U - Uche is a South Asian vegetable known as bitter gourd for its mouth-puckering bitter taste. The bitterness increases as the bitter gourd ages in the plants. When they’re young and green, they have fewer seeds and are beautifully incorporated into a fried recipe. And they taste best when they’re unripe and green. The ripe ones contain lots of seeds and have a puckering flavor. Those who know the arts of cooking can reduce the bitterness of uche vegetables. You can make broth of these uche vegetables, but it’s always better to fry these veggies.

W- Wild Blueberries 🫐
I have wonderful memories of walking through my Grandmothers Blueberry 🫐 Patch filling up margarine containers full with fresh blueberries 🫐 My Grandparents owned a Cottage in Northern Ontario. Every summer I spent about a month of my summer holidays with them. We Fished, went Boating, had Picnics on neighbouring Lakes with sandy beaches, Went swimming in the Lake, picked Blueberries, baked pies tarts, bread and fruit and nut loaves, roasted Marshmallows on an open fire…We had great fun together! Summers at my Grandparents cottage was always a highlight for me!
After picking Blueberries we always went back to the Cottage and Spent the rest of the Morning baking Blueberry Tarts and Pies with my Grandma. Such Sweet Memories! ❤️

X - Xoconostle cactus fruit grows at the end of nopales, or cactus paddles, sometimes in clusters of up to a dozen on one paddle. Xoconostle cactus fruit is pear-shaped, tapering to a point. The small fruit is 5 to 7 centimeters long and around 4 to 5 centimeters in diameter. It has a pale green skin with a muddled hue and will attain a pale pink blush once ripe. Xoconostle cactus fruit, like its prickly pear cousin, is covered in clusters of small spines that once removed, leave little circular scars. The flesh of this cactus fruit variety is bright green to a pale peach or pink and has a smooth, juicy texture. The seed cavity of the Xoconostle is centralized, whereas other prickly pear varieties have seeds embedded throughout the flesh. The bright red center of the Xoconostle cactus fruit has a few dozen, small edible seeds that have an appearance similar to the seeds of a passion fruit. The flavor is described as complex with a sour tang and an acidic finish.
