20 calories per brownie and the box mix + Diet coke made 12? What kind of mix did you use? Dunkin Hines Brownie mix is about 2000 calories (for the whole box) without adding anything.

I have the same problem. I usually end of not counting because I haven't 'planned' what I'm going to eat. I end up eating out or going to family or friends house for get togethers. I try to remember to eat sensibly, but sometimes, it's just a pain.

I use the leftover 'stuff' to make a soup base. I add a bunch of veggies and sometimes leftover chicken. I've never added anything to make it thicker, though.

I love frosting from the can. Once, I made a cake and had a lot of it left over. I poured Dawn dishwashing liquid in the container, stuffed dirty paper towels in it, then put the top on it and trashed it. If I hadn't done that, I would have taken the container out in the middle of the night and eaten the frosting.

I wait for my hubsand and bonus child to go to bed and then have my snacks. I always leave enough calories to have a double serving of frozen yogurt with chocolate chips and Hershey's SF chocolate syrup. And sometimes I get a little irritated when they don't go to bed on time. I never let them know I'm irritated though.
