Breakfast #1:
Bacon, eggs scrambled in the bacon fat with cream cheese and hatch chili salsa with a cup of coffee with heavy cream. Yum!
Breakfast #2:
Crustless herbed quiche - eggs, parsely, thyme, heavy cream, goat cheese
Dinner #1:
Blackened Skirt Steak (smoked paprika, cumin, red pepper flakes, coconut oil) with BLT side salad of spring mix, fresh tomatoes, bacon, and a dijon mustard dressing.
Dinner #2:
Chicken thigh with maple syrup (not so paleo...) with roasted sweet potatoes0 -

I know I had paleo at Dennys at few nights ago, got the chicken and steak skillet, no hashbrowns just broccoli, comes with peppers and onion. I then ordered a side salad I ate the cheese but you don't have to have cheese!! SOOOO simple!0

Dinner was sweet potato hash with bacon, onion, green and red bell pepper topped with eggs

"tandoori" chicken
3/4 cup 2% greek yogurt
1 tbsp garam masala spice
1 tsp ground cumin
1 tsp ground coriander
2 tbsp olive oil
- mix together to form marinate
6 chicken thighs
- add to marinate (upto 6 hours)
There are recipes with more spices but I kept my first attempt simple, plus I only marinated for 1 hour as I started too late in the day and was hungry.
Place the thighs on an oven rack above a cookie sheet and spoon on remaining yogurt mix to coat them.
Cook about 30 minutes at 400
each thigh is 224 calories, 3 carbs, 14 fat and 17 protein
(And my husband liked them)

I keep forgetting to take pics but I remembered today!
Greek salad with salmon. The salad was pre made and I seared and poached the salmon and just added it. Yum!

It's store brand from a small-ish store in the south west called Fresh and Easy. I don't think many states have them, but their store brand stuff is really great - - no fillers or weird chemicals, just meat and spices0 -
