It's recommended that we get five--count 'em--servings of vegetables a day. There are many beneficial nutrients in vegetables and WW counts almost all of them at Zero Points. How do you eat your vegetables? Plain? Added to a soup, smoothie, egg dish, etc? Do you use a low-calorie dip? Other ways you incorporate vegetables into your diet?

I seldom meet the 5 servings of vegetables (3 oz/serving) guidelines, but I'm trying to improve. Some ways I work vegetables into the day (1) I saute vegetables with olive oil, adding herbs. (2) I roast vegetables, a favorite way because of the rich flavor from roasting. (3) I add plain vegetables to salads, for example, carrots, beets, tomatoes, squash, cucumbers. (4) I regularly add them to Fall soups. (5) I incorporate them into casseroles or baked dishes. (6} As part of a sandwich. I think I would get closer to goal if I ate some vegetables for breakfast, say in an omelet or scrambled eggs.2

I'm also trying to be better about getting more vegetables in my diet. I love them steamed and roasted. I like to have a big salad going all the time, but I've struggled with that lately. I frequently eat dinner leftovers for breakfast/lunch, so I don't mind having vegetables for breakfast.
There are a ton of interesting slaw recipes on the internet. I especially love olive oil based ones, so I did a number of those this summer. Hot slaw as well.
If I was more organized, I'd just roast and steam a bunch a couple times a week. But alas . . .2 -
DW found a large bag of mixed veggies at Costco. Also found some microwave blend of quinoa & brown rice. At dinner I make those, mix them together & eat it with some soy sauce. Round it out with grilled chicken. If I making eggs, I usually throw in some broccoli slaw.
I don’t measure portions of veggies but I’m pretty generous when I’m dishing them out.2 -
Interesting question
On review, I rarely eat vegetable at home - other than salad. I’ll have a salad at home that has two cups of spinach as well as some tomato, cucumber and radish (and olive oil, to keep my coat glossy). I’ll also have salad when eating out, as well as steamed broccoli.
I do get three or four servings of fruit a day - generally 1-2 at breakfast, a banana st lunch, and an apple for an afternoon snack.
