Last night we had leftover curry. It was so filling. There is still at least a serving left too, which will be all mine, since husband doesn't do leftovers.
Today, I'm making ceviche for dinner. I've been craving it lately, and it just sounds so refreshing and perfect for the heat. We have some ripe avocados to use too, and I'll probably cook up some beans to have on the side. Now, to figure out breakfast and lunch.
I bought a meat replacement I haven't tried before - Quorn (I got the crumbles and the meatballs). I know I've seen that mentioned here... @lauriekallis , was that you? Would love tips/recipes from anyone who has used it!3 -
@eliezalot - no/maybe? - I haven't tried Quorn - lol, didn't know what that was until just now - it is just a UK brand! - and don't tend to use meat replacements if I'm actually cooking. I will go for a veggie sausage or veggie meatballs when I'm feeling kinda lazy and don't want to bother with cooking a protein - or feeding a non-vegetarian who would look at beans like some type of alien food. But, I've actually kinda grown to like them, though they feel really processed and not necessarily the healthiest. On good days I would use lentils or beans for protein, so like to keep a good stock of frozen single serve dishes in the freezer because they can be a bit time consuming to prepare - yet easy to make a big batch.
Soups - various kinds of daals - and my favourite "Spicy cabbage with red beans and peas" are my standards.
If that last one sounds like something you'd be interested in - I'll try writing a recipe to give you an idea of what goes into it. It has become one of my favourite freezer dishes, has all the nutrition and thaws really quickly in a pan with a lid because the cabbage keeps it sort of loose.4 -

Haha, I guess it was someone else posting about Quorn - I suppose I can go back and look, but I'm truly lazy today. Turns out Quorn is pretty good! I like that it is faster to fix up than tofu too.
I'm not super big on meat replacements for the sake of replacing meat, but I do just like them for what they are (MorningStar veggie chicken nuggets are waaay better than actual chicken nuggets). But with this whole eating even less meat thing, I started to worry about my protein intake (which is really what fills me up), especially with the new dearth of eggs in my diet. When I was (mostly) vegetarian back in college, I didn't really pay attention to my protein or macros or anything else, so never really knew how my nutrition was. I clearly do now!
We usually eat beans or lentils once a week or so, but this last week, have been having them much more frequently. And I'm actually amazed that it is EASIER to hit my protein goals than when I was trying to fit in more servings of meat! WHO KNEW?!?!?
And I'd love recipe! Sounds like something my husband would love too!3 -
I had refried Old El Paso black beans on tostados last night and they were so good….
Laurie, you and PAV would be so proud of me!…I bought some frozen Green Giant Zuchinni spirals and I MIGHT try spaghetti sauce on them for dinner soon….I think I might like them better with some garlic and onion and a little butter on them!2 -
@eliezalot please note that in terms of cholesterol it is the egg yolks that have it all. Egg whites are very high in protein, low fat, a complete protein, and when cooked and in relatively not insane quantities, the impact on biotin absorbency is minor. So... don't write them off totally
@lauriekallis ... I admit to not eating too many beans because... well... the next day... and then again I've found them relatively MANY calories for their satiation effect (I include chick peas). Green peas on the other hand I go for!
Anyway: I am intrigued by the stuffed cabbage you're proposing!!!3 -
@PAV8888 - I do need to try that. Tossing away yolks from fresh eggs feels so wasteful, and I'm juuuust a little skeptical of eggs that come in a carton Next trip to the grocery though, I'll give them a go!!
I felt just like you - egg whites in a carton????? no thank you. But, wow! They are great! Don't know who is eating all those yolks and cholesterol - but it is their trouble!
I'm making the "Spicy Cabbage with Beans and Peas" soon - I'll pay attention to what I put in there and post it here.
And @PAV8888 - this will leave you super loaded. Cabbage and Beans! For fun you could maybe have a few eggs on the side! Since I've been eating this frequently, and lots of homemade sauerkraut and kimchi, I'm glad I don't have to be on a bus or in enclosed spaces with people these days.3 -
I don’t really like eggs so I can’t imagine that slimy white goo in a carton!…I will eat them scrambled with Heinz ketchup or deviled on occasion if I make them…egg salad is ok, too if I make it…..no fried or poached or omelet…..( shuddering)…..1

Tonight we are having air fried fresh cod fish, wild rice and cauliflower with a big salad….dessert and snack is half of a large fresh baked Amish lemon poppyseed muffin with coffee!2

Hey isn't it almost sleepy time? WAY past tea time, right? What's not exciting about your dinner? And when you say "smoked".... how smoked? Warm? Cold? Lox? Inquiring minds and all that (and also have a pack each of pacific and Scottish smoked salmon slices in the freezer!)3 -

Agree - there is nothing NOT exciting about smoked salmon! So good!3 -
The cod fish was sooooooo good…..I spritzed it with olive oil, seasoned it with smoked paprika, salt, pepper, parsley and a small amount of garlic powder….380 degrees about 15 min. Until my trusty meat thermometer hit 145 degrees….enough left over for lunch tomorrow!3

I do love smoke salmon - the fillets tonight were oak smoked - lightly done! We’re really good from supermarket... usually buy from fish market, but he hadn’t set up stall this week!3 -

I've been loving cod lately. Usually I'm more of a tuna and salmon gal, but baked cod is so nice!
(And since cod is what we had in the freezer, cod is what is in the ceviche tonight!)3 -
Well, I have next week's menu ready, and the list made. I actually have the next six weeks menu made up, and if when I get to the end of it I do it over again, that will get me into September and into weather where heavy pasta and cream sauces sound warm and appealing again. We like Mexican so now we're eating it about three times a week, but it's stuff like a quesadilla on Monday (which is essentially a grilled cheese done on a tortilla), and arroz con pollo (Mexican rice with grilled chicken covered in cheese sauce) on Wednesday night, and then beef hardshell tacos on Friday night. So it's different sorts of food, just the same cuisine.
I need to make a precooking list so that I can figure out what to do when, cause I guarantee when I get home from the store, hot and tired, I won't be able to think straight about it.5 -

The meat pan pizza, in your case without the meat toppings looks interesting and I bought an eggplant to try the French toast! MAYBE! 🤷🏻♂️😇1 -

The cholesterol in food has little impact on blood serum levels for the majority of the population. They have 1.6 grams of saturated fat per egg so not too bad. Plus, the yolk is where all the vitamins and minerals are, along with some of the protein. I actually have improved my health markers in the past eating eggs because they helped me lose weight. They are filling to me for quite a low amount of calories.
Now, sometimes I will use egg whites if I am wanting to bulk up an egg dish for less calories then more whole eggs. So for scrambles, omelets, or loaded hashbrowns. I do make sure the cartons I buy are egg whites only... some places add stuff to theirs (like Aldi).

Yeah, I wasn't expecting the egg thing. I miss my daily breakfast egg, they have absolutely been important to my weight loss. So filling! But, I'm willing to give it a try for a while - I can still have about 1-2 full eggs per week anyway, I'm just bitter about losing my favorite breakfast. I'm hoping sustained weight loss can get my cholesterol even lower, though I've had lower cholesterol even at higher weights.
Once I get to a sustained, healthier weight, I'm interested to see how much of an effect that will have on my LDL (at least eliminate weight as a variable) and then start playing around with different foods to see what my diet will ultimately look like.
Since we want to get this lowered soon, I'm willing to pretty much try everything at once, then start slowly adding things back in and see if it affects it. Maybe my weight will play big role, maybe the extra fiber and exercise will be enough, maybe eggs will be okay again. It is had when there are just so many variables right now!
I did get a recommendation for an RD, who miiight? be covered by my insurance. I'm planing to set up an initial session with them for some advice.

Ya'll. It is hot out, and I'm craving cold treats. I was looking in the ice-cream section at the store the other day, trying to see if anything jumped out at me AND was reasonable in the saturated fats. I found a fudgecicle-like thing made from Greek yogurt that fit the bill. But, I had walked the mile the store and it was about 90 degrees out, so it definitely wasn't going to survive the walk home.

I used honey instead of agave (and less of it), and added a Tbsp of cornstarch to keep it creamy. It is freezing now, but the extra I ate was delicious. In fact, it was so good, I made a second batch using strawberries and vanilla extract instead of chocolate. I'll report back on the frozen results.

Oh my goodness - these will be a godsend! And they can be healthy! and delicious! I've been buying the President's Choice smoothie bars but my local store keeps running out of them. If I make them myself that will not be an issue and I won't have to worry about "stocking up" when I see them - or carrying frozen things in the heat. I'm really excited! Yes!! So many flavor options too! Peanut butter banana, peach and granola, strawberry and coconut water (I'd add some lime too!). I think just endless possibilities. Berry, tropical, chocolate, coffee...3

I freeze leftover coffee in cubes….put cubes in the blender with a cup of skim milk,T of flavored sugar free creamer and a packet of Equal…..turn it on and instant frappe!….I like iced coffee, too…..2

Yummy….tonight we are having baked sweet potatoes, fresh green beans and corn on the cob….fresh Florida sliced tomatoes and turkey kielbasa!….someone ate the other half of my lemon poppyseed muffin so I guess I will eat a Fiber One cookie….3

I hadn't thought of that! I do that just to use as cubes for iced coffee (without watering it down). I'll definitely have to try this!!1
