow. It's when I waste food that I get annoyed with myself.

    B - oats with a splash of oatmilk, a few walnuts, sliced banana
    L - hummus, power greens, sliced tomato on a sammich flat
    S - apple
    D - leftover brown rice, sauteed peppers and onions, black beans and salsa, on a pile of baby spinach

    I made up another double batch of our black and white bean burgers. I need to make them more often. We enjoy them WAY more than any of the frozen veggie burgers from the store and they are for sure healthier too, with no added oil and no preservatives. And of course much cheaper.

    I think it's time for some fajitas and tacos, too. How awesome is that? I have meals that I love and am looking forward to eating, and they are all wfpb and perfectly on plan. It is just my own laziness in not organizing a menu and making them.

    B - steel cut oats in IP w/ 1 medjool date, 1/2 c frozen blueberries
    L - salad w/ bean burger, nut sauce, slice of sprouted bread
    D - salad, bean burger, sauce, bread, fruit salad
    S - pear

    I've posted them before but it's my bad, I never remember what they are actually called so I probably give them a different name every time I make them!

    I bought a huge bag of dried mushrooms from Amazon, and I rehydrate some of those with hot water and then drain and add to each of our veggie burger recipes to hit our daily mushroom target without even trying.

    Stupid Simple Bean Burgers with Paprika Garlic Burger Sauce - Whole Food Plant Based

    Author Molly Patrick of Clean Food Dirty Girl
    Ingredients
    1 onion chopped
    4 garlic cloves minced
    1 red pepper diced
    1 can black beans drained and rinsed well
    1 can white beans drained and rinsed well
    1 teaspoon coriander powder 4g
    1 teaspoon cumin powder 4g
    1 teaspoon chili powder 4g
    1 teaspoon red chili flakes
    1/2 teaspoon sea salt
    1/4 cup brown rice flour 35g
    Garlic Paprika Burger Sauce
    1/4 cup raw cashews 30g, soaked in water for at least 10 minutes
    1/4 cup tahini 60g
    1 garlic clove grated
    1/2 teaspoon pure maple syrup none of that cheapy stuff, k?
    1/2 teaspoon rice vinegar
    1/2 teaspoon smoked paprika
    1/2 teaspoon sea salt
    1/2 cup water 120ml
    Instructions
    Pre-heat the oven to 350°f (175°c).
    Heat a pan over medium heat for about a minute and then add the onions. Cook the onions for 3 minutes, stirring intermittently. Add 1 tablespoon of water if they start to stick. Add more if necessary.
    Add the garlic and red peppers and cook for an additional 4 minutes, stirring frequently, adding a little water if things start to stick.
    Add the beans, coriander powder, cumin powder, chili powder, red chili flakes and sea salt. Stir and cook for 2 more minutes.
    Turn off the heat and transfer the mixture to a large mixing bowl. With a potato masher, mash the mixture just until the beans are mashed (they don’t have to be mashed all the way).
    Add the rice flour and stir until everything is incorporated.
    Shape into 6 equal patties and place on a parchment covered baking sheet.
    Place in the oven and bake for 20 minutes on one side, flip, and bake for 20 minutes on the other side.
    Make the Garlic Paprika Burger Sauce
    Drain the cashews and place them in a blender along with the tahini, garlic, maple syrup, rice vinegar, paprika, sea salt and water.
    Blend on high until completely smooth, about 2 minutes.
    Assemble Your Burger
    Place a burger patty on a toasted bun or a pile of greens and top with your favorite toppings and plenty of paprika burger sauce.

    I know the Molly site is full of swearing and vulgar language, but I love the way her recipes turn out. I'm happy to be the filter for y'all if you'd like to avoid the cursing and still try the recipes.

    I made 2 hats in the last 2 days. The one with the berries I'm calling "Purl Jam" it is reversible but I don't have a pic of the knit side.

    I'm known to do a fair bit of swearing myself Carla so no worries lol. Love <3 the hats!!!

    I am heading back to the office today. Hopefully my boss won't show up. I have quite a few projects backed up, too busy with the day to day to carve out 2 or 3 hours for each of these more complicated matters. I'm going to set a goal of getting to one per day this week though, and hope to knock one or two out today. I need my boss to go on vacation again.

    Finally got to my food prep last night. I have baked russet and garnet sweet potatoes, steamed broccoli and asparagus, sauteed chard with onions and garlic, steamed some kale too, and added some of that to the skillet with the chard. Last night's dinner was a pita pizza again.

    I fell into a bag of peanut butter filled pretzels at the office today. I hope to undo the damage by eating a big pile of greens for dinner, skipping any additional starches, but the fat oh my. It was the last of the bag so no more temptation. Other than that a good day diet-wise. Usual greens, beans, oatmeal, fruit.
