    Mihani, is it because they are adding plant protein options in that same list? Sounds like we're all keeping things pretty simple with our food, a nice way to go right now in the heat anyway.

    Karrie, get a wheel! We'll be spin sisters! I bought mine used through Ravelry. Prewashed salad mixes are great! We get the Great Greens every week and if we're feeling lazy, we grab a few cups of it and toss it with a nut based dressing and have an almost instant salad. I also get prewashed baby spinach and pre-washed and shredded cabbage.

    I've been spinning a lot the last few days. Here's the skein from yesterday after being finished (washed, dried, re-skeined).

    I don't think I posted the berry yarn I spun. I finished this a week or so ago. I felted the flower from the same materials, but kept it separate for now. If I make a hat I can attach it with a pin.

    Your yarn turned out beautiful Carla. I think you did previously post your berry yarn, because I recall thinking that's going to be some wild hat! Can't wait to see it! I thought it was interesting that they started calling that section protein, like none of the other (veggie) food would have protein right? LOL

    Karrie, great idea with the salad kits. I usually buy containers of power greens, arugula and baby spinach, mix and match for several days. Lately I've been so lazy my salads are basically greens, beans, salsa or balsamic, and if I have some ready to go steamed veggies I throw some in too. I need to do some prepping again this weekend. I didn't have time/energy to do any mid-week. I've been trying to incorporate greens and cruciferous veggies into most meals, even breakfast, like a handful of chopped greens in my oatmeal or munching on some steamed broccoli alongside the oatmeal.

    My SIL brought me 2 ears of corn and 2 peaches from the farm market so I'll be having corn on the cob and a salad for dinner. Corn is soooo good and sweet right now, doesn't even need anything on it although sometimes I add a little pepper or chili powder. Breakfast and lunch today were the same as yesterday.

    Left the office a little bit early today to run some errands, made it to the vet for prescription food then it started pouring rain so I skipped the grocery. Will have to go tomorrow or Saturday. I needed to do laundry so I have that going too, and want to be in bed nice and early tonight.

    I had a yummy lunch today. I made the Sunrise Scramble (??) from OSG original cookbook with some potatoes and salsa and wrapped it all up in an Ezekiel tortilla. There's a ton left over, so that is likely what's on the menu for dinner, too.

    I'm in the middle of sampling for a new weaving project. It has been a long enough detour into spinning, and I forgot how to warp my loom and also forgot just how much work warping is! I'm just starting weaving the sample now, so I'll post a photo later today or this weekend once there's something to see.

    In the meantime, here are the yarns I'm using. I spun the sparkly one, the rest are commercial.

    Very pretty Carla... can't wait to see what you weave! I love tofu scramble... should have picked up some tofu at the store. Next shopping trip I will.

    Better day, not quite so crazy, still buried in work though. Planning to go in early tomorrow and put in a full day. Probably Sunday too, but we'll see.

    B - oats and a banana
    L - subway veggie sub (didn't make it to the store last night and fridge was bare)
    D - sauteed collards with onions and garlic, will make a fruit bowl of a sliced peach and some of the berries

    Stocked up at the store on the way home. Broccoli, asparagus, collards, power greens, red sweet peppers, arugula and spinach, cantaloupe, strawberries and blueberries, russet potatoes and a few red garnet. Planning a lot of simple green or pasta salads this week. Probably won't get to prepping my veggies until tomorrow though.

    Spent about 5 hours at the office. Came home and tackled some weeds in the back that had grown nearly as tall as the 5' privacy fence. Eek. They just seem to come out of nowhere! Started raining before I could finish but I got the worst ones out. Took a nap of course. It is Saturday after all.

    Now food prepping. Got broccoli and asparagus steamed. I could have sworn I got cauliflower too, but i guess I didn't. Cooked up the collards in a skillet with veggie broth, garlic and onion, spices. Also baking the potatoes and garnet sweet potatoes. They should be done soon and I can turn off the oven yay! It's not as hot as it has been, but still too hot for oven cooking.

    B - oats with strawberries, a few walnuts, cinnamon
    L - big pile of power greens with chickpeas, chopped tomato, nooch and balsamic
    D - collards, chopped tomato, seasoned black beans, maybe half of one of the garnet sweet potatoes, cantaloupe
    S - apple

    I'm still on my kick of finding and trying different apples. Last week I picked up three Envy apples and had one today. It's really good! Crisp and sweet. Will try to get some more before they disappear. A lot of the less well known varieties are only around a short time. I have been visiting this website to find out more about apples I find, it's pretty interesting, although I didn't find the Envy apples on the site. https://orangepippin.com/

    Sorry I left you posting by yourself this weekend, Mihani! I was distracted by a sock. Or rather, the cuff of a sock! Knitting in progress. I have to finish this sock (maybe even the pair) before I order more sock yarn. And I see lots of sock yarn I want to get! Sorry, I know it can be confusing around here sometimes...looking more like Craft to Live.

    I'm down just over 2 lbs for the week, and I'm pretty pleased with that. On the nutrition side of things, we've got to get back to making our own bean burgers, and I'm going to make up a batch today. I also need to pre-wash & chop all of the greens when they get in the door. If they are washed and ready to grab we both take handfuls and otherwise they get ignored too often.

    Breakfast - smoothie if i can make myself, or rolled oats with walnut milk & berries (I don't even soak the oats, I just add them and start eating.)

    Lunch - bean burgers if they are ready in time, otherwise salad and Amy's chili

    Dinner - bean burgers, salad, nut dressing

    I spent my entire weekend cleaning out my craft room (paper crafting, mostly). I made almost $400 on Varage Sale yesterday selling my excess (I did classes and wedding stationery for more than 10 years in all, so I have more than one person needs).

    My hubby said that I can use the money I made to buy myself a spinning wheel so I can start spinning with Carla!! :smiley::wink: I haven't had much time to look into it yet, but I've started the process. Meanwhile, I only got about half my craft room cleaned out, so I have a few days left of that... Unfortunately, I think I've sold the biggest ticket items already; I don't think I'll have that much to sell anymore... Maybe I'll start selling other random things so I can get a fancier wheel! :wink:

    Another perk to all that cleaning is that I'm down almost 2 lbs this past week too!! :smiley:

    Mihani, you'll have to tell us what your favorite apple turns out to be. I am a boring apple gal. I usually just grab gala or red delicious...

    Hi all! I haven't been on here for a while (looks like you all have been busy ;) ) what's, that's super exciting about the spinning wheel. My sister loves hers! She hasn't knitted anything in months, but has a lot more yarn for me to steal

    Hiya jrunion! Good to see you again. Carla and I just finished another go round of the 6 week plan. She did awesome, I did okay lol. I always seem to get more lackadaisical around week 4 to 5. I'm back to more life plan again. I do better with allowing more starches.

    Way to go another 2 pounds Carla! Woot! Has Joe lost weight too?

    Congrats on the spinning wheel Karrie, and 2 pounds down too! Of the new apples I've tried over the past year I think Lady Alice would be my favorite. The first bite of one I was like hmmm, not sure about this. By the third bite I was hooked. They are only around a few months and best in March-April.

    Had a really good day on track.

    B - oats, blueberries,strawberries (like you Carla, I have quit cooking and/or soaking my oats, I just eat them pretty much raw, just a little water to moisten for a few minutes before I dig in)

    L - big ol' salad of power greens, steamed broccoli and asparagus, nooch, balsamic, half a baked potato

    D - finally made the cheesy chickpeas... they were pretty good! The sauce didn't thicken up as much as I would have liked, but got thicker after standing. I piled my plate with collards, more broccoli and asparagus, another half a baked potato sliced into rounds, topped with the chickpeas then seasoned with chili powder and black pepper. Such a tasty and satisfying dinner! I can see the basic chickpea recipe being a starting point, and playing with different additions and spices. It was super easy, that's the best part. I have leftovers for dinner tomorrow, if I quit picking at them anyway.

    Anyone watch the eclipse yesterday? I made a pinhole viewer at my office out of 2 printer paper box lids and I had about 25 people come join me outside to come have a look. It was fun; people were making bad jokes and got the whole crew laughing hard. It was one of the best times I've had at work. :smiley:

    I made tex mex casserole for myself for the week, and more salad kits. I'm having a banana and seeds/dried cranberries for breakfast today; didn't get up in time to make myself a smoothie...

    Hi jrunion! as Mihani mentioned, we did a 6 week reboot and we're supposed to be in the middle of one now, but I think I might be starting over tomorrow. Things have been sliding a bit. Fewer greens, more bread and wraps.

    Mihani, that recipe sounds like a keeper, especially if it is fairly easy to do. Nice to have versatile things like that.

    Joe and I were working from home and we made some last minute pinhole viewers for the eclipse. We were in a bad spot for viewing it, 3rd tier or something I heard. It wasn't super impressive, but it was still fun to make up the boxes and check it out.

    Karrie, can't wait to hear about your wheel and see what you spin up. Selling off the old supplies you don't use is a great idea. I'd love to do that. Not only do you make back some of the money but you don't have to feel bad about a stash laying around unused.

    Tonight we're going to an ice-cream social. Totally dreading it. They have 2 vegan ice creams and 20 or so other flavors. I don't want to go off plan at all but I feel obligated to at least have a small amount of one of the dairy free ones. They specifically got for that for me which was nice, but now I have to eat it.

    I'm giving my father in law's wife the shawl I knit for her birthday, tonight. I'm excited for her to open it! Hopefully she likes it. It is drying in the sun right now. I'll try to get a pic of it all washed and finished before i give it away.

    Here's one of the 2 reasons that I have to get a new glass every time I leave the room (reason number 2 is looking in the window at me now). (I took 3 pics in a row but managed to miss her tongue in all of them.)

    I watched the eclipse live streaming from NASA on my computer at work. I didn't have eclipse glasses or anything. The NASA videos were really cool!

    Carla, you're so nice to share your water! LOL Hope you have fun at the ice cream social, and I bet your gift is a big hit!

    I used the leftover cheesy chickpeas on my lunch salad so I whipped up another batch for dinner. They are so easy not even I can make an excuse not to make them. And since I already have lots of potatoes and steamed veggies ready to go meals have been a breeze the past few days.

    B - oats (didn't have time for fruit or anything, had to get to the office early)
    L - salad of power greens, steamed broccoli and asparagus, cheesy chickpeas, a little extra sprinkle of nooch and some balsamic, couple quarters of roasted garnet red sweet potato
    D - half a baked potato, pile of sauteed collards, cheesy chickpeas with a sprinkle of chili powder, might have a few strawberries for dessert, but it's late and I'm not really hungry for more
    S - small handful of walnuts

    Oh, and it wasn't miserably hot and humid, so I actually took the dog for a walk! He was pretty happy it has been a while. A woman a few blocks over was putting her trash container out and commented from across the street that he seems a very happy dog, and his tail never stops wagging. I laughed and agreed, he really is a happy go lucky fellow. We didn't go too far, but it felt good to get outside and move around.

    I went for a bike ride with my son last night. If he had a tail, he would have been wagging it like crazy too. :wink: He was pleased as punch that it was just the two of us; he kept thanking me for coming along. My sweetie...

    My DDs bday is tomorrow and I haven't done a THING yet. I need to get cupcakes going on and I haven't even bought her a present. Mother of the year right here.....

    I had too much ice cream yesterday! What an ice-cream extravaganza! My FIL is a huge fan of ice cream so I'm sure he was in heaven. I thought they only had 2 flavors for me, but it turned out it was 2 flavors of ice cream, and there were still sorbets to try. The best was a peach sorbet that really tasted like juicy fresh peaches. The owner is super into making the ice cream from the real food, without flavoring, so the peach ice cream was made from fresh peaches grown locally and made the ice cream the same day, which is standard for them. There was a strawberry cucumber ice cream that I wouldn't have dared to order, but as a tasting, it turned out to be really good. The non dairy ice cream that was a total indulgence and amazing was coconut chocolate. They use coconut cream for the fat and texture and it.

    The owner is opening up a restaurant and bar next door to his ice cream shop, and I talked to him about making sure there are 1 or 2 healthy and plant based meals. He was very open to that and they are thinking of doing some bowls or plates with beans, rice and veggies.

    Here's recipe I ran across before posting this. I think I'm going to try it out.

    Hummingbird Cake Overnight Oats
    Yield: 1 serving

    Serving Size: 1 jar

    Calories per serving: 231

    Fat per serving: 9.5 grams

    Hummingbird Cake Overnight Oats

    Ingredients

    1/4 of a banana
    1/3 cup unsweetened vanilla almond milk
    1/4 tsp cinnamon
    1/4 tsp vanilla extract
    1 tsp raw sugar (optional) --- (I'm just going to use a medjool date)
    1/4 cup fresh pineapple, chopped
    1/3 cup rolled oats
    5 pecan halves, chopped or broken into pieces
    Instructions

    In a bowl, mash the banana. Stir in the almond milk, vanilla and cinnamon. Give it a taste, if you want it a little sweeter, add a little of the raw sugar. Most times I feel like the banana gives it enough sweetness, but that's up to you. Stir in the oats and the pineapple, then pour the mixture into a jar (or any well-sealed container) and refrigerate overnight. Duh.

    I forgot to mention that after getting my MIL's shawl all washed, dried, wrapped and ready, I forgot it at home by the door. Ugh! LOL They are going to be near our place this weekend so they will drop by to pick it up. Here it is before I wrapped it. (Karrie, once you are spinning you might like using the reject yarn bits to tie packages, it can look really pretty).

    It is Noro Silk Garden (349) and it did all the work. I loved knitting with it.

    I haven't knit with any of my hand spun yet. I did crochet a hat with it, and the woven sample I think I posted here earlier has hand spun and commercial in it. I'm plying for the first time today with hand spun. Up to this point I've just been doing singles (and a cheater ply technique of sorts, auto wrapping).

    Carla, that sounds like a good time. And the ice creams and sorbets sound delicious, as does the overnight oats recipe. The shawl is gorgeous, sorry you forgot to take it with you.

    It wasn’t a good day here. I’m exhausted and irritable although I managed to get through the day without taking it out on anyone. I spent a good part of the day with my office door shut and listening to classical music. Soothing and blocks out the noise from the rest of the office.

    My DD requested unicorn poop cookies and cake pops. So BOTH items are a 2-step process. I made and colored the dough for the cookies (it's 6 colors; we did a pastel rainbow) and tonight I have to roll them together to make the actual cookies and then bake them. For now it's chilling in the fridge. I also made the cake and crumbled it for the cake pops. Tonight I'll have to add the icing, form the balls, dip them in melted chocolate wafers and then decorate them somehow.

    I finished a cross-stitch hoop for her wall last night. A japanese rice bowl with a smiley face (very kawaii). I'll have to take a picture of it later. I am also going to make her 2 sushi hoops, but there just wasn't enough time.

    I also had to run to the store last night for her presents. That's done too; just gotta wrap them so she can open them after supper. And I told her I'd make her anything her little heart desires. And for the 3rd (or maybe 4th) year in a row, her preferred birthday meal is salmon, rice and roasted brussel sprouts...

    LOL Karrie… I’m sorry but unicorn poop cookies sound disgusting. I’m sure they look and taste delightful, but ick! Hope you managed to get everything done. And what an awesome healthy dinner your daughter requested. That’s wonderful! I liked salmon when I still ate meat. I was trying to remember today when I went full vegetarian and I can’t even remember. I know I went vegan in 2012. Your cross-stitch sounds so nice, post a pic if you think of it later.

    I was slightly less irritable today. I am just thinking a lot lately, there’s no way I can keep up this pace for another 10+ years to retirement. I’ll be dead before then. I’m so frustrated with work, and tired of giving up all my weekends to the office playing catch up, and feeling guilty when I do decide not to go in.

    I don't have a picture of the cross stitch yet; I'll do that tomorrow when I'm putting the cardstock on the back of the hoop. But I do have a picture of the cookies. Since it's all the same dough, but with different food coloring, I'm sure they taste fine.

    You separate your dough into 6 bowls and color them all. Then you roll out 6 different balls of color into long strips. Then you have to twist and roll your 6 colored strips together. Then you coil it up into a cookie (or poop). They turned out ok. But I'm not sure if I'll ever make them again. They are SO time consuming!!!

    The unicorn poop turned out cute! It sounds like a ton of work, but it sure does scream girl's birthday party!

    Mihani, I hope you can figure out a good solution with your job. The sort of solution that has you taking 2 full days off every single week!

    We had spaghetti last night for a change, with lots of onion, garlic, and bell peppers and tomatoes from our greenhouse. I'm thinking tu-no salad over salad for lunch and leftover spaghetti for dinner.

    I ordered some Malabrigo Rios yarn for my next knitting project, a cardigan (http://www.ravelry.com/patterns/library/harvest-10) . It will be my first piece of clothing but it is supposed to be fairly simple and I found a YouTube knit along for it so I should be safe. I'm also going to be making a few hats for Christmas gifts once I get my socks done. Yep, Christmas gifts in August!

    Who would have thought unicorns would have such labor intensive poop lol. The cookies are very cute though!

    Had fun tonight. Did okay usual oatmeal breakfast and salad lunch. Dinner was a couple beers (decided against wine sometimes it gives me a headache), hummus and pita chips and veggies and blue corn chips and guacamole and strawberries. I would say I was way overdue for a fun and relaxing evening, and the calorie splurge wasn't too bad.

    Office about 5 hours. Went to the grocery and stocked up on goodies for the week. I am all set with broccoli, asparagus, collards, mushrooms, salad greens, beans. Also got some bok choy and shiitake mushrooms for a yummy stir-fry. Will probably do prep tomorrow. My boss also got me some awesome good peaches, a melon and some sweet corn from the farm market.

    B - oats with strawberries
    L - Amy's burrito (not a great choice but it was in the office freezer and I forgot my salad)
    D - corn on the cob, smoky black bean enchiladas
    S - a lara bar (another not so great choice)

    I am not a huge fan of Happy Herbivore, she's good for when you are first getting into vegan but her recipes are hit or miss most of the time. That said I love this enchilada recipe. So easy. I usually just buy canned enchilada sauce which makes it even easier. If you are not being fussy about 100% ETL throwing some shredded Daiya on top while baking is tasty. I looked up the recipe on her website https://happyherbivore.com/recipe/smokey-black-bean-enchiladas/ and it is similar but the cookbook calls for 1 to 2 T of chili powder in addition to the 1 tsp garlic powder. I also usually keep it covered for 15 minutes then remove the cover and bake another 15 minutes.
