    Wow, those pizzas look incredible! I started eating primally about a month ago and have lost 22 lbs (only about 200 more to go...) and the thing I crave the most is pizza. Since I *love* portobellas, I can't wait to go shopping and make this recipe!

    I can't wait to try that pizza idea. I remember reading on here somewhere a recipe for pizza crust using cauliflower. Does anyone have that by any chance?

    Also - anyone else bake using coconut flour? I have recently started using it and I love it. I make waffles or pancakes on the weekend with 100% pure maple syrup. Crepes with pepperoni for lunch. It is fantastic and I never feel deprived of anything.

    I do! I'm tired out on nut flour recipes so I like coconut flour although I don't bake in general as much as I used to. I found a recipe for cookies that I think would work well for scones too as they were very cakey. They were sweetened only with liquid stevia (although they did contain dark chocolate chips) and I tried them out on some of my skeptical family at Halloween that hate coconut. They were pleasantly surprised. Instead of pumpkin pie for Thanksgiving, I'm making pumpkin cobbler with a coconut flour cobbler topping.

    This isn't a blog I frequent, just stumbled on it looking for cookies. The dough is sweetened with liquid stevia. For completely sugar free, you could leave out the chocolate chips. To make scones, I would just make larger drops of dough on your baking sheet and possibly add a minute or two to the bake time.

    I do have to say that I believe the amount of coconut milk she calls for is too much. Using a full cup, it was batter not dough, no way you could drop it on a sheet. I had to add in more coconut flour. Next time I would start with a half cup and work my way up. The dough should be very soft but it won't spread on the sheet.

    EDIT: since these don't have sugar they will not last long on the counter. Store in the fridge or freeze in smaller batches.

    Pumpkin Cobbler- I've used this topping on several fruit cobblers. I made this last year, it was much faster/ easier than making a nut flour crust. I would give credit for the topping where it's due but I can't remember the site I found it on.

    1 recipe pumpkin pie filling of your choice- I modify the one on the Libby's can

    topping:
    1/2c coconut flour
    1/2 to 3/4c coconut sugar
    1tsp cinnamon
    1/4tsp salt
    1/2c butter, melted
    1tsp vanilla
    1/2c chopped walnuts or pecans

    In a medium bowl combine the dry ingredients. In a separate bowl, combine the butter and vanilla. Stir in the dry ingredients, mix well to break up lumps. Let sit for a minute or so, the mixture will become crumbly. Stir in the nuts.

    Pour pumpkin filling into pie pan or 8 x 8 square dish. Sprinkle the topping over the filling. Bake 350 for 30 minutes or until filling is mostly set.

    Made some Eggs en Cocotte for breakfast which is good with some crispy bacon!
    I followed the cooking instructions from a Cooking Light recipe and mod the ingredients with whatever I had in the fridge.

I subbed Trader Joe's Everyday seasoning with the listed italian seasoning and provolone for the cheddar cheese. I also added 10 more minutes to the baking time since I used my toaster oven to bake this.

    That was just my first try. It will get better in the next couple attempts.
