Good morning gang.
Hope all is well with you!
Yesterday went well. Stuck to my Keto WOE all day and went to the gym after work. Had a nice walk on the treadmill. Have some sore calves today. LOL Same planned for today.

Instead of the seasonings on top I just kept 2 plain (for sugar free jam) and the other 2 I mixed in cinnamon then after baking... split in half, buttered and smeared with cream cheese!! Not bad!! I had a bite to taste but he finished almost 2 of them.... although he always seems to comment on almond flour!!! I may have been more impressed than him but a pretty good little non egg breakfast! ** (another good recipie site). These are excellent right out of the oven!! I made them Sunday for daughters bday dinner! It calls for 1tsp salt and next time I’ll do a tad less.... the salt is needed flavor but a few grains less for my fam! (I sprinkled with more psyllium husk on top)
Not sure if I’m fasting at all this week... lots going on and I just want to rest, this change in weather gets me tired for some reason... happens every fall!

First let me say, I get creeped out every time @KateNkognito mentions lurking when I'm actually lurking... <shivers>
Yes, I'm a lurker, sorry...many times I really don't feel I have anything to add, but I'll try to post more (for real this time); I should at least do more than just clicking the icons at the bottom of the posts.
Congrats everyone on at least maintaining and to @Meghan509 especially for opening up a serious can of low-carb whoop-*kitten* on her life. I say "life" because doing keto along with the lost weight can improve so many aspects of one's day to day.
Finally, about 2 weeks ago, my wife and I started keto. Hmm, well...I started keto and my wife is doing her version. I think she sees this as temporary and I keep emphasizing that it is a new way of life and that she needs to throw out the old thinking...it's bogging her down. In addition: scale movement shouldn't be the primary emphasis, especially in the first few weeks as your body adapts. Plus, don't starve yourself (at least not in the beginning) because you are feeling motivated..the whole idea is to not feel like you're missing anything, to not be left wanting. ...And, Bloody Marys wouldn't be my first choice for a keto cocktail...And, don't choose fried oysters when you have a full menu of boiled seafood items...and... lol, well you can guess how all "that" has gone over. She has a contrarian reaction to everything I say anyway, soooo...no divorce papers have been signed as of yet. But seriously, we've settled into some hybrid lifestyle where I cook keto and she eats it (for the most part) and vows not to bring any more carb laden foods within 50 feet of my person. I can work with that. Our son (the anointed one) pointed out to her (as I did, but she just can't recall the half dozen times I've said it) that if she eats keto at home and her "special" way while away, then things aren't going to go very well. Hmmm...I better stop here (man I could write a novel about this stuff), she may join this group one day; the horror...my sanctum infiltrated by the woman who knows all my secrets!
I'm currently in the middle of a 44-ish hour long fast on about 850 calories. I may try another by week's end.
On the "stats" side of things. I'm down about 10 lbs even though I practically drowned everyone in a keto gumbo last week. Smoked brisket is our goto this week. I'm pulling out all the stops; showing my significant other how great this WOE can be. Aww man, and the the batch of Low Carb Chocolate Pecan Toffee Shortbread I made...decadent with a great fat to protein ratio to boot.
@mamainthekitchen I'm going to try that bread recipe (thank you)...I haven't found one that I truly like. I like yeast breads, so I tried this one; nice rise and good bready feel, but the taste is a little strong for me.
I need to stop coming in here and writing these huge posts....way too much for a Tuesday. Forgive me fellow 5:2ers...you just bring out the linguist in me.

Speaking of low carb or Keto friendly bread - I am told there is a new low carb bread offered at Aldi Stores. I don't have one of those stores that close by to me and the bread might not be offered at every single store but either way supposed to be pretty good! Next time I am by Aldi I will check it out and report back on findings.

Good for you, @orlcam with getting back on Keto and congrats on the loss! And too funny about your dear wife and her "version" of Keto. LOLOL I get it. It is hard when you are a couple doing Keto or any WOE together but your other half is not fully on board or committed. I am lucky that my guy is really good about Keto and following macros. He will log on and look at my macros and make a comment or two if I am low on something.
Thanks are good here. Went to the gym on Monday and Tuesday nights so far. Bought some new stuff last night at Costco (helloooo more avocados)! And planning to hit the gym tonight too. I find I sleep really well after a trip to the gym. I also take magnesium citrate and that helps too. Anyone on Keto should make sure they get enough magnesium, potassium, fiber, and salt in their WOE. These help keep "Keto Flu" and leg cramps and stuff at bay.

Happy Thursday!! One more day and then TGIF!
Things are good here. Ate clean all day yesterday and went to the gym after work. Liking the newer treadmills they have. Gives a pretty good work out. I walk at a fast pace for around 45 minutes and at an incline of around 3-5% grade. Been feeling pretty good health wise, less hip pain. Low back pain meh. Still bothers me sometimes. Tonight I have my biweekly Physical Therapy appointment after work.
I tried on some of my work pants and my size 12's are not quite ready for prime time. Hellooo Muffin Top. But, my size 14's are fine and so are the stretchy pants I have. Going to take a look through the whole closet this weekend to see what I can wear for cooler weather, until the 12's are good to go. Slowly getting there.

I have back and knee pains...the back is worse, but I'm hoping once I shed 30% (goal of 50%) of my body weight, that'll change. Yep, I've got a long road ahead. One step closer each day.
Almost pulled off back to back fasts...only made it to about 32 hours on the 2nd. Still may try another. Since I've been eating within small windows (1 to 6 hours), it means any day can turn into a full fast if I'm feeling up to it.
Been doing some cooking with lupin flour. I've used it in a couple chicken/cheese pizza crusts, but I need to try it in a bread recipe before I give it a thumbs up on taste. Going to try and make some lasagna noodles w/it later on. Don't know if it's a placebo effect (because I researched it before I tried it), but it does appear to have high satiating properties...I feel fuller quicker.
Also tried the hearts of palm noodles last night. I like the taste a lot better than shirataki, but I'd have to say it's not worth the $. You can probably buy hearts of palm and pass it through a mandoline for less than half the price. Zuchini through a spiral slicer then sauteed is better and cheaper but a little higher in carbs. If this lupin pasta works out, it'll be only 6 net carbs for more than a pound.

Good morning all!
I weighed in this morning and I am up a half a pound. Probably just a little water weight, not stressing! Still feeling good. Ate clean all week and went to the gym Monday through Wednesday. Last night's PT went well. I do feel a little sore so muscles could be retaining water.
@orlcam thanks for your kind words! I just want to be back closer to where I was by Christmas time, when I travel to see a lot of family who I haven't seen in a year sigh... Congrats on your fasts! Way to go!
Ooh I love all the cool things you are making for Keto! I have some Rao's Marinara at home. Thinking of throwing it on some Zoodles with some turkey sausages or something. I LOVE pasta and pizza, but can't say I am totally missing it at the moment, which is a pleasant surprise.
We are heading out to dinner with friends on Saturday night. I went with a place with lots of keto friendly food i.e., wings, burgers, salads, sandwiches (hold the bread), etc. Our friend is like, "why don't you guys come back to our place afterwards and we can hang out for a bit and have dessert". I said we will pass on the dessert, but if you have some decaf coffee and half and half, that works. She's like, "I will pick up the healthiest dessert I can find, and then you guys can decide if you want it or pass on it". I giggled to myself, because what exactly is healthy? Can be interpreted differently based on how and what you eat!

I haven't come up with any bread/pasta/pizza crust recipes that I am 100% satisfied with. My old palate's still fighting for survival. I'm going to get there eventually...somehow...what else am I going to do with this small fortune of low-carb flours and powders?!
I made a yeast bread yesterday that tastes close to sourdough...by accident. I think it's a combination of the oat fiber and lupin flour that's giving it that sharp tinge. I need it to rise more, so I think I may risk adding a little more honey and maybe double the yeast...perhaps doubling the egg and/or cider vinegar could work too.
Desserts: exactly..."fat bombs" don't really conjure up healthy thoughts to the uninitiated. If you like pralines try this. I plan on making a batch this weekend...recipe looks easy, 1 carb each and 15 to 1 on the fat/protein ratio...nice. My wife has a craving for cherries (ouch on the carbs), so I'm working on a chocolate covered cherry recipe that uses 1/2 a cherry per along with some almond extract to enhance the flavor profile.
I did the pasta last night in a lasagna. The noodles are made w/psyllium husk and lupin flour and had a slight aftertaste, but they held together well when boiled and that earthy flavor was lost in the lasagna. I need to roll them thinner next time...I only had enough for 1 layer (for 2 pans); I used sliced zucchini for a 2nd layer. As a whole it's almost too good...I could have sat there and kept on eating...lupin satiety be damned.

Morning, y'all! It is ridiculously early to be up on a Saturday, but I am freaking out about my big teacher licensing project that is due one month from now. So, I decided to get up and get to work. The heat and humidity finally broke here in the Midwest. Much cooler today. It is supposed to rain all weekend.
@orlcam You crack me up! I kind of want your wife to join the group just so I can meet the woman that married you! I know you can do this! I love to bake, but I hate to cook. I need you to come move in next door to me.
@meghan509 I hope you have a great weekend! Glad your hip is feeling better! I know exactly what you mean about seeing people at Christmas. I would love to be down 10 more pounds by then.

I’ve never heard of lupin flour but am loving psyllium husk! Added a tblsp to a peanut butter cookie recipie to change that almond flour texture for the son... it helped.
I tried making hot dog buns for my gluten free daughter (she’s camping this weekend) out of that bun dough I mentioned earlier and they all deflated on me!! Not sure what the heck happened... water too hot??? will try again.
Meghan I’m dying to know what your friend will serve for dessert tonight! It’s tough being those people who don’t understand!! My mother is one of them!
For pizza crust, I liked the almond flour one better than the fat head or cauliflower crust one! But you kinda just gotta try them all!
Kate, that project sounds daunting! I’m confident you’ll do well in getting a head start!!
Well people, I’ve had a very lazy week and now all my chores have piled up.,, I don’t know what’s worse, running yourself ragged trying to do all things or leaving everything to be overwhelmed... exhausted either way!! In my next life I’m having a gardener named Brad, and housekeeper named Nick and and handyman named (k who cares what his name will be I just want a handyman!!)

Weighed in for the week this morning. Basically the same as last week. I didn't fast at all last week, so I am happy that I maintained. So far, today is a fast day. Hoping I can pull it off, then go again mid-week and maybe get another one in at the end of the week. I think I need a jump-start again.
@mamainthekitchen I joke with my best friend that we are going to run off to Mexico, no kids, no husbands, pets are allowed because we are going to have a pool boy named Juan to do our bidding!
I already started laundry and made the children do their chores. I need to run some errands this afternoon and then put in some work on my project. Pray for me, people!

@mamainthekitchen Could be...I've used hot water before but not boiling. I think it is to penetrate the psyllium husk. I just received some inulin (0.2 net carbs per teaspoon). Inulin is a low carb option for feeding yeast. I may try that "sour dough" bread recipe again today but as buns...I'm really craving a loaded cheeseburger; bacon, caramelized mushrooms & onions, sharp cheddar...yum.
So my wife thought the pasta in the lasagna tasted like gnocchi (potato pasta)...which she really likes. She spent 5 years in Italy, she should know. I think I'm going to try it with another egg and bake them vs boiling.
I liked the chicken crust, but I think I'm going to add yeast, inulin, and some lupin flour next time.2 -

We had a nice (busy) weekend. Had a nice dinner with friends on Saturday night at a local pub. Got to love pub fare! My guy and I were able to stick to Keto Friendly food and bev that night. We shared some wings, and each got burgers without a bun and with a side salad. Any alcohol consumed was vodka with club soda.
Yesterday we watched some Sunday afternoon football and got out afterwards to run some errands and get some fresh air. Beautiful weather here! Calendar says it is fall but sunny and upper 70's / low 80's scheduled for the week. So, I am still wearing summer dresses with sweaters to work, which allows more time for my work pants to fit.
@KateNkognito don't stress about school. You can do it! Hope next week shows a loss for you!
@mamainthekitchen we went back to our friend's house after dinner and the "healthy" dessert she came up with was chocolate hummus with apple slices LOL. Sounds awesome, but definitely not Keto Friendly so we thanked her and said a decaf coffee with no sugar works fine!
Planning to get to the gym each day this week after work and will stick to my Keto WOE. Made two new recipes this week that we are looking forward to.

Sunny and warm here. Enjoying it while we can! Tomorrow I am doing a volunteer event during the day. We are doing a little outdoor clean up and light landscaping for a local shelter that we support. Looking forward to it! I ordered myself a Greek Salad for lunch for tomorrow, since it is during lunch. A lot of people ordered the same thing for them. LOL
Had a good day yesterday. Hit the gym after work an walked on the treadmill. Same scheduled for today.

Hope all is good in your neck of the woods.
Our volunteer event went really well yesterday. We had beautiful weather. I helped clean up some loose trash that was around and also raked some leaves, and did a general out door clean up. This facility is a shelter that provides housing for people who are HIV positive, those who have mental health issues, and those who are trying to get back on their feet and / or survive in an expensive area while making a low wage. Some have children and some do not.
These people are out during the day from 9am to 5pm for work and school or they are to be looking for employment. My employer has donated to this facility in different ways. We've also cooked dinners and helped out where we can.
After we finished helping out yesterday I had a Greek Salad with grilled chicken for lunch.Too tired to hit the gym after work, but that's cool. I am planning to head there tonight. My back is a little sore from helping out yesterday but I'll survive. Feels nice to give back a little!

Fast ended up holding yesterday. I have to say, I am a big fan of Taco Bell's shredded chicken mini quesadillas. Very filling, really tasty, low calorie (200) and for something with a tortilla, they are fairly low carb (15 g). I was able to eat on the fly and stick with my fast.
@Meghan509 That sounds like a really good place to help out. It is nice that your employer does that.
By the way, my job may make me fat, tired, and crazy, but kids are hysterical and wonderful and I wouldn't trade my job for anything!0 -
Hi everyone!!! Sorry for a little MIA.... so busy one moment then just not on the computer or checking my phone like I’ve been doing, so anyway glad to read all about your company volunteer day Meghan... how fantastic!! We have beach cleanups here but I’ve not heard of company volunteer day!
Orlcam, I can’t remember if I’ve responded yet or perhaps I did in my head (which happens)... but what I think I did wrong to deflate my buns... ok that sounds funny... but I opened the oven!! Recipe states to bake on bottom rack, & after 10 mins , realizing I’ve not done that, I’ve opened the oven to switch pan to bottom rack!! Next time... note to self....do not open oven!!!!
I’ve been having a pretty good fast day 2 times already this week! But I still don’t feel like exercising!! In a funk on that dept!!

I am down 1.6 lbs this week! Last week I had gained a little but I have since lost that, plus a little more. Next week should be two months on Keto. BF already reminded me that we will be measuring again.
Had a good day yesterday and went to the gym after work. Have to say I am really enjoying avocados! Half of one sliced up and placed in my lunch salad = YUMMY! We get that at Costco, where they are a tad cheaper then buying them at the regular super market. Seem to be good quality too.

@mamainthekitchen Glad your week is going well! I hear you about the exercising. I am dragging my rear end lately too. Having my guy wanting to go and supporting me helps. He is very committed and went without me on Wednesday when I was too tired.

@mamainthekitchen I salute you on that. Not many people still take the time to sit and read. I should start again...been a while.
No fasts this week unfortunately.
On the buns, I looked at that link you (mama) sent and another website that had high ratings on their keto bread and made up a recipe which I liked...it rose by more than double what my last 2 loafs did and it was sticky yet pliable which formed some good buns. I ordered this yeast and this inulin...I premixed them w/water and the yeast action went crazy. I poured it directly into the bread machine as I started it (dough only setting). I think it will rise even more if I do it normally. I did 2 hamburger buns and a large one for a muffuletta. The whole batch only has 6 net carbs (81g tot carbs, 75g fiber). It was pretty good; I've got some tweaking to do, but I can definitely live with this recipe. I don't need my bread to be the highlight of the meal, I just want it's texture and flavor to not interfere/compete with the rest of the food. I should have taken a picture of the finished muffuletta...my wife and I were really craving that; we finished it in one sitting. If I keep some of these buns around (frozen even,) it means Wendy's is back on the menu, lol. We love their burgers along with the chili sauce (only 1 gram carbs per packet). I think I'm at that phase right now (again) where I'm trying to match all of my favorite foods from "before". It becomes less and less important as you fat adapt and your taste buds begin to enjoy the healthier choices.

@orlcam Nice to see you! I have phases where I want the "before" foods, too. Sometimes I want to eat ice cream and pizza and all the things. The next day I remember why I don't do that anymore.Glad you found a good recipe!

Weighed in this morning and I am down 1.5 lbs for the week! That is almost 8 since my highest at the beginning of the school year.
My goal is 10 by the end of the first 9 weeks, which is Oct. 11. Looks like I will definitely make that!
I didn't get a third fast in yesterday, my kids went to get breakfast and brought me some back. Such nice children!
I just realized that it is almost the end of September!! Where did this month go!? October is going to be super busy, too.

Hey people...
Nothing eaten today...shooting to extend it till dinner tomorrow night. Had keto brownies and keto avocado mint chip ice cream this weekend; good stuff. Went out last night and over on the carb count...I feel it today.
