Grilled Chicken and Vegetable Skewers:

Ingredients:

1 pound skinless, boneless chicken breasts, cut into cubes
1 zucchini, sliced
1 red bell pepper, seeded and sliced
1 yellow bell pepper, seeded and sliced
1/2 red onion, cut into wedges
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried oregano
Salt and pepper to taste
Instructions:

Soak wooden skewers in water for 30 minutes.
Preheat grill to medium-high heat.
Thread chicken, zucchini, bell peppers, and onion onto skewers.
In a small bowl, whisk together olive oil, garlic, oregano, salt, and pepper.
Brush the skewers with the olive oil mixture.
Grill skewers for 10-12 minutes, flipping occasionally, until the chicken is cooked through.
