    Wow, congrats on your new gadget, Nanc! It looks awesome.

    Still didn't eat anything but bouillon and saltines today but had a slice of toast when I got home (late) from the office. I did have a really simple smoothie this morning. Just spinach, a few cubes of cantaloupe, half a banana, half a scoop of amazing grass, water. So at least I got some more nutrients in me this morning. I'm going to eat some cooked veggies tomorrow night to start back into "real food" since I think I'm pretty well over this.

    very early good morning to y'all...

    good to hear you are on the other side of this illness, Mihani...hope the food does help...taking it slowly is a great idea.

    I ordered the juicer in white so it is back ordered...black is in stock. I am pretty excited about it.

    stopped at work yesterday...it was good to see everyone and they were really happy to see me walk so fluidly, without a limp...I'm looking forward to getting back to work...I think it will help my sleep situation...at least I hope so.

    lunch with my bff yesterday was so nice...catching up is always good...I have mentioned this before...we have been best friends since kindergarten in southern california...it just so happens we ended up 20 minutes from each other in Arizona ...beyond HAPPY and GRATEFUL about that!

    Lulu is fast asleep...I am having my coffee …ugh with NUTPOD creamer...I have a frother/heater and Nutpod works so well in there...my indulgence...what'd ya gonna do. I have one coffee a day and I am going to thoroughly enjoy it. coffeebath.gif

    Hi Nanc, happy you had a great time catching up with your friend and a fun time visiting work.

    I picked up my salad stuff and came home and threw out all the rest from last week, as well as all that lovely food I prepped on Sunday. Only got to enjoy it for one day before I got sick. Darn it! I should have tried freezing at least some of it but didn't think about it.

    B - smoothie same as yesterday but also added two walnut halves
    L - bouillon and saltines throughout the day
    D - I'll try a blended salad tonight

    I haven't had my usual breakfast tea all week either so I figure I'm pretty well adjusted to being off caffeine. I have had a cup of green tea in the afternoon but there's not much caffeine in it. Right now I'm enjoying a cup of chamomile.

    Tomorrow I'll make a pot of pasta and a cauliflower sauce. Might try this one Cauliflower Alfredo Sauce

    Way too early…but I’m just up for now and will go back to sleep.

    I just had to tell you guys that I walked on the treadmill tonight for 12 whole minutes at a level four incline and 2 mph. A slight discomfort in my right knee, not much, but zero pain in my left knee, that’s my new knee, I love my new knee. ❤️ That’s all for now girls… I’ll see you tomorrow …well I’ll see you later this morning …I’m gonna try to go back to sleep now.

    Oh, one more thing we have a farmers market on Saturdays which I never get to go to because I work on Saturdays usually so if I’m up and ready and able to do it I’m gonna try and go to the farmers market…they have a fabulous salsa* fresh salsa that is wonderful and I’d love to get some fat-free sugar-free oil free totally whole food plant-based talk to you later

    * my supervisor gave me a gift of some, one Saturday because she knew that I loved it. She had brought it in for the girls during the week and I raved about it but I can never get it because I work on Saturdays. So one Saturday she went to the farmers market and bought me three containers full oh my gosh what a sweet lady… She’s my supervisor who is retiring at the end of April I’m going to miss her so much.

    Woohoo for the treadmill time, Nanc! Did you make it to the farmer's market?

    I went to the office for about 5 hours today, then the grocery. I'm going to make a soup that I can see in my head and hope it works out well. Saute onion and garlic, add mushrooms and saute a bit more, add cumin, paprika, turmeric, ginger, ground pepper, rosemary and a pinch of cayenne, chopped russet potatoes (with skin), cauliflower, broccoli, carrot, mix it all up for a bit then add veggie broth. Cook it all for a while then add kale to wilt in. Hit it up with the immersion blender and have a creamy, dreamy soup that will be easy on my stomach and chock-full of nutrients.

    Just FYI... this is quite the ugliest soup I have ever made! It's gross looking. LOL

    But, it tastes freaking awesome. I am going to add some lemon juice to what is left and then it should be perfect. Needs that little addition of acidity.

    I did make it to the Farmer's Market and stocked on on their salsas...later I will see if I can give you an idea of the ingredients...

    Nothing much going on...I did make it to the treadmill twice in a row, now. Just 12 minutes...going to keep it that way for a week and add two/three minutes each week.

    Today I will be sure to ride my recumbent bike 12 minutes as well. Both are important.

    baked potato with salsa, light leafy green salad, air fried tofu

    Phew! I was away for a couple of days and am so behind here, in a fun way! I am back after a camping trip with my son's Scout troop. Sleeping outside and getting sun, fresh air and lots of walking was a great reset. I took my own food and ate all fresh fruit, fresh veggies, and cooked beans, which feels like a major victory. Today when I got home, I indulged in 4 dates with almond butter, but have put those away (given them to the teenager, so that they will disappear), so back to eating non calorie-dense foods. I was the cook for the other adults on the trip and it was fun surprising people with a healthier menu than is usual at these things. I cooked ahead of time and made vegan and oil-free cole slaw, pico de gallo (fresh salsa) and "cowboy caviar" (essentially pico de gallo plus black-eyed peas and black beans). So I had leftovers I could eat.

    Now I am working on catching up at home -- laundry and projects.

    Mihani, I hope you are continuing to feel better!

    Nanc, I love all your salsa! And it is so great that your new knee is working so well! I hope you and Lulu are having a nice Sunday afternoon.

    Carla, happy belated birthday!
    Your comment about black cumin -- I just try to find something savory every day to drop it into. I always drop it into my steamed greens now.

    What fun, Austin! Sounds like good times and good food.

    I am home on time for once. Going to work on a few things tonight of course, but it's nice to be home at a reasonable time for dinner and getting the dog fed, etc.

    Still having fun experimenting with blended salads. I added some balsamic, dijon and oregano tonight. Very good. I learned really fast to watch how much radish you put in a blended salad as it gets overpowering. I pack about half the blender with lettuce greens then add other veggies and whatever seasonings hit me in the moment.

    Another busy day but I did get out on time and got my hair cut. Looks so much much better I was past due.

    D - salad lettuce and veggies in a lavash wrap plus more salad (trying an unblended salad tonight hopefully it will be okay), half a baked potato

    Also got my 7500 steps in yesterday and just need 700 to get there today so I'll hit the treadmill for a few tonight.

    oh my! I'm so far behind.

    I love that you are doing so well with your knee, Nanc. Love that everyone at your office is supportive and happy for you.

    Nice job on the TM, Mihani! Whenever I get my steps in for the day, it is because I use the TM on top of my other activities. I haven't worn my fitbit in a week or so...time to put it back on and hold myself accountable.

    A camping trip with healthy food prepared sounds fantastic, Austin. There's such a feeling of victory when pulling something like that off. And it makes such a difference for getting back into routine.

    I have not been doing great with food, but I feel like weight is piling on faster than it normally would. Maybe because I'm heading into menopause. I need to get back to 'the salad is the main dish'

    For whatever reason this is working really well for me and I've lost a couple pounds, and I get to eat potato any time I want. LOL

    I've learned over the past few years that eating fairly plain and simple meals helps me stay on track the best, with no real cravings for those salty snacky treats that always trip me up. I will likely stick with this plan for several more weeks. I'd really like to knock off another 15 to 20 pounds and have made no progress lately.

    B - smoothie, half a small baked potato
    L - leftover soup (which has potato in it)
    D - Shane and Simple oven roasted potatoes (yum!), salad

    Girls, way too early good morning...

    My sleeping is worse than ever, but I think that has to do with the post surgery. Very restless. I am going to therapy right up until I go back to work 4/15. I love the therapy...well, most of the time ... he's used to my yelling at him. LOL

    My new juicer arrives today...couldn't be happier and hoping that some of these juices will help me get better sleep. I really did indulge on this purchase...but it's such a great juicer...the Nama J2! You'll have to check it out on youtube.

    My goal is to be as healthy as possible for next January...right knee replacement. My kitchen is fully stocked with all the latest gadgets to making cooking wfpb easy enough that I have zero excuses.

    My latest love is fresh, thinly sliced, purple cabbage and julienne carrots in my salad...somehow that combo gets things moving quite well.

    Tonight I plan on putting in a batch of homemade vegan yogurt in the insta pot. It does not come out thick like Greek, but it is quite tasty and has only two ingredients...water and soy milk.

    air fried string beans, asparagus, zucchini and for protein, air fried tofu, garden salad

    Hoping tonight I will have fresh juice. Going to see if not eating helps my sleep. Just juice. My sleep app always tells me that when I eat close to bed, my beats per minute is much higher (cuz I am digesting food)...maybe this will help and I can sleep better. Worth a try.

    Someone asked about the pool...only have been in twice. Not good. I did walk 15 min on the treadmill the other day...so happy about that. No pain. 2 mph is all I can handle...have to be careful NOT to mistreat my right knee now...she's the unhappy one...and she has to last until next January. Left knee...she's a CHAMP!

    I can use my little recumbent portable bike in the house...but the recumbent full bike at Therapy puts too much pressure on my right knee. I have to sit so far back that it makes it impossible for me to be comfortable.

    BUT...all this will go away after I get my second new knee. So, everything I do now is to get myself in the best shape possible. I need to lose 25 pounds. STILL!

    Alrighty then, I am going to go into the kitchen and start to tidy up a bit...hopefully, I will get tired and fall back asleep.

    Did not fall back asleep. Went to Sprouts…worked on kitchen clean up…prepped carrots for juice. Will make carrot, orange, ginger, lemon. Then, celery, cukes, spinach, apple, ginger, lemon.

    Now, I am going to try and take a rest. Have just a bit more to tidy up kitchen and then steam mop floor, after nap.

    Mihani, I might try the Mary-mini plan. I've looked before but dismissed it because I think the potatoes would raise my blood sugar too much, but this time a read a little closer and I can have beans in place of potatoes. I need to eat more beans anyway! Too much going on this weekend with a belated bday celebration at our place, but I'll take another look at it next week.

    Company is coming and there's a scramble on around here to get things cleaned up. It is good for getting in my steps! I'm decluttering while I'm at it. Stuff creeps onto surfaces and I just have to go through and thin it every so often.

    Nanc, hope you get some sleep! I'm so proud of you and happy that you are doing so well. You've been a real trooper throughout all this. Enjoy that new juicer!

    Carla, I decided to get on the scale this morning and I am down 5 pounds since Saturday. I have been seriously stuck for a while so this made me extremely happy. I am going to stick with this for a while. I stopped at the store and got some big baking potatoes so I will bake those on Saturday. Also got broccoli, cabbage and onion. Will roast the broccoli and cook up the cabbage with onion and carrot and spices. That, in addition to my salads, will keep me quite happy for another week. The monotony of the food choices is the point from what I understand, and it is working well for me. I have not had a peanut butter pretzel in over 2 weeks!

    I admit I'm a carboholic and eating potatoes for lunch and dinner is NOT a problem for me. I am not doing it 100% because I'm having smoothies for breakfasts, but my smoothies are pretty green and low-cal. I just use a whole lot of baby spinach, half a cup of berries, a small banana, cinnamon, 2 or 3 walnut halves, half a scoop (1/2 serving) of amazing grass, water. The amazing grass isn't the best option of course, but it adds some protein to my morning plus other nutrients, makes my smoothie thicker and tastier, and has little "crap" in it. Just a little stevia leaf. So many of the vegan protein powders have a bunch of less than healthy additives.

    Little sleep last night. High winds which didn't completely terrify the dog like a thunderstorm but still caused a fair amount of trembling from the foot of the bed which got me up at 3:30 this morning. Did a little extra time on the treadmill and got to work early, but I am positively dropping now. I want to go to bed but going to make myself stay up until 8:00.

    All that said, I'm meeting up with friends tomorrow after work and will be having a cocktail or two, but I'll get right back on the wagon Saturday.

    Mornin' All... it has been a rough week and yesterday especially. I was ready for those cocktails last night and had two. Then I drank a couple glasses of wine after I got home, so I'm feeling it this morning. I know better. I don't have the tolerance I had when I was younger.

    Working here at home today and will get laundry and some housework done throughout the day. Going to the office for a bit tomorrow but will mostly be working from home tomorrow as well. Not too much longer until April 15th and then maybe I can take a breath but I'm entering panic time now to make sure everything is finished for this tax season.

    So the total loss for a week on Mary's Mini is 6 pounds. Woot! I am going to do keep doing this for a while. ETL is still my ideal diet, but I seem to be happier and stay satisfied when I have more starches.

    Plan for today...

    L - will make a big skillet of cabbage, carrot, onion, potato that will last a few days
    D - baked potato with roasted broccoli and salsa
