Played with fat head crust a bit.

I found if I substitute the cream cheese with butter and parmesan (2 tbls of each heated together stove top). Beat whole egg, add mozzarella cold, then add in butter and parmesan mix, then stir in almond flour (kept adding more mozzarella until I got dough consistency that I could work with).

It comes out more stable, I over cooked both on purpose trying to get crispy crust. The butter substitutes turned out crispier and more bread like, held all my toppings. Tasted more like real pizza crust (better than regular crust).

I use this "bread" to make mini pizza's and also as any kind of bun bread. Use it for breakfast "Mc Muffin" type sandwiches with egg, ham, cheese and also great for hamburger buns because they hold up very well to a big burger patty and all the fixings.
