Wednesday
Red: tomato
Orange: orange bell pepper
Yellow: summer squash
Green: Zucchini
Blue: blueberries
White: onion
My rainbow been the same since the beginning of the week, with the addition of blueberries on Tuesday. Lately, I have been making one large veggie dish or do some salad prep, at the beginning of the week, and eat that for the rest of the week. So I don't get much variety throughout the week2 -
Thursday
Red: tomatoes, red bell pepper
Orange: carrots, pumpkin
Yellow: banana
Green: cabbage, kale, broccoli, Brussels sprouts
Blue: blueberries
White: onions, garlic, chickpeas

🟢 Brussels sprouts, avocado, cauliflower leaves

⚪ cauliflower florettes, ginger
For some reason, I thought it was only fruit and veg we were to list but I see now that it was everything. Oh well, a bit late to add now. I have had white fish, tuna, eggs, cheese, bread, pasta, etc. this week 😄

Orange: tangerine
Yellow: cheese, banana
Green: green peppers, cucumbers, lettuce
White: bread, cheese, light mayo, onions
Brown: turkey, shredded steak, bacon, black pepper
Thursday
Red: applesauce
Orange: tangerine
Yellow: cheese, banana
Green: lettuce, cucumbers
White: bread, light mayo
Brown: turkey. corn chips, oatmeal cookies
Ended up having to work late both days...Wednesday, I came home and went straight to bed...taking me a few days to get my strength back after my flu bug on Sunday/Monday. Hope you all had a great day today! Thank goodness tomorrow is Friday! Anyone else ready for the weekend!!! YAY!

Green: Italian seasoning, green beans, peas
Blue/Purple: blueberries, blackberries

Very busy day, but had to stay late for a meeting, then came home, did a little cleaning, updated my spreadsheets and set up the spreadsheet for next week's partners walking challenge...tomorrow gotta run a few errands and might get this mop cut...been putting it off, but it's at that "getting on my nerves" stage, so it's time. We'll see how I feel. Headed to bed now...really tired. Night all...

Not much of a rainbow on Friday. I was saving my calories for a dinner spluge at Little Lebanon (Lamb Shawarma Rice Bowl). Not many fruits and veggies to make the rainbow. Lunch was black bean soup, breakfast was cottage cheese and nuts.
