    I had salisbury steak meatball over cauliflower/potato puree. The first time I made these I followed the recipe and the meatballs stuck in the instant pot. Now I just bake them in the oven first before continue the receipe. I used her suggestion to use half cauliflower and half potato for a more consistant mashed potato texture. The meatballs are tender and the gravy is delicious. My husband didn't realize that their was cauliflower in the mash.

    Very busy day yesterday. Pre prepped lunch. 2 runs, tennis. Giving performance review.

    Getting performance review (since I have a new boss the past 2 years I am all of a sudden middle of the pack... grrr). It's hard since I have always been either top tier or close to it. I think that happens as you get older and they want to give the higher ratings to the younger folks for more career progression. It's interesting that after it happened last year I very carefully created all my goals and metrics so they were "smart" and met or exceeded them. I asked "what can I do better" and the strange answer was "grow your team and hire another planner" .. hmmmm. OK. I have been in the corporate world long enough to play the games but still stings a bit.

    Lazy reading again instead of a workout (that easily would have brought me within calorie budget). Will work on staying well under today to make up for it.

    A "casserole" consisting of cauliflower rice, broccoli, Chicken fajita strips, fat free cream of mushroom soup, cheese for topping. Wish I had a picture. Really good and filling.

    Goodness — I was sure I posted….

    It was a ✅✅✅ day — weight training and right at base calories. Have found a way to really amp up my protein so fingers crossed…..
