    Pumpkin Cobbler- I've used this topping on several fruit cobblers. I made this last year, it was much faster/ easier than making a nut flour crust. I would give credit for the topping where it's due but I can't remember the site I found it on.

    1 recipe pumpkin pie filling of your choice- I modify the one on the Libby's can

    topping:
    1/2c coconut flour
    1/2 to 3/4c coconut sugar
    1tsp cinnamon
    1/4tsp salt
    1/2c butter, melted
    1tsp vanilla
    1/2c chopped walnuts or pecans

    In a medium bowl combine the dry ingredients. In a separate bowl, combine the butter and vanilla. Stir in the dry ingredients, mix well to break up lumps. Let sit for a minute or so, the mixture will become crumbly. Stir in the nuts.

    Pour pumpkin filling into pie pan or 8 x 8 square dish. Sprinkle the topping over the filling. Bake 350 for 30 minutes or until filling is mostly set.

  • Made some Eggs en Cocotte for breakfast which is good with some crispy bacon!
    I followed the cooking instructions from a Cooking Light recipe and mod the ingredients with whatever I had in the fridge.

  • I stumbled upon Vanessa's website when I was looking for bacon recipes on MarksDailyApple. I had all the ingredients readily available so we will be having this for dinner! I subbed Trader Joe's Everyday seasoning with the listed italian seasoning and provolone for the cheddar cheese. I also added 10 more minutes to the baking time since I used my toaster oven to bake this.

    I stumbled upon Vanessa's website when I was looking for bacon recipes on MarksDailyApple. I had all the ingredients readily available so we will be having this for dinner! I subbed Trader Joe's Everyday seasoning with the listed italian seasoning and provolone for the cheddar cheese. I also added 10 more minutes to the baking time since I used my toaster oven to bake this.

    GOOD and SATISFYING! I did add dill, oregano, and basil to make it savory. But, after figuring the calories, We have been happy with just 1/2 instead of the WHOLE thing. Half the calories! Throwing on a big dollop of tuna or chicken salad is perfect!

    It was really good! not too sweet so i drizzled a bit more honey and a sprinkle of cinnamon on top, then some whipped heavy cream... mmmm...
  • Made a seafood dynamite for dinner. This is pretty popular sushi roll topping at japanese restaurants but I made it without rice. The degree of spiciness can be decreased or omitted depending on your preference.

    2 cups mixed seafood (squid rings, baby scallops and shrimp)
    1/2 cup mayo
    2 tsp sriracha hot sauce

    Combine mayo and sriracha in a bowl. Set aside.
    Blot excess moisture from the seafood, then add half of the mayo-sriracha mixture and place it on a baking dish. Then top it with the rest of the mayo. Bake at 400 degrees for 30mins then broil it for an additional 5 mins. Enjoy hot!

    I was trying to make protein ice cream (just whey powder & cream with some pumpkin spice & sugar free egg nog syrup) for my breakfast tomorrow, but messed it up. Guess I will have pumpkin spice protein egg nog for breakfast!

    I have made this one for several years now, no grain or other flours to thicken.

    Caramelized Onion Gravy- from Oxygen Magazine. Can be a little on the sweet side depending on the onions you use and how much you caramelize the onions but I think it's a brilliant gravy without flour.
    2 lg onions, thinly sliced
    enough butter or oil to sautee onion
    1c total- chicken/ turkey broth, cream or half & half- either one or the other or a combination
    1/2tsp rubbed sage, thyme or rosemary
    salt & pepper to taste

    sautee onions until caramelized, stirring frequently. Remove onions to blender cup. Add liquid and seasoning, blend until smooth. Add more liquid if needed. Add salt & pepper to taste. makes about 2 cups

    Oh yeah! We always split and throw in the toaster. Would be GREAT with lox & cream cheese! My friend (Primalgal) says she puts 1/2 the batter in ramekin and 1/2 in another. Cook and you've got TWO thin breads (top and bottom) for sandwiches.
