Spring, I think 70 to 80 is a reasonable goal. Here's a post from the NoMeatAthlete website: https://www.nomeatathlete.com/protein-for-athletes/ I really enjoy Matt's matter of fact advice. I plan to try out the Complement protein powder when I run low on what I have.

That soup does look amazing, Nanc. And thanks for the pumpkin oats recipe. I keep forgetting to make it the night before but I will try it soon. Is it eaten cold?

Mihani, Carla: MFP sets my protein at 70 for 1400 calories, that seems about right. I'm going to try to up it a little every week or so just to see how close I can get to 100 without my calories going over. We'll see, I'm not really concerned about it. Mihani, I like that site you linked, I think I'll take a better look around in there.0

YES, down...146.8. I was 154.6 on 8/24. So I am happy I am finally going in the right direction.
Having BLACK coffee, still.
The soup was carrots, celery sauteed a bit...veg stock...I used one of those cubes (I will post a picture) but any veg stock will work...
The second time I made it, I added onion and garlic to the carrots and celery...did not like it as well unless I got all the other measurements off the second time.
The first time, I just threw stuff in and it was perfect. ACK!
So, celery, carrots, veg stock...add bok choy...and lots of sliced mushrooms...then I added some hoisin sauce and a few shakes of low-sodium tamari.
Then after done, chopped up (although some did not get chopped) mint and Thai basil (those two ingredients were major to making it taste like restaurant pho)
Beans sprouts would be great at the end (will try and pick some up today) ...and I did use a squirt of fresh lime.

oats, grape nuts, almond milk, blueberries, cinnamon and flax meal
making more soup as described above
soy yogurt and jam
veggies and air-fried potatoes that were first steamed in the instant pot

That queso recipe sounds delicious! I definitely will try that. I've been experimenting with cashew cheese recipes. I put mini sweet peppers in one I made the other night. It was delicious!
What kind of dogs do you have? I live with my husband - Brian, daughter Isabella (7), and our animals. A cat, dog (collie), bird (cockatiel), rabbit, and turtle (Malaysian box turtle). Our dog is our newest addition. She belonged to my mom and took her in when my mom passed away. I was really worried about her because she was an extremely timid dog. We have been working with her consistently and now is a different dog.
Oh my goodness, what a surprise to find the bat. I don't know how I would have reacted! I probably would have been a bit startled by finding that.

The oil free helps a lot with diabetes management. I do struggle with it when we go out to eat or to an event. I often find there is not much for me to eat that is compliant. In those cases I just do the best I can. The longer I am on this journey I am discovering that my taste is completely changing. Foods I used to find delicious are not as appealing to me anymore.
I average around 60g of protein. A while ago I tried increasing my protein and made smoothies with protein powder. With that I was able to get my protein between 80-90 a day. When I restarted my journey, following my health scare, I bought a vegan protein powder. I did not like it at all. All my blood work has been in normal range so I don't worry about my protein intake. When I was pregnant I had gestational diabetes and saw a nutritionist. She pushed the high protein/ low carb diet too. That kind of diet didn't work for my life style. I found I was constantly struggling trying to stay within her ranges. I found it terribly restricting and made me miserable. If you are interested maybe you can find and consult with a plant based nutritionist?

Great job staying the course and getting the scale to respond, Nanc! Thanks for sharing your soup recipe, it sounds right up my alley.
Woohoo on the weight loss this month, Jeannette. I agree about the protein "problem" and never worried much about it, but since I started strength training again I've been trying to up it at least on days when I do a hard workout. I eat a lot of lentils which are a great source of protein. I'm a paralegal/office manager at a law office.
Okay back at it here. Working from home and doing laundry today.0 -
it's ok...it wakes me up a bit...just the "yum factor" is missing ...I'll survive
up a pound this morning...go figure.
work potluck today...there will be zip for me...I made vegan pumpkin bread (Trader Joe's and I substituted apple sauce for oil and flax egg for real eggs)...also bringing Kite Hill pumpkin cream cheese spread. I have tasted that ...O M G ...so good.
so...today's menu for me
coffee
homemade soy yogurt with jam and grape nuts (need to make more almond milk for my oatmeal breakfast)
microwave potato and frozen mixed vegs that you steam in the bag
leftover pho
banana or apple or both
