That looks fabulous emmapatters. That combination of spices sounds wonderful and very healthy! I also prefer chicken thighs most of the time.

So many to choose from. This is an old family recipe.

    CHICKEN CACCIATORE

    INGREDIENTS:
    1 jar marinara sauce
    6-8 chicken thighs; boneless, skinless
1 lb. potatoes, chopped (3-5 medium potatoes)
    2-3 carrots, sliced
    1 onion, chopped
1 pkg fresh mushrooms, sliced (optional)
    ½ lb. rigatoni pasta

    DIRECTIONS:

Combine all ingredients except pasta in large sauce pan and cook on medium then low until chicken is tender, approximately 45 minutes to an hour.
While sauce is cooking, cook rigatoni according to package directions. Drain.
Add pasta to sauce and serve.

Put a package of boneless skinless chicken breasts in the crock pot....add some garlic cloves and a couple T of diced onions, salt and pepper...put water in it to barely cover chicken......about 5 or 6 hours after cooking on high, remove chicken and shred with a fork....pour out juices or save to make your own broth....discard garlic and onion....return shredded chicken to crock pot and add your favorite bbq sauce, salsa or pasta sauce...set pot on low for another hour....presto....dinner is ready with the addition of a bun, tortillas, rice or pasta.........add a salad and enjoy!

Put a whole chicken in the oven for about an hour, fill it with lemon bites and rosemary leaves inside. So good and tender.
