That is like a whole days food intake for me. I am seriously not a big eater, unless it is tacos or spaghetti squash.0 -

It was easy. Scrape the gills out of the portabella, then fill with your favorite pizza toppings (in this case tomato sauce, fresh mozz, pepperoni and some fresh basil). Put on a cookie tray and pop in the oven for about 15 minutes at 350 (or until the portabella starts to sag). You pretty much have to eat it with a fork - but it tastes like you swiped the good parts off of everybody else's slice!0 -
Yeah, my mom used to do that all the time with english muffins when I was little. I will totally have to do this for Grace one day!0

Well, I *am* a big guy! (But getting smaller...)
Actually, if I recall, that meal was only 600-800 calories, There's a LOT of high-volume, low density veg/fruit there. My wife and I tend to eat light all day and then make a regular dinner - it's much more satisfying, and we can focus more on cooking 'right' than worrying about portion control.
Besides, Grok's eating style was 'feast or famine' - a couple of days hitting the berries and leaves until he could make a kill. Three Squares a Day is a modern invention.0 -

That is a GORGEOUS meal, monkeydharma. And I tend to eat the same way as you and your wife - very lightly during the day, and most of my calories in a big dinner.0 -

What I think is so interesting is that a lot of Primal-Paleo people (say that 3x fast!!) seem to have big dinners. And yet they are still losing weight!!
All those calories that close to bedtime will just make you fat!!! (LOL!) Yet another myth proved false by the Primal-Paleo lifestyle0 -

Wow, those pizzas look incredible! I started eating primally about a month ago and have lost 22 lbs (only about 200 more to go...) and the thing I crave the most is pizza. Since I *love* portobellas, I can't wait to go shopping and make this recipe!0

I can't wait to try that pizza idea. I remember reading on here somewhere a recipe for pizza crust using cauliflower. Does anyone have that by any chance?
Also - anyone else bake using coconut flour? I have recently started using it and I love it. I make waffles or pancakes on the weekend with 100% pure maple syrup. Crepes with pepperoni for lunch. It is fantastic and I never feel deprived of anything.0 -

I do! I'm tired out on nut flour recipes so I like coconut flour although I don't bake in general as much as I used to. I found a recipe for cookies that I think would work well for scones too as they were very cakey. They were sweetened only with liquid stevia (although they did contain dark chocolate chips) and I tried them out on some of my skeptical family at Halloween that hate coconut. They were pleasantly surprised. Instead of pumpkin pie for Thanksgiving, I'm making pumpkin cobbler with a coconut flour cobbler topping.0 -
ohhh - that sounds delish. Can you share your recipes? I am not against chocolate chips either :-) I make sure I buy the dark chocolate kind.0

This isn't a blog I frequent, just stumbled on it looking for cookies. The dough is sweetened with liquid stevia. For completely sugar free, you could leave out the chocolate chips. To make scones, I would just make larger drops of dough on your baking sheet and possibly add a minute or two to the bake time.
I do have to say that I believe the amount of coconut milk she calls for is too much. Using a full cup, it was batter not dough, no way you could drop it on a sheet. I had to add in more coconut flour. Next time I would start with a half cup and work my way up. The dough should be very soft but it won't spread on the sheet.
EDIT: since these don't have sugar they will not last long on the counter. Store in the fridge or freeze in smaller batches.0
