Nice job on your foods, Nanc!

Our lawn is looking so good now that we have a replacement for the ride-on bagger. We use it for the yard and take the bags off for the field perimeter and area around the barn where the look doesn't matter as much.

The spice rack I ordered works better than expected, holding a lot of spices in a stadium type display. Yesterday I cleaned and organized the cabinet under the kitchen sink and my linen closet. I set aside linens for donation, new rags for my studio, and rediscovered a simple white tablecloth for my dining table that I am really happy with (table is very long even without the leaf inserts, so one that fits is a real find).

I'm going to tackle the master bathroom today. The biggest challenge will be the shower with 2 walls of glass.

    coffee
    smoothie
    spaghetti

I enjoyed reading about everyone's efforts to declutter and get rid of "stuff". I did get rid of a ton of cutesy things that I didn't ever look at anymore, or when I did look at them they just made me wonder why I still had them. I hope they end up with someone who will enjoy and love them as I did when I was younger. Now I am much more into minimalist and I only have things that are truly meaningful or I actually love seeing in my house.

That's so weird, Carla. I recently heard from a friend from high school that I haven't spoken with in nearly 40 years. We are planning to get together soon. Yay for organized spices and the lawn looking spiffy! What spice rack did you order?

Hope you enjoyed your meals after your fast Magic. Dr. Fuhrman talks about true hunger, which I've never really quite understood, but he says that when you are truly hungry food tastes better.

I am crazy busy at work. It's not just me, everyone I have talked to at other offices says the same, and it's hard to find help for those who are trying to hire.

I'm still not feeling 100% here, and I keep forgetting to call the doctor to schedule an appointment when I'm busy at work. I am going to put it on my calendar for Monday.

Stopped and picked up my veggies from my salad prepping friend, and the grocery for some more things to get me through the week. Planning to do some batch prepping tomorrow. A couple pots of soup, baked tofu, hummus.

I think tonight will be a stir-fry of broccoli, onion, red pepper, with brown rice and a miso sauce to top it.

I also had sweet potatoes for breakfast...sliced in half...cut side down...baked on silpat at 400 for not sure...30 minutes?

Carmelized...sweet...delish. They were the organic ones from Trader Joes. Small ish.

Nanc, I looked up the broccoli and cheese recipe on Hot for Food and I am going to have to make that. It looks so good! And I was just reading about how good broccoli is for you...which is funny because I already knew that and of course most/all? of the veggies are good for the body, but whenever one is highlighted on one of my go-to websites, I end up concentrating on it for a while.

Mihani, funny about your high school friend getting in touch. Maybe it is an end of pandemic type response where lots of people are reconnecting. Let me know how that goes! How are you feeling now? How was your lunch out with a friend last week?

I did something to my foot yesterday when I was walking. It hurt but I wanted to get my walk in so I kept going. Bad decision. This morning it hurts when I put pressure on it, and then again when I take pressure off. It is in the arch and heel area. I'm off my feet for today.

Our heat pump stopped working so we have an HVAC guy coming today to look at it. The weather is in the low 70s this week, so hopefully we squeak through and get it fixed without going through a heat wave.

food - idk. I'm having issues. too many snacks, not enough gbombs. I will start the day out right with my smoothie and go from there.

Sorry bout your foot, Carla...maybe tendons? Hopefully nothing serious.

Here's the little video on the cheese sauce...I do make it with 1/2 the oil she has in the recipe...but it can be made completely without it.

    https://www.youtube.com/watch?v=HUH3ttCnnGU

Made homemade hummus yesterday...oh gosh, pretty good...will make again and try and get better. Using this recipe next time: https://www.inspiredtaste.net/15938/easy-and-smooth-hummus-recipe/

I am hooked on thse little sweet potatoes...they are the pretty small ones from Trader Joes...in a bag, organic sweet potatoes...sliced long ways...cut side down and roasted...caramelized and delish. Then steam some spinach (or broccoli) and make a sandwich. Both help to keep things MOVING ALONG...if you know what I mean. Keep leftovers in the fridge and super for snack time.

Since juicing, I have stayed out of my Frozen Gardein stash ...I really don't miss it...and know that I am healthier. Thank you all for being super roll models.

We are higher than normal temps...but it's Summer in Phoenix...what can one expect. So salads...cold foods.

I have been watching (BINGE WATCHING) Chelsea Mae Vegan You Tuber...(she lost 40 lbs) and is a fan of CALORIE DENSITY... continually educates throughout her youtubes...loves 50/50 plate ...she is so much fun...Lives in Australia with her Hubby and two adorable daughters. If you're looking for inspiration...she just might be the ticket: https://www.youtube.com/channel/UC_WwtGaluTbvHy_7H0NrACQ

Alrighty then, time to get laundrywashmachine.gif started. Love you guys. Later, mates.

Thanks for the video link, Nanc! I hope you always feel you can hang out here, even when you aren't on plan, but I am happy for you that things are going better now food-wise! Nice work!!

This morning I made a Green Goddess dressing. I didn't have parsley on hand so I subbed kale. Turned out delish, I may do that from now on. I managed to hold off until 11:30am for my first meal of the day (smoothie). I should be able to stick to 2 meals today, the second one being the Moroccan Lentil Stew I have cooking in the IP and a salad.

I cleaned out my fridge today and it looks a lot better. The goal is to give it at least a minor wipe-down and sort before every grocery order so I really know what I need to get. Picking up cherries, peaches, cantaloupe and other fruits to help with my sweet tooth.

Hi all, I am still swamped with work this week. Like hawksgirl I'm reading just haven't had time to really respond in full. I will catch up this weekend! I am going to spend a good part of Saturday batch prepping and cooking so I need to take some time tonight to make up my grocery list.

Yesterday's food was on plan! Feeling good about that. Hard not to snack after dinner, but I made it through. Harvested greens from the garden and prepped them for salad today, and did a maintenance cleaning on the bathrooms this morning. Nice to have that all done.

Tomorrow we're going to my FIL and his wife's home for lunch to celebrate Father's day. She is making some vegetarian or possibly vegan layered enchilada type dish that she looked up especially for Joe and I. And a berry pie for dessert. Looking forward to hanging out with them.

    today:
    coffee, smoothie
    salad w/ green goddess dressing
Moroccan lentil stew and fruit salad

    Happy Friday!

Carla...and gang...I love when the family supports us...my niece (who lives in Houston with her hubby and two year old) always thinks of me when she comes to visit and stay with my sister.

My sister, on the other hand, doesn't get it ...I can remember one time in particular when they were here and she mentioned they were going out to a restaurant and pretty much I was not included because of what I ate and the restaurant would not be able to accommodate me.

    CAN YOU FLIPPIN BELIEVE THAT?

But you know what, at 72 you let it go. samvetesmiley.gifIt bothers me yes, but I have learned it does not pay to go up against her. Just let her be and keep peace is my thinking. I am not the one taking blood pressure meds!rolleye.gif

Today's menu is...more of the same...

    coffee with nutpod creamer
sweet potatoes and spinach and pico with corn and beans
corn tortillas with hummus OR flatbread with hummus
one green juice from Nekter (have four green left)
    watermelon

This was in no particular order...just what I am taking today to work.

My juicing DID reset my taste buds...no desire for my Gardein stash in the freezer. Did NOT lose like I wanted to...but I snack too much. Especially late at night.

Tonight, I will push through and follow Carla and not snack after work. Let's see how I do.

Wishing all my plant eaters a beautiful icecubesmiley.gif Saturday! Missing Austin...hurry back!

Happy Saturday! Good heavens what a couple weeks at work. I hope next week will be slightly less insane. I've arranged to work from home part days so I can get through some projects that are just too difficult to get done with the constant interruptions at the office.

I ordered a shelf for the treadmill so I can put a tablet or book on it while I walk. I have a TV in front of the treadmill but I get kind of bored just watching TV and need a book or the computer to stay entertained. I could even do work on the treadmill with the laptop. It should be here Monday... can't wait!

Better get busy. Going to work for a few hours then will do some cooking. Sauteed greens with mushrooms and onions and baked tofu. Making red lentil cauliflower curry this weekend. Haven't made that in a while and it's so good! Carla first recommended that recipe from veganomican a long time ago. It's an impressive cookbook but I have never used it much. I think I always found it overwhelming.

Crazy about your sister leaving you out, Nanc...but nice that your niece is thoughtful and supportive. Always a bit of a mixed bag with family!

Yay to working from home, Mihani! The treadmill shelf sounds great! I read when I walk on the treadmill, unless I'm doing some intermittent jogging and then I switch to music (can't read while bouncing up and down lol!)

Lunch with the in-laws was lovely. The food was divine (with champagne for a treat) and they gave us a tour around their yard, showing us what they've worked on since we've last been there. They purchased a newly constructed home 3 or 4 years ago that sits up high with a great view, but with a steep yard. They've terraced it and added stairs and lookout decks and so many flowers and berries and fruits of all types, and fountains and sculptures big and small. It could be in a magazine, no problem. I'm going to add lupine and calendula to my yard next, after seeing it in their yard.

For dinner tonight we're going to break out our charcoal grill. We've never gotten around to using it, so it was still in the box until yesterday. We've got some impossible burgers and we're going to do some veggie packets in parchment lined foil. That and a side salad with amazing green goddess dressing. I'm addicted!

they had all kinds of lupine, but this is the color I'm after if I can find it

Glad you had such a nice time Carla.

Magic, I have only had one watermelon so far this summer. I need to get some this week!

Got through some work today and felt good about what I accomplished. Working from home will be a temporary thing while I catch up some projects, but I'm looking forward to it. Tired of saving all the most time-consuming work that requires uninterrupted time for the weekends... I want my weekends back!

Got in half an hour of yoga and mindfulness. Felt great after I did that.

Made the red lentil cauliflower curry, ginger miso dressing, and some black eyed peas with cabbage. The black eyed peas were a throw it together thing that turned out very tasty. I sauteed an onion and some garlic, added two cans of beans and some spices (paprika, turmeric, cumin, black pepper), then I added the cabbage and cooked covered for a while. It seemed to have too much water so I threw in a handful of ancient grains penne pasta which soaked up the excess liquid and added a nice texture. Also made a pot of farro which seems to be my go to grain these days. It went nicely with the curry. Plenty of leftovers for lunches and will freeze quite a bit also.

    Okay, off to bed!

    Popping in to say hello...

    My Friday...

I made some rice noodles, spaghetti sauce and spinach for lunch...I did use a little Follow Your Heart Parm. Spinach is my miracle worker these days...totally keeps everything moving along.

    Nectarines ... and one juice.

I think I will put in some sweet potatoes just so I don't look for anything else that I should not be getting into.

GTG ... have a great day everyone.

PS The watermelons so far have been super juicy and sweet.

What is that guy's name on YOUTUBE. Crazy Healthy Cool...watermelon is his absolute favorite...when he cuts one open and hears the crack...he goes goofy.

Sorry for the two same youtubes. ooppsie.

I had a lovely visit with my sister and her husband and my sweet niece and her husband and the star of the show, MY GREAT NIECE...oh my gosh, what a doll baby...so happy to meet her in person...she was just six months old last time I saw her...and now she is turning two on Tuesday.

We had wraps and I brought homemade hummus and pico de gallo and it was so nice.

My niece is completely supportive and my sister might be coming around as well.

    I have a doctor's appointment today...might go there aftewards...otherwise, I go back tomorrow.

    Have a lovely day everyone.

    Today's menu:

will try and pick up some juices from Nekter

    coffee with nutpod creamer
    juice
    watermelon
rice noodles with spinach and sauce
    a big salad
    nectarines

    Later, my sweet peeps.

Sounds like a wonderful visit, Nanc. Wow...6 mos to 2 years...a lot of changes in that amount of time.

Hope working from home is going well, Mihani! Keep up the great work with yoga and meditation.

It's supposed to hit 99 degrees this Friday. Record breaking for this area. I'm going to step outside for a moment just to know what that feels like! Yesterday I spent a glorious hour swaying in the breeze under the shade of a tree in my hammock with a good book in hand.

We had a salad with greens from the garden and green goddess dressing and baked tofu for dinner yesterday. If anyone doesn't have a good GG dressing, I will post. Only downside is it is super garlicky so maybe not ideal for talking with clients!

I'm making iced coffee lately with a coffee press. 1 cup coarse ground coffee, fill with boiling water, let cool, then let it sit in fridge overnight then press. Add water to taste and cashew cream if desired. The recipe suggested 1/4 cup of blueberries in there as well but I didn't taste them so skipping it from now on.

I ordered a popsicle mold from Amazon. I'm going to do OJ and non dairy milk plus some blood orange extract (which tastes just like a creamsicle). High hopes for how that turns out. For company I will do a more decadent version with vanilla cashew cream in place of milk.

Hi! Still working like a maniac. I know this surprises y'all. I did go out with a friend tonight though. Haven't seen her in a couple years and it was so fun. I just had one glass of wine and didn't order anything to eat. I find myself drinking less and less often over the past year or so. It just isn't as fun as it used to be and makes me tired.

Speaking of not eating... I don't know if I mentioned before but I got aligners for my teeth earlier this year. They didn't work quite as anticipated so we are starting over from where I am and they put these connectors on my teeth so the aligners get a better grip. My teeth hurt and the inside of my lower lip gets ripped to shreds when I take the aligners out to eat, so I have had a couple days of blended salads, almond milk yogurt, boiled gold potatoes, smoothies. I am actually enjoying the blended salads quite a bit. I just set the blender to puree and it's sort of like a green gazpacho. I am adding some of the miso ginger dressing to the blender along with lettuce, carrot, peppers, yellow squash.

I'm staying home all day tomorrow to work since I got stuck in the office Monday and Tuesday and couldn't leave early to come home and work.

Magic, I'm so happy to hear that you had a nice visit! I know it can be tense with your sister sometimes. Great job sticking to plan while socializing.

Carla, I'd love that recipe. I need to expand my salad dressing options. I remember the first time I had the tractor out in the field and the barn swallows were swooping all around. It freaked me out at first I thought they were going to attack! LOL But they were just after all the bugs that were getting stirred up during the mowing.

I need to go eat something since I couldn't eat when I was out. Probably just some of the boiled potatoes and a yogurt.

That dental stuff sounds painful, Mihani. Glad you went out and had a good time :)

    Green Goddess Garlic Dressing

    Ingredients
    2-3 cloves garlic
    ½ cup chives
    ½ cup parsley (or kale)
    1 Tbsp nooch
    2 Tbsp tahini
    1 Tbsp miso
2Tbsp lemon juice, fresh if possible
    ⅓ cup water
    ½ tsp salt

    Steps
Toss all ingredients into a blender and blend well.

I had a good food day yesterday. Yay! Feels good (mentally). Physically, I've been having headaches lately and that happens when my food isn't on track. It will take a few more good days before the headaches ease off.

Some of my flowers started leaning over in the garden so I clipped them to enjoy inside. Happy Friday!

Thanks for the recipe Carla, and beautiful flowers.

Magic, I still haven't got a watermelon! I don't know what is wrong with me this summer. I've been eating a lot of cantaloupe though.

Still sticking to mostly soft foods. Made a tasty dish today. Boiled yukon gold potatoes until tender, then drained and cooked some more with garlic, paprika, black pepper, and chard. Turned out well.

Took it easy today. Going to bed early and work from home tomorrow try to get a few things finished before the week starts again.

There's a heat wave over here in NW Washington! 100 degrees yesterday, idk what today, and 110 tomorrow. Too hot for this gal! I had the AC up to 77 because I don't want it to work too hard. Which brings me to the topic of creamsicles!

They turned out great. I will probably have to start skipping the nuts in them because I have a feeling I'll be eating my way through a lot of them this summer LOL Here's where I'm at with the recipe if anyone is interested:

    for 6 popsicles
    1/2 cup OJ
    1/2 cup non dairy milk
    6 medjool dates
    1/4 cup cashews
    1/4 tsp blood orange extract
    1/2 tsp vanilla extract

Soak dates and cashews for 20+ minutes to soften
Blend all ingredients until smooth and creamy.
Pour into molds and wait 4 (long) hours.

Here's the molds I found on Amazon https://smile.amazon.com/gp/product/B07VK889V7/ref=ppx_yo_dt_b_asin_title_o03_s00?ie=UTF8&psc=1
