    Candy bites: (I've never posted a picture in a thread before, I hope it works!)

    I found the recipe off Paleo Plan:

    Ingredients: 3 Tbs coconut oil
    1/4 cup carob powder or cocoa (optional)
    1/2 cup ground nuts (almonds, hazelnuts)
    3/4 cup unsweetened shredded coconut
    1 Tbs raw honey (optional, add more to taste)
    parchment paper

    Instructions:
    Melt the honey and coconut oil in a saucepan over medium heat.
    Once combined, add the carob, ground nuts and coconut and mix together.
    Pour mixture onto a small baking sheet covered in parchment paper. Form into a square when cool enough to touch.
    Refrigerate until hardened. Cut into 4 servings.

    I cut it into smaller bite size pieces. YUM!

    Lunch today was mongolian bbq with turkey (wish they gave you more meat but I don't want to pay double haha)
    Edit: no I didn't have one of those egg rolls... They are super delish but so, so bad. My friend ate both and my rice

    bacamacho: could I have the recipe for that? my husband loves carne asada!!

    I cheat and use a bottled marinade! Either Italian dressing, Lawry's or Jack Daniel's mesquite. I marinade the meat, which might be labeled as skirt steak, for at least 3 hours then broil it in a broiler pan in the broiler or BBQ if I have time! Easy peasy!

    I made up the hash recipe as I went :) here's what I did:

    Microwave a small sweet potato (about 3oz for one person). You can pre bake it in the oven too but I'm impatient
    When cooked and slightly cooled, dice the potato in small cubes.
    Meanwhile in a pan over medium, cook diced bacon (I just cut it with my kitchen sissors), 1/4cup sliced onion, and 1/3total of red and green diced bell peppers.
    Once the veggies are a little soft and the bacon has rendered off its fat, toss in the diced sweet potato.
    Cook everything together until the potatoes get slightly crisp on the outside (mine took about 5min)
    Top with eggs and hot sauce if you like

    Huge brunch. I was in a meat mood when I woke up this morning... Probably won't be hungry till dinner. Sausage, bacon, prosciutto and copa cooked in the bacon fat until crisp, eggs, a small avocado and some of the pickled green beans I made. I might have a little piece of mango to wash it all down if I can manage lol

    Went to a local sushi place for dinner and I was excited to find that they had riceless rolls! I found riceless roles at a more "upscale" sushi place but I was surprised to find them in my local strip mall sushi joint. Tuna (ahi and yellowtail), salmon and avocado wrapped in cucumber with a sauce of vinegar and whole grain mustard. SO GOOD!

    I've had bok choy before and always thought it was delicious! But, this was my first time cooking it. The recipe called for baby bok choy (more tender/less cooking time), but all I had was regular bok choy. Thus, it cooks a little longer. I chopped the stems (white portion) separate from the green leaves, and tossed them in to saute first, and once they were tender (3-5 minutes) but still had a crisp to them, I tossed in the leaves...which only took about 2 minutes to cook down. I used this recipe: http://allrecipes.com/recipe/bacon-y-bok-choy/ but with a few tweaks/additional veggies. :)
