Same here, although I like spinach it is not always available to me. So I usually just make a "vegetable salad". Just through all the veggies you would put in a salad on a plate or in a bowl and voila your done. I usually use cucumbers as a base, so I go through a lot of them quickly.

I'm newly diagnosed as well. Its a major struggle for me living in a college dorm, but anyway. As far as carbs go, fruits and veggies have lots of carbs, otherwise they also make gluten free breads, crackers, etc. So that would get your carb intake up.

Have you been eating enough protein? When you don't get enough protein sometimes you crave bad sugars.

I'm mostly vegan, the only reason I'm not fully vegan yet is because some gluten-free products contain milk or eggs but I try to avoid those as much as possible.
