Hi Magic! All your meals sound so great. I was at the market last night and grabbed a big bag of fresh brussels sprouts which I plan to roast tonight. Yum yum.
I am off to visit a friend in the hospital. Still facing down the end of year crazy/busy at work and scrambling to get things done.

Thank you @Mihani ...I am doing really well staying away from Dave's Killer Bread and the Gardein Burgers. Don Lee Farms is coming out with new products...but they do make a great little Veggie Bite that is totally vegan and GF...and works well in the air fryer. It's just hard to find their stuff. Costco does carry their products, but not all Costco's carry everyone. Anyway, here's what is going on today:

Hope you were careful at the hospital...so many germs. I am trying to get as many anti oxidants and vitamin C foods into my menu.
I hope your work is not killing you this particular end of the year...now that you do have some help.

Magic, I hate going to hospitals and doctor offices! The nice thing is the hospitals have the purell dispensers everywhere so I am careful to wash my hands and/or use purell, avoid touching my face, etc. But yeah I walk in there thinking "germs germs germs" Lol
I don't think I'm doing any cooking this year. I have a busy few days of work, will take Thanksgiving Day off, then working Friday and all weekend. Too much to do at the office to fuss over cooking. We always have far too much food anyway. I'm excited about Thanksgiving though. It's my favorite holiday, all about family time, good food, wine.

Dinner at my sister's...niece and her family are here for TG...niece is preparing a plant based diinner! My niece is even making a main plant based entree for Thanksgiving ... I am bringing a few sides...and they will be having a traditional dinner...but this is the kind of love and support I have gotten from my family.So grateful!

@Mihani ...my first vegan TG. I was going to make Lauren Toyota's roast thing that I posted...just did not get to it...and with my knee situation two weeks ago, I got behind on everything. But I am making sweet potatoes ... her recipe she uses for the "roast"...and I make a cranberry conserve by Inna Garten.
I work Friday, so it will NOT be a late-night TG at my sister's. But I get to see my 5-month-old great niece...she is so adorable and FUN...excited about that.

I am still swamped with work, and running to the hospital every day, and taking care of some other things for my friend who is in the hospital, and I'm tired. Didn't sleep well last night at all. I'm going to bed super early.

What a good friend you are to help out...that is not easy to do with all your other commitments.
I had a lovely time last night...my niece made an arugula salad with farro and roasted beets...excellent. My beautiful little great-niece was a bit fussy...she is so tired and will not nap. Poor little one.
Today, I am going to Sprouts early to get my supplies to make my sides. I go back over to my sister's today to visit. And then tomorrow, I will stay home. And back to their house on TG.
Trying to figure out my menu for today...back later to post.

We have a pet bird, and this meme made me think of him. Every morning, as soon as he thinks you are awake, he starts making excited noises. It's super great.
Anyway -- good morning! Sorry to have been missing! I had a post I wrote day before yesterday, but it seems not to have shown up. I don't know if I got interrupted or if MFP had a technology moment. I have been MIA here longer than I thought.

I am so sorry for your great niece's mama, whose baby doesn't want to sleep. I think that's hardest on the parents! I was a kid who did not want to sleep. I never, ever wanted to miss out on the fun, so my mom was super amused when I had a baby who had to be coaxed to sleep.
@Mihani - You sound so very busy! I am wishing you peace in the midst of all there is that you are busy doing. Your friend in the hospital is so lucky to have your presence and support.
What's up here?
I am busy getting ready to host Thanksgiving. So I am about to sit down and make my to-do list. We checked in with my in-laws last night, and they are coming for lunch on Thursday. We invited them to stay the night, and they decided they wanted to go back home because my father-in-law is all excited about getting to go back to the gym on Friday! So cool!
My husband, who wanted a project, is taking a vacation day and working on repainting the walls in our dining room today. Right now, that involves scrubbing walks with TSP and a scrub brush. We are a pretty thrifty household, but it was time to to paint (current paint is many years old), and this is a good excuse.
My plan for today:
- Breakfast (about to go eat at last): a standard Austin green smoothie (greens, broccoli, berries), plus some golden berries and almond butter
- Lunch: steamed greens, bowl of squash and tomatoes and onion, bowl of black beans and mushrooms, some diced apple and maybe some steamed squash
- Snack: apple slices + smidge of pb or almond butter
- Dinner: Big salad (I have a new batch of roasted beets - yay!)
I am so busy with all the work for the standard Thanksgiving meal for the family I am thinking I will make one holiday-ish ETL side and have the rest of lunch be usual stuff.

And btw, I love the story about your bird...I really would love one. Making noise and keeping the house lively. I need to think about that.

Oh, I forgot to say, I am going to make up my bean tostada mixture in my Hot Logic today to see how it works ... I will be using it at work, at my desk. I am totally jazzed.This is so much better than using a microwave...and actually, the darn thing does cook. You have to check it out yourselves...it is quite extraordinary. NO EXCUSES to not have healthy meals on the go...they have a car adapter! WHAT?

I've seen those food warmer things Magic, glad it's working out for you.
Had a nice time with family. A little wine, some mashed potatoes and stuffing (my family is kind enough to provide vegan versions), veggies. Lots of laughs. Office tomorrow, but nobody else is coming in so hopefully I can do some catching up.

I had a lovely, busy day cooking for family yesterday. Cooking highlights were an apple pie (I used a stencil pattern like this on top) and pumpkin pie that my husband and son say was the best pumpkin pie they have ever had (my son actually said best pie ever, period!). It was a gluten-free crust with pumpkin pie spices, a thin pecan praline layer, and then a not-too-sweet layer of pumpkin custard. Making pies was very good fun, in a crafty kind of way. For myself, I stuck with my usual foods. After I got done with all the dishes for the visiting family, I did not have the energy to do another menu for myself.
Today I did a fair amount of work and post-even cleanup. Phew!
Okay, off now to do a bit of platform stepping before bed. I am dying to get in some exercise today!0 -
Good morning, ETL friends!
Is everyone recovering from the holiday? I got in my exercise last night, soaked in the bathtub afterwards, slept well, and woke up feeling like a new person. There is still a bit of cleaning to do, but I am getting close to done!
Magic, are you still having fun with your new Hot Logic gadget? They sound like they are really handy for you, which is great! I hope the tostadas came out well!
Our dining room painting project has been completed. In case you like that kind of thing, we used these colors on the main wall, trim and accent section under a chair rail. Now we will work on the living room!
I picked up some Brussels sprouts at the store yesterday, and may have those with dinner. I am also cooking up a pot of garbanzo beans. After that, it's time to pick out a new ETL recipe or two!1 -

Hi all, sorry I've been scarce it has been a really stressful couple weeks between work and dealing with my friend in the hospital. She's being moved to a nursing facility tomorrow for hospice care.
