I gained 3 pounds. After birth I weighed less than before I got pregnant. Technically, once that baby is out, you should not weigh more than before you got pregnant. Everything above that, you just ate too much. Breastfeeding helps tremendously with shedding extra kilos.

I am 5'9 and also about 240 pounds. For 12000 steps my fitbit charge HR usually gives me 2000 cals. But then again, I am a woman, so it would be lower. And exercise calories escalates after the first 5000 steps. But I wouldn't eat back calories burned.

For some dairy is the ticket not to lose weight on a high fat diet and to struggle to get into ketosis. It happened to me. Then I cut my milk to 60ml a day with 10ml cream. The weight started dropping again. Try cutting dairy for a couple of days and see what happens.

As an obese lady myself who have lost 40kg's by now, I didn't lose on 1900 calories. 1400 calories or less, 65%-70% fat, 20% - 25% protein and 5% carbs is my sweet spot. But again, you activity level, height and weight plays a big role.

You are missing the point. More nutrient dense foods will keep you satiated better than carbs. So it is easier to eat less and not fall off the wagon as most people trying to lose weight do. Also, the health benefits by far exceeds that of a high carb diet.
