I don't log the peel :) And personally if it's a fruit with a core (apple, pear) then I subtract 5 grams to account for the core ;D

I've been mixing a scoop of protein powder with ice, water + cinnamon, It's really tasty and filling and 100 cals :) you can always throw some frozen fruit in as well. + Just in case you want to know, I currently use 'myprotein', I've only tried chocolate banana flavour so far but it's nice :)

This comment might seem out of place, but from what you described, it sounds like your daughter could be potentially bulimic? (they can be overweight too and can be found hiding loads of junk food wrappers) just a thought..
