You might be able to blenderize it and put it in a smoothie. Zucchini by it's self is pretty bland so it would need to have some flavor from something else like a fruit.

A - Apricot

Zucchini can be an element in pumpkin pie filling Judith. Roast then seive pumpkin and zuchhini together, then use in place of canned pumpkin. It's like making a vegetable custard!
