I’m actually currently on a road trip for the next few days with a friend. Doing some hiking in the Rocky Mountains. I feel like fresh mountain air is so rejuvenating 🙂. But, as much as I love the mountains, I am also a movie loving couch potato lol.

I can remember taking road trips from Kentucky to Indiana to see my Aunt Helen (Mom's Sister) and Cousins Tawnya and Michael every summer. We'd spend a whole day before frying chicken, making homemade pimento cheese and chicken salad, iced tea...shopping for toiletries, new outfits to take with us...it was a whole thing just prepping for the trip. It wasn't just the trip, it was everything that went into it...the time spent on the road, laughing, talking, listening to music, singing...just me and my Mom. Boy I miss those days...we'd look forward to the trip for weeks and talk about it for weeks afterward. We'd usually stay a week or two in Indiana...got my ears pierced there one summer...we'd stop along the way, take pictures...just spending time together...was only a six hour trip, but it was the highlight of our year. Life was simpler it seemed...
This is me and Tawnya...I'm on the right...she's six years older...I thought she hung the moon...

How do you make ice tea in USA?
Hey @jodavo66 I make a 3-quart pitcher at a time...boil about 2-3 cups of water and put in 5 tea bags of Red Rose tea (my preferred brand), cover and remove from heat for 10-15 minutes to steep. Then I add water and if you were making sweet tea (southern style), this is where you'd add the sugar, but I use splenda and make mine by the glass, so I leave it unsweetened. After it gets to room temperature, I refrigerate it. Usually lasts 2-3 days.

I spent some time today doing meal planning for the week. I'm also cooking today to prepare leftovers for my busy days, where I work my regular job and teach piano in the evenings (Tue/Wed). Since I don't like being tied to a specific schedule, I just wrote/planned for 7 days of meals. I'm doing just two meals a day and no snacking and I fast from my dinner meal to the next day's lunch. So I have 7 days of two meals spelled out. When I wake up each morning, I can choose a day from the list and go from there.
Lately I've really been "into" 5-6 cup mixed greens, carrots, radishes, spinach dinner salads. I'm using zero calorie salad dressing so it's about 60 calories for the salad mix, then a little for cheese, croutons and bacon bits. I have some kind of protein with it...either a sandwich, burger, baked chicken, beans, etc. REALLY enjoying these...very filling and lots of green leafies! I don't do iceberg lettuce...no nutritional value, so these are loaded with veggies...loving it. Wish I had some garbanzo beans and cucumbers...yum.

Thanks. I've read all sorts of things in fiction books. This isn't far off what hubbie was doing.1 -
Totally manic day.
Parents night straight after school, thankfully on-line, but I literally didn't have time to visit the loo (bathroom). Started some work task & been on 5 hours at home with just a break to help youngest with her Biology revision for exam tomorrow & to eat!
Really hungry now as I should be asleep!2
